MINI MEXICAN TARTS



Mini Mexican Tarts image

A Tex-Mex appetizer made easy with filo shells!

3/4 pound mild Italian sausage, cooked and drained
1 large clove garlic, minced
1/2 cup salsa (the less chunky, the better)
4 ounce can diced green chiles, drained
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded sharp Cheddar cheese
Olive oil
24 wonton wrappers
Sour cream
Diced red bell pepper
Sliced olives
Shredded cheese
Cilantro

Steps:

  • Cook sausage in large skillet, breaking it into small pieces. When sausage is no longer pink, add garlic and sauté a couple more minutes. Drain excess fat. Add salsa, cheeses, and chiles and cook for about 5 minutes, till mixture thickens. Taste and add salt and pepper, if needed. Cool completely.
  • Preheat oven to 375º. Brush mini muffin tin with olive oil. Carefully press a wonton wrapper into each muffin cup. Fill each cup with a rounded tablespoon of the sausage mixture. Bake about 8 to 10 minutes, till edges of wontons start to brown.
  • Remove tarts from muffin tin onto a baking sheet. Bake about 8 more minutes. Cool a few minutes, garnish as desired and serve warm.

Who would have thought that all the flavours of Mexico could be packed into these mini tarts? Watch these canapes please your guests during the festivities.

150 g Flour tortilla(s) (2x75g)
1 medium Avocado
1 tbs Fresh coriander finely chopped
1 tbs Lime juice
0.25 tsp Tabasco sauce (dash)
1 small Tomato(es) ripe variety, finely chopped
0.25 medium Red onion finely chopped
0.333 cup(s), grated Extra light cheddar cheese (30g)
1 cup(s) Fresh coriander (12 leaves)
2 x 3 second spray(s) Oil spray

Steps:

  • Preheat the oven to 200°C. Lightly spray a 1/3-cup (80ml) capacity muffin tin with oil. Cut twelve 8cm discs from the tortillas. Push discs into muffin holes and lightly spray with oil. Bake for 5 minutes or until golden. Cool in the tin.
  • Meanwhile, using a fork, mash avocado in a medium bowl. Stir through the chopped coriander, lime juice and a dash of tabasco. Season with salt and pepper.
  • Combine the tomato and onion in a small bowl. Season with salt and pepper.
  • Preheat grill on high. Place the tart cases on a baking tray. Spoon the avocado into the cases. Top with the tomato mixture and sprinkle over the cheese. Grill for 2 minutes or until the cheese has melted. Top with a coriander leaf to serve.

1 (15 ounce) package pillsbury refrigerated pie crusts
6 ounces shredded colby-monterey jack cheese
1/2 cup roasted red pepper, drained,chopped
1/2 cup mayonnaise
1 (4 1/2 ounce) can chopped green chilies
1/4 cup chopped fresh cilantro or 1/4 cup parsley
salsa

Steps:

  • Heat oven to 375-Remove crust from pouch.
  • Place crust on ungreased cookie sheet;press out fold lines.
  • In medium bowl combine cheese,roasted bell peppers,mayo and chiles;mix well.
  • Spread over crust to within 1 inch of edges.
  • Fold crust edges over filling to form 1 inch border;flute.
  • Bake at 375 for 25-35 minutes or until crust is golden brown.
  • Sprinkle with cilantro.
  • Let stand 10 minutes.
  • Cut into wedges.
  • Serve warm topped with salsa.

  • In a medium bowl, combine the cheese, red peppers, mayonnaise, green chiles, cumin and chile powder. Spread the mixture on the pie crust, up to 1-inch of the edges. Fold the edges of the pie up over the filling, forming a 1-inch border.
  • Bake until the crust is golden brown, about 25 minutes. Remove from the oven and top with the cilantro. Let sit 10 minutes before cutting into wedges to serve.
