1/2 cup (1 stick) unsalted butter, at room temperature, plus 1 tablespoon butter, melted
One 3-ounce package cream cheese, at room temperature
1 cup all-purpose flour
Nonstick cooking spray
1 large egg
3/4 cup packed light brown sugar
1 teaspoon vanilla extract
Pinch of fine salt
1/2 cup pecans, finely chopped

Steps:

  • With an electric mixer, beat the 1/2 cup butter and the cream cheese until smooth. Add the flour and beat until fully combined. Cover the bowl with plastic wrap and chill in the refrigerator for 1 hour.
  • Preheat the oven to 325 degrees F. Spray a 24-cup mini-muffin pan with cooking spray.
  • In a large mixing bowl, whisk together the melted butter, egg, brown sugar, vanilla and salt until smooth. Set aside.
  • Shape the chilled dough into 24 balls, about 1 inch in diameter. Press each ball into a cup of the muffin pan, spreading evenly and up the sides, then spoon 1 teaspoon of the pecans into each muffin cup. Fill each cup with the egg mixture until evenly distributed, about 1 teaspoon in each. Bake until the filling is set, about 25 minutes. Cool on a wire rack for 10 minutes, and then remove from the muffin pan.

1 cup all-purpose flour
¾ cup packed brown sugar
1 tablespoon butter
1 egg, beaten
1 teaspoon vanilla extract
⅔ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • To Make Crust: In a medium mixing bowl blend softened cream cheese and 1/2 cup butter or margarine until thoroughly combined. Add flour and mix well. Place in refrigerator to chill.
  • In a medium mixing bowl combine brown sugar and 1 tablespoon butter or margarine. Add egg and vanilla, and blend well. Stir in pecans.
  • Pat crust into the bottoms of paper muffin cups. Pour in filling, distributing evenly between all cups. Bake in preheated oven for 30 minutes.

2 cups all-purpose flour
4 eggs

Steps:

  • To Make Pastry: Cream butter or margarine and cream cheese. Add flour and mix well. Make into 48 balls; place one ball in each cup of a mini tart pan. Use your fingers or a tart tamper to press out into a tart shell.
  • To Make Filling: Break the eggs, but do not beat. Add sugar, melted butter, salt, vanilla and pecans. Mix well. Fill the tart shells. Bake at 350 degrees F (180 degrees C) for about 30 minutes or until delicately browned.

1/2 cup butter (cold.)
1/2 cup honey.
2 Tablespoons heavy cream.
1 teaspoon cinnamon (optional.)
2 cups pecan (chopped.)
6 (13x17 inch )Sheets of phyllo
6 Tablespoons of melted unsalted butter.

Steps:

  • In a small saucepan over medium heat, bring honey and brown sugar to a boil. Continue boiling for 1 minute exactly then turn heat off.
  • Throw in cold butter, cinnamon if using and the heavy cream. Stir until butter has melted then Set aside for about 15 minutes, try to stir it every now and then.
  • On a large cutting board, place first sheet of phyllo and brush generously with melted butter. Pay close attention to the edges.*
  • Arrange the second sheet on top of the first one and brush with butter. Repeat this step until you are done with the 6 sheets.
  • With a sharp knife, cut the phyllo into 12 pieces.
  • Snug tightly into a lightly greased 12 cupcake baking sheet, pressing gently into the bottom and up the sides of each one.
  • Heat your oven to 350F.
  • When the sugar mixture has cooled, it will have a caramel consistency, add in chopped pecan and str well to combine.
  • Scoop up about 2 Tablespoons in each phyllo cup.
  • Bake for approximately 15-20 minutes or until top mixture is just bubbling.
  • Take off the oven, the mixture will be still runny but it will set as it cools down.

1 1/2 cups flour
1/2 teaspoon baking powder
1/2 cup butter or 1/2 cup margarine
3 tablespoons milk
2 eggs
3/4 cup pecans, finely chopped
3/4 cup butterscotch topping

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium bowl, combine flour and baking powder.
  • Cut in the butter or margarine with a pastry blender, blending until it resembles course crumbs.
  • Sprinkle in the milk and mix lightly.
  • Using a mini muffin tin, press the above mixture on the bottom and sides of each muffin cup with your fingers, as close to the top as possible.
  • Beat together eggs and stir in pecans and topping.
  • Place 1 1/2 Tbsp of the mixture into crust lined cups.
  • Bake for 25 minutes or until mixture is set.
  • Store in airtight container.

1 cup mascarpone cheese, room temperature
1/2 stick unsalted butter, softened
1 1/2 cups all-purpose flour
1 teaspoon coarse salt
Vegetable-oil nonstick cooking spray

Steps:

  • Process pecans in a food processor until finely ground. Beat together mascarpone and butter with a mixer on medium-high speed until smooth. Add flour, pecans, and salt and beat just until dough comes together.
  • Divide dough into 40 balls (about 1 tablespoon each) and refrigerate until firm, about 30 minutes.
  • Working in batches if necessary, lightly coat cups of mini muffin tins with cooking spray. Press balls into bottoms and up sides of cups and refrigerate until firm, at least 30 minutes or up to overnight.

Steps:

  • Preheat the oven to 350 degrees F.
  • Prepare the filling by combining the pecans, brown sugar, butter, and maple syrup in a bowl. Stir until it forms a paste. Set aside.
  • Dust the working area with flour, then roll out the puff pastry sheet. Divide the pastry sheet into 4 pieces.
  • Make diagonal cuts, roughly ½-inch apart from each other, on opposite sides of the puff pastry. Add roughly 1 tablespoon of filling.

PASTRY:
1 1/2 c softened butter
4 c all purpose flour
1 c ground pecans
2/3 c cold water
1 egg, beaten
FILLING:
1/2 c softened butter
1/2 c sugar
1/4 c all purpose flour
1 c ground pecans
SAUCE:
1/2 c softened butter
1 c powdered sugar
1 tsp rum or 1/2 teaspoon rum flavoring

Steps:

  • 1. Prepare pastry dough 3 hours before using. You may prepare it the night before and let it sit overnight if you prefer. Mix 1 1/2 cups butter, 4 cups flour, and 1 cup ground pecans. Blend well and store, covered in refrigerator for 3-12 hours. This helps make crust flaky.
  • 2. When ready to start baking pastry preheat oven to 375 degrees. Butter a cookie sheet or pizza pan. In a large bowl beat 1/2 cup butter and 1/2 cup sugar together until well blended. Add 1/4 cup flour and 1 cup ground pecans. Blend well.
  • 3. Divide pastry dough in 2 equal portions. Roll one half out to a 10 inch circle. Place on buttered cookie sheet. Spread filling on pastry to within 1 inch of edge. Roll out second half of pastry dough to another 10 inch circle. Brush the outside 1 inch of the pastry edge with water. Place on top of pastry with filling with water edge down. Water helps seal pastry edges. Press the edge and crimp with a fork or your fingers to seal. Combine 2/3 cup water and beaten egg from pastry recipe above and mix well. Brush top of pastry with this mixture. Bake for 35-40 minutes or until golden brown. Cut in small wedges to serve. Dust with powdered sugar if desired and serve with rum sauce.
  • 4. SAUCE: Combine all ingredient in a small bowl. Mix well. Serve on top of pastry or on the side.
