PECO FLAKE CANDY
Steps:
- Combine sugar, syrup and water in heavy light colored skillet.
- Cook, stirring constantly unstil sugar dissolves.
- Add salt & nuts.
- Cook, stirring occasionaly, to hard crack stage (294 degrees).
- Add butter, vanilla & soda.
- Stir to blend, stir in coconut & pour onto 2 buttered cookie sheets.
- While warm, pull out to desired thinness.
- When cold, crack into pieces.
PECO CANDY
Peco candy is a unique blend of peanuts, sugar and coconut flakes. Considered to be candy decades ago, this is an "airy" treat that is reminiscent of years gone by!

Steps:
- Combine, sugar, corn syrup and water in a large saucepan (4-5 quart) with a heavy bottom.
- Stir over medium-high heat until sugar dissolves. Then increase to high heat and bring to boil until thermometer reaches 250°F.
- Add butter and peanuts. Continually stir to ensure the peanuts do not scorch.
- Bring the temperature up to 300°F.
- Once at 300°F, immediately remove from stove and add vanilla and baking soda. Mix together slightly then add coconut.
- Stir until combined and pour into greased jelly roll size baking sheet. Do not spread or smooth out the brittle; let is spread on its own.
- Let cool completely, then crack and break into pieces.

FAST AND EASY CORN FLAKE CANDY
this recipe is super simple to make and only uses one pan. I almost have to double my batch just to keep some around for more than a day. the peanut butter mixture is almost like a taffy. very tasty all on its own.

- Bring to a boil.
- Remove from heat.
- Stir in peanut butter.
- Add corn flakes and stir until all are coated with syrup mixture.
- Drop by tablespoon onto waxed paper.
- *you can add 1 tsp of vanilla for a slightly different flavor.
- *or you can spread the mix out into a 13 x 9 dish and cut into squares.
