1 cup chopped pecans
5 tablespoons butter, divided
1 small onion, chopped
2 cups uncooked long grain rice
1 carton (32 ounces) chicken broth
3 tablespoons minced fresh parsley, divided
1/2 teaspoon salt
1/4 teaspoon dried thyme
1/8 teaspoon pepper
1 cup shredded carrots

Steps:

  • In a large saucepan, saute pecans in 2 tablespoons butter until toasted; remove from the pan and set aside., In the same pan, saute onion in remaining butter until tender. Add rice; cook and stir until rice is lightly browned, 3-4 minutes. Stir in the broth, 2 tablespoons parsley, salt, thyme and pepper. Bring to a boil. Reduce heat; cover and simmer for 10 minutes., Add carrots; simmer until rice is tender, 3-5 minutes longer. Stir in toasted pecans and remaining parsley. Fluff with a fork. Freeze option: Reserving pecans for later, freeze cooled pilaf in a freezer container. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish, adding 2-3 tablespoons water to moisten, until heated through. Toast pecans; add to pilaf.

This is one of my favorite rice recipes. I don't recall where I got it, but it was somewhere online. What I especially like about it, is how very easy it is to make, and the rave reviews it never fails to get!

2 tablespoons butter or 2 tablespoons margarine
1 cup uncooked rice
1 (14 1/2 ounce) can chicken broth
1 cup grated parmesan cheese
1/2 cup dried cranberries
1/2 cup chopped pecans, toasted (I've also used pine nuts and even prefer them)
1/4 cup sliced green onion
salt & fresh ground pepper

Steps:

  • Melt butter in 2-quart saucepan over medium heat. Add rice. Cook and stir 2 to 3 minutes. Add broth and heat to boiling, stir once or twice. Reduce heat, cover and simmer 15 minutes or until liquid is absorbed. Remove from heat. Stir in cheese, cranberries, pecans and onions. Season to tast w/salt and pepper.
  • *to toast pecans (or pine-nuts) spread on small baking sheet. Bake at 350 5-8 minutes (keep an eye they don't burn) or until golden brown. Stir frequently.

It was just a normal December night and I was ravenous from spending a few hours writing a paper. I took a break for dinner and decided to eat at Risley Dining Hall. Cornell University Dining is known for their good food, and risley for their gourmet vegan food, but this was AMAZING! After eating this wonderful dish, I was in heaven, I had to ask for the recipe. The chef was very happy to give it to me. You HAVE to try it.

3 cups water
1/2 cup brown rice
1/2 cup bulgur
1/2 cup barley
2 tablespoons olive oil
1 cup onion, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup pecans, toasted and chopped
1/2 teaspoon thyme, dried
1/4 cup dried cranberries

Steps:

  • Cook rice and barley together, in 2 cups of water, simmer for 40 minutes.
  • Cook bulgur separately, in 1 cup of water, simmer about 20 minutes or until all liquid is absorbed.
  • While grains are cooking, saute onion in olive oil in frying pan. When grains are cooked, add onion and rest of ingredients to grains and stir thoroughly.
  • Garnish with copped parsley and serve.

1 lemon, rind of
8 cloves garlic, Peeled
1/2 cup parsley
6 tablespoons unsalted butter
1 cup rice (Not Instant)
1 1/4 cups chicken stock
3/4 cup dry vermouth
salt & pepper

Steps:

  • Chop together the lemon rind, garlic and parsley.
  • Heat the butter in heavy 2-qt pot.
  • Cook the garlic mixture very gently for 10 minutes.
  • Stir in the rice.
  • Stir over medium heat for 2 minutes.
  • Combine the stock and wine in a saucepan.
  • Heat until it begins to bubble at the sides.
  • Stir into rice; add salt and freshly ground pepper.
  • Cover tightly and simmer over very low heat for 20 minutes or until liquid is absorbed and rice is tender.
  • Fluff with a fork.
  • Cover the pot with a kitchen towel and lid until it is time to serve.
  • Serve hot or at room temeperature.

1 cup pecan halves, chopped coarse
2 tablespoons unsalted butter, melted
3/4 teaspoon dried thyme, crumbled
1/4 teaspoon salt
1 large onion, halved lengthwise and sliced thin lengthwise
1 yellow bell pepper, cut into julienne strips
1/4 cup olive oil
2 1/2 cups wild rice (about 1 pound), rinsed well in several changes of water and drained
4 1/2 cups chicken broth

Steps:

  • Preheat the oven to 375°F. In a small baking pan toss the pecans with the butter, the thyme, and the salt until they are coated well and toast them in the middle of the oven for 10 minutes, or until they are crisp and fragrant.
  • In a flameproof casserole cook the onion and the bell pepper in the oil over moderately low heat, stirring, for 5 minutes, or until they are just softened, and with a slotted spoon transfer them to a bowl. Add the rice to the casserole and cook it, stirring constantly, for 1 minute. Stir in the broth, heated to boiling, and salt and pepper to taste and bring the mixture to a boil. Bake the mixture, covered, in the middle of the oven for 40 minutes. Stir in the onion mixture, bake the pilaf, covered, for 30 minutes more, or until the rice is tender and the broth has been absorbed, and stir in the pecans.

2 tablespoons olive oil (can sub 1 tablespoon olive oil plus 1 tablespoon butter)
1 onion, chopped
1/2 bunch fresh parsley
1 1/2 cups long-grain rice
2 1/2 cups water
1 1/2 teaspoons salt (to taste)
fresh ground black pepper
3/4 cup pecan pieces
1/4 cup breadcrumbs
2 -3 butterflied whole rainbow trout, 1 1/2 pounds total (filets work well)
2 tablespoons butter, cut into pieces
1 lemon, cut into wedges

Steps:

  • Preheat the oven to 450°.
  • Heat the olive oil in a medium saucepan. Add the onion and saute over medium heat until tender, about 5 minutes. As the onion cooks, finely chop the parsley, then set it aside.
  • Add the rice to the onion and stir until all the grains are coated evenly with the oil, about 1-2 minutes. Add the water, salt and black pepper. Stir to combine and bring to a boil. Reduce the heat to medium and simmer, covered, until the rice is tender, about 18-20 minutes.
  • Stir in the parsley, cover and let the pilaf stand 5 minutes before serving.
  • As the rice cooks, place the pecans in a food processor and pulse until finely ground but not sticky. Combine with the breadcrumbs. Place the trout opened, skin-side down, on a sheet pan lined with aluminum foil. Season the flesh with salt and pepper, sprinkle with the pecan mixture and the butter pieces, then place in the oven. Cook until the edges of the trout skin on the bottom are crisp and the thick part of the flesh is opaque, about 5-8 minutes. Increase the heat to broil and place the pan near the broiler element for a few minutes until the topping is golden brown.
  • Remove from the oven, cut each trout into 2 filets and serve each person 1-2 fillets on a bed of pilaf with the lemon wedges.

1/4 cup chopped pecans
1 cup long-grain rice
2 tablespoons finely diced shallots
1 tablespoon finely diced carrot
1/4 teaspoon fine sea salt

1 tablespoon thinly sliced green onions, white and green parts

Steps:

  • Place a saucepan with a tight-fitting lid over medium heat. Add the olive oil and heat for 1 minute. Add the pecans and toast, stirring with a wooden spoon, until the nuts are fragrant, about 1 minute. Add the rice and toast for 2 minutes, stirring frequently. Add the shallots, carrot, salt, and pepper.
  • Cook the rice and the vegetables for an additional 3 minutes. Add the stock, increase the heat to high, and bring the mixture to a simmer. Decrease the heat to low, cover, and cook for 12 minutes. Remove from the heat and let the rice sit, covered, for another 10 minutes.

1/4 cup wild rice
2 tablespoons butter
1 medium carrot, peeled and minced
1 stalk celery, minced
1/2 cup white mushroom, minced

Steps:

  • In a medium-sized sauce pan, bring 2 quarts of water to a rapid boil.
  • Add the 1/2 tsp salt and the wild rice.
  • Boil uncovered for 40-45 minutes, or until the grains begin to pop open and the rice is tender.
  • Drain and set aside.
  • In a 10" skillet, melt the butter over medium heat.
  • Add the carrot and saute for 1-2 minutes.
  • Add celery, mushrooms, and pecans.
  • Saute for just about 2 minutes more, stirring often.
  • Add the rice and saute until thoroughly combined.
  • Season with salt and pepper and serve.

I modified the Pilaf in this way: I soaked 1/2 C bulgur in boiling water for 30 minutes while cooking regular brown rice only (enough to make 2 cups cooked) in lots of boiling water for 30 minutes, then drained and put back in pot, off heat, covered, to steam for 10 minutes.
