Dough for single-crust pie
1/2 cup butter
2-1/2 cups coarsely chopped pecans
3/4 cup packed brown sugar
3/4 cup maple syrup
1/2 teaspoon salt
3 large eggs, beaten
2 tablespoons whiskey or bourbon, optional
2 teaspoons vanilla extract
Optional: Whipped cream and ground cinnamon

Steps:

  • Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a Dutch oven or large saucepan, melt butter over medium heat. Add pecans; cook, stirring constantly, until very fragrant and pecans start to brown, 4-5 minutes. Remove pecans with a slotted spoon, reserving butter in pan. Stir in brown sugar, maple syrup, and salt; bring to a boil. Reduce heat; simmer 2 minutes. Remove from the heat. In a bowl, whisk a small amount of the hot mixture into eggs; return all to the pan, whisking constantly. Stir whiskey, optional, and vanilla into brown sugar mixture; stir in pecans. Pour into crust. , Bake until a knife inserted in the center comes out clean, 55-60 minutes. Cover edges with foil during the last 30 minutes to prevent overbrowning if necessary. Cool on a wire rack. If desired, top with whipped cream and cinnamon. Refrigerate leftovers.

1 ¾ cups white sugar
¼ cup dark corn syrup
¼ cup butter
1 tablespoon cold water
2 teaspoons cornstarch
3 eggs
¼ teaspoon salt
1 teaspoon vanilla extract
1 ¼ cups chopped pecans
1 (9 inch) unbaked pie shell

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan, combine the sugar, corn syrup, butter, water, and cornstarch. Bring to a full boil, and remove from heat.
  • In a large bowl, beat eggs until frothy. Gradually beat in cooked syrup mixture. Stir in salt, vanilla, and pecans. Pour into pie shell.
  • Bake in preheated oven for 45 to 50 minutes, or until filling is set.

1 1/4 cups all-purpose flour
2 teaspoons sugar
1/8 teaspoon salt
1/2 cup cold butter (1 stick), diced
1 large egg, lightly beaten
Flour, for rolling the dough
5 tablespoons unsalted butter
1 cup packed light brown sugar
3/4 cup light corn syrup
1/2 teaspoon fine salt
2 cups chopped toasted pecans
1 to 2 tablespoons bourbon
2 teaspoons pure vanilla extract
3 eggs, lightly beaten

Steps:

  • Make the dough by hand: In a medium bowl, whisk together the flour, sugar, and salt. Using your fingers, work the butter into the dry ingredients until it resembles yellow cornmeal mixed with bean-sized bits of butter. (If the flour/butter mixture gets warm, refrigerate it for 10 minutes before proceeding.) Add the egg and stir the dough together with a fork or by hand in the bowl. If the dough is dry, sprinkle up to a tablespoon more of cold water over the mixture.
  • Alternatively, make the dough in a food processor. With the machine fitted with the metal blade, pulse the flour, sugar, and salt until combined. Add the butter and pulse until it resembles yellow cornmeal mixed with bean-sized bits of butter, about 10 times. Add the egg and pulse 1 to 2 times; don't let the dough form into a ball in the machine. (If the dough is very dry add up to a tablespoon more of cold water.) Remove the bowl from the machine, remove the blade, and bring the dough together by hand.
  • Form the dough into a disk, wrap with plastic wrap, and refrigerate until thoroughly chilled, at least 1 hour.
  • On a lightly floured surface, roll the dough with a rolling pin into a 12-inch circle about 1/8-inch thick. Transfer the dough to a 9-inch pie pan and trim the edges, leaving about an extra inch hanging over the edge. Tuck the overhanging dough underneath itself to form a thick edge that is even with the rim. Flute the edge as desired. Freeze the pie shell for 30 minutes.
  • Set separate racks in the center and lower third of oven and preheat to 400 degrees F. Put a piece of parchment paper or foil over the pie shell and fill with dried beans or pie weights. Bake on a baking sheet on the center rack until the dough is set, about 20 minutes. Remove from the oven and lift sides of the parchment paper to remove the beans. Continue baking until the pie shell is lightly golden brown, about 10 more minutes. Reduce the oven temperature to 350 degrees F.
  • While the crust is baking make the filling: In medium saucepan, combine the butter, brown sugar, corn syrup, and salt. Bring to a boil over medium heat, and stirring constantly, continue to boil for 1 minute. Remove from the heat and stir in the nuts, bourbon, and the vanilla. Set the mixture aside to cool slightly, about 5 minutes. (If the crust has cooled, return it to the oven for 5 minutes to warm through.) Whisk the beaten eggs into the filling until smooth. Put the pie shell on a sheet pan and pour the filling into the hot crust.
  • Bake on the lower oven rack until the edges are set but the center is still slightly loose, about 40 to 45 minutes. (If the edges get very dark, cover them with aluminum foil half way during baking.) Cool on a rack. Serve slightly warm or room temperature.

All-purpose flour, for dusting
1 store-bought pie crust
3 cups pecan halves
1 stick (8 tablespoons) unsalted butter
1 cup packed light brown sugar
1 cup dark corn syrup
2 vanilla beans, seeds scraped, or 2 teaspoons pure vanilla extract
4 large eggs, lightly beaten
Ice cream (your favorite flavor), for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • On a lightly floured work surface, roll the pie crust into a 13-inch round, about 1/4-inch thick. Fit the crust into a 9-inch pie plate and trim the edges, leaving a 1-inch overhang. Fold the overhang underneath itself and crimp the edges. Refrigerate for at least 30 minutes before filling.
  • Roughly chop 2 cups of the pecans by hand or in a food processor; set aside. In a medium saucepan, melt the butter over medium heat. Whisk in the brown sugar until smooth. Remove from the heat and stir in the corn syrup, vanilla bean seeds and eggs. Fold in the chopped pecans and pour into the prepared pie shell. Arrange the remaining 1 cup pecan halves around the edge of the pie to make a decorative top.
  • Bake until the center is set, 60 to 70 minutes. Let cool completely.
  • Slice and serve with a scoop of ice cream.

One 9-inch deep dish pie shell, unbaked, or homemade pastry
1 cup pecan halves
Vanilla ice cream or whipped cream, for serving

Steps:

  • Preheat the oven to 325 degrees F.
  • In a large mixing bowl, mix the brown sugar, granulated sugar and eggs until creamy. Add the chopped pecans, melted butter, milk, flour and vanilla extract and stir to combine. Pour the mixture into the pie shell. Arrange the pecan halves on top of the pie in a circular pattern.
  • Bake the pie for 55 minutes. Check for doneness by shaking the pan slightly. The pie should be firm with only a slight jiggle in the center. It will set more as it cools. Serve topped with vanilla ice cream or with a dollop of whipped cream.

500g pack sweet shortcrust pastry
75g butter, softened
100g golden caster sugar
175g golden syrup
175g maple syrup
3 eggs, beaten
½ tsp vanilla extract
300g pecan halves
double cream, whipped, to serve

Steps:

  • On a lightly floured surface, roll out the pastry. Use the pastry to line a 23cm tart tin, keeping any off-cuts in case you need to fill any cracks after blind-baking. Prick the base of the pastry case with a fork and chill for 30 mins, or until firm.
  • Heat oven to 190C/170C fan/gas 5. Line the pastry case with baking parchment, fill with baking beans and bake for 15-20 mins until the sides are set. Remove the beans and parchment and return the tin to the oven for 5-10 mins until the pastry is golden and the base is set. Leave to cool.
  • Increase oven to 200C/190C fan/gas 6. Use an electric whisk to beat the butter and sugar together until light and fluffy. Keep the beaters going and pour in both of the syrups. Gradually add the eggs, ¼ tsp salt and the vanilla, then whisk until combined. Stir through the pecans, then pour the mixture into the tart case. Bake for 10 mins. Turn heat down to 160C/140C fan/gas 3 and continue baking for 30-35 mins (the pie should be golden brown and the filling should wobble a little in the centre when shaken). Leave to cool in the tin. You'll probably need to run a knife around the tin to lift out the pie. Serve with whipped cream or ice cream.

1 frozen puff pastry sheet (1/2 of 17.3-oz. pkg.), thawed
1/2 cup PHILADELPHIA Cream Cheese Spread
1/4 cup sugar
1 Granny Smith apple, peeled, cored and chopped
1/3 cup pecan pieces, toasted
1 egg, lightly beaten

Steps:

  • Preheat oven to 400°F. Roll out pastry on lightly floured surface to 14-inch square; cut into 9 equal squares.
  • Mix cream cheese spread and sugar in medium bowl until well blended. Add apples and pecans; mix well. Spoon evenly onto centers of pastry squares. Brush edges of pastry with egg. Fold each square diagonally in half to form triangle; press edges firmly together until completely sealed. Brush tops with remaining egg.
  • Bake 10 minutes. Reduce oven temperature to 375°F. Continue baking 10 minutes or until turnovers are slightly puffed and golden brown. Cool 5 minutes before serving.

Filling:
5 tbs unsalted butter
1 c packed light brown sugar
3/4 c light corn syrup
1/2 tsp salt
2 c chopped toasted pecans
2 tbls burbon
2 tsp vanilla extract
3 eggs beaten lightly

Steps:

  • For Crust: Preheat oven 350*F Whisk flour, sugar and salt. Using fingers, work in butter until it resembles cornmeal mixed with bean-size bits of butter. Add egg and stir dough together. If dough is dry, sprinkle up to a tablespoon more of cold water over mixture. Form dough into disk, wrap in plastic and refrigerate at least one hour. On lightly floured surface roll dough into 12 inch circle about 1/4 inch thick. Put into 9-inch pie plate and trim edges. Tuck overhanging dough underneath to for thick edge that is ven with rim-flute edge if desired. Put piece of parchment or aluminum foil in piecrust, fill with dry beans for weight. Bake in lower 1/3rd of oven about 20 min. Remove from oven and discard beans and aluminum. To make turnovers, simply roll dough into 6" circles, place dollop of filling in center, dampen edges with cold water, and fold together. Poke small holes in pocket to vent. FOR FILLINING; In sauce pan combine butter, brown sugar, corn syrup and salt. Bring to boil over high heat stirring constantly. Continue to boil for 1 min. Remove from heat stir in nuts, vanilla and bourbon. Set mixture in fridge to cool, at least 5 min. Whisk beaten egg into filling until smooth. Put into pie plate that is on sheet pan. Bake for 35 to 40 min. until edges are set and senter is slightly loose. Use same baking time for turnovers.

2 sheets puff pastry (1 box)
3 Tbsp butter, softened
2/3 c light brown sugar
1 1/2 tsp cinnamon
1/2 tsp ground allspice
1/4 tsp ground cloves
1 c chopped pecans
FOR GLAZE:
2/3 c powdered sugar
2 Tbsp milk
1 tsp vanilla

Steps:

  • 1. Preheat oven to 400 degrees F. Line baking sheet with parchment paper or coat with nonstick spray. In a small bowl, combine brown sugar, cinnamon and nutmeg; mix well and set aside.
  • 2. Unroll thawed pastry sheet and cut into fourths. Lightly butter inside of square of pastry dough being careful to leave an outside edge free so it will seal well (or just dollop a small amount of butter where you'll place filling.) Place 1-2 tbl. of sugar mixture into center of pastry. Place equal amount of chopped pecans on top of sugar. Wet fingers with water and dampen edges of dough. Fold dough over to form triangle and lightly press edges closed with a fork.
  • 3. Place triangles on prepared baking sheet and bake for about 20 minutes.
  • 4. Meanwhile, combine ingredients for glaze. Drizzle on cooled turnovers.
