PECORINO WITH HONEY AND HAZELNUTS

Ingredients

1 pound pecorino
1 cup skinless hazelnuts, toasted
3 tablespoons honey

Steps:

Pull the cheese out of the refrigerator at least 1 hour before serving - it should be served at room temperature.
Chop the hazelnuts coarsely.
Break pecorino into large bite-size chunks. Place on plate and drizzle with honey. Top with chopped hazelnuts.

1 cup plain yogurt
1 tablespoon Tandoori Masala, recipe follows
Juice of 1/2 a lime
A pinch of salt
Chips or roti, for serving
1/4 cup cumin seeds
1/4 cup coriander seeds
3 tablespoons smoked paprika
2 tablespoons garam masala
2 teaspoons garlic powder
1 teaspoon red chili powder
1 teaspoon fenugreek seeds
1 teaspoon ground ginger
1 teaspoon turmeric
8 green cardamom pods
5 whole cloves
1/2-inch piece cinnamon stick

Steps:

Put the yogurt into a small bowl and add the Tandoori Masala, lime juice and salt. Stir well and serve with chips or roti.
Grind the cumin seeds, coriander seeds, smoked paprika, garam masala, garlic powder, red chili powder, fenugreek seeds, ground ginger, turmeric, cardamom, cloves and cinnamon stick in an electric spice grinder. Store in an airtight container.

Freshly ground black pepper

Steps:

Slice cheese thinly, and divide among four plates. Place pears on top of cheese. Warm honey, and drizzle it over pears. Top with a grind of pepper.
