Oh, I just love rice pilaf! This one is from a Swanson Broth Creative Cooking recipe pamphlet. Just remember that the broth is already diluted, so don't add water! Also, feel free to add other herbs of your choice.

1 large onion, chopped

1 cup uncooked long-grain white rice
2 tablespoons chopped fresh parsley

Steps:

  • Heat oil in a large nonstick skillet.
  • Add onion, carrots, celery and garlic and cook until tender.
  • Add wild rice and broth.
  • Heat to a boil.
  • Cover and cook over low heat for 25 minutes.
  • Add white rice.
  • Cover and cook over low heat for 20 minutes or until done.
  • Stir in parsley.

1 tablespoon extra-virgin olive oil
1/4 cup pine nuts
2 to 3 cloves garlic, smashed
1 to 2 strips lemon zest
3 sprigs fresh thyme
1 cup wild rice, preferably whole not broken
4 cups low-sodium chicken broth
2 teaspoons kosher salt, plus extra for seasoning
1 bunch scallions (white and green), thinly sliced (3/4 cup)
Freshly ground black pepper

Steps:

  • Heat the olive oil in a small saucepan over medium heat. Add the pine nuts, garlic, zest, and thyme, swirl the pan until the nuts and garlic are beginning to brown, about 2 minutes. Add the wild rice and cook, stirring with a wooden spoon, until lightly toasted, about 1 minute tops. Stir in the chicken broth and salt. Bring to a boil. Reduce heat to a rapid simmer and cook, stirring occasionally, for 45 minutes to 1 hour. Check the texture of the rice and, if needed, continue simmering until tender. Add more liquid as needed, another 10 to 15 minutes. (Note: The rice should only just begin to crack when done. If it begins to curl it is overcooked. There are numerous varieties of varying qualities, which affect cooking times greatly.)
  • Remove from the heat, scatter the scallions over the surface, fluff with a fork, and remove the herb sprigs and lemon zest before serving. Season with salt and black pepper, to taste.

1/2 cup natural wild rice
Fine sea salt
1 cup basmati rice
7 tablespoons salted butter
2 cups diced celery (from 5 stalks)
2 cups diced sweet onion (from 1 large)
3 cloves garlic, minced
2 teaspoons minced fresh thyme
1/2 cup shelled salted pistachios, crushed
8 ounces fresh chestnuts, roasted, peeled and roughly chopped
2 tablespoons minced fresh parsley

Steps:

  • Put the wild rice in a fine-mesh sieve and rinse it under cold running water, swishing the rice with your hands until the water runs clear. Transfer the rice to a medium bowl and add water to cover. Pour off any black bits or floating kernels, and then pour the rice back into the sieve to drain.
  • Cook the rices separately: Combine the wild rice with 1/4 teaspoon salt and 1 cup water in a small saucepan. Bring to a simmer, cover tightly, reduce the heat to low and steam until the rice is tender and curling into a C shape, 20 to 25 minutes.
  • At the same time, combine the basmati rice, 1/2 teaspoon salt and 1 3/4 cups water in another small saucepan. Bring to a simmer, cover tightly, reduce the heat to low, and steam until the rice is tender, 25 minutes.
  • Combine the rices in a large bowl and cover tightly.
  • Cook the vegetable base: Heat the butter in a large skillet over medium heat. Add the celery and onion and cook, stirring often, until the vegetables are limp but still bright, about 10 minutes. Add the garlic and thyme, and cook for 5 minutes.
  • Pour the vegetables over the rice, scraping the pan for the juices, and stir to combine. Add the pistachios, chestnuts and parsley and mix thoroughly. Serve hot.

1/4 cup walnut pieces
2 teaspoons olive oil
2 shallots, finely chopped
1 cup mix of long-grain and wild rice
Coarse salt and ground pepper
Fresh flat-leaf parsley, chopped, for garnish (optional)

Steps:

  • Heat a medium saucepan with a lid over medium. Add walnuts, and toast, tossing, until lightly browned and fragrant, 4 to 6 minutes. Remove walnuts; set aside.
  • In same saucepan, heat oil over medium-low. Add shallots; cook until translucent, 2 to 4 minutes. Add rice mix and 2 cups water; season with salt and pepper. Bring to a boil. Cover, and reduce heat to medium-low; cook until tender and liquid has been absorbed, about 25 minutes. Fluff with a fork. Serve, topped with walnuts and, if desired, parsley.

Wild Rice Pilaf, recipe follows
Piquillo Pepper Vinaigrette, recipe follows
1/3 cup sliced almonds, toasted
1 1/2 cups wild rice
3 cups chicken stock, plus 1/2 cup
2 cups water
Salt
2 tablespoons olive oil
1 Spanish onion, finely chopped
2 cloves garlic, finely chopped
1 cup dry white wine
2 teaspoons finely chopped fresh thyme leaves
2 teaspoons finely chopped fresh rosemary leaves
Freshly ground black pepper
1/4 cup chopped fresh flat-leaf parsley
5 piquillo peppers, chopped
1/2 small red onion, coarsely chopped
8 cloves roasted garlic, peeled
1/4 cup aged sherry vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
Salt and freshly ground black pepper
1/2 cup canola oil

Steps:

  • Heat grill to high. Brush both sides of mushrooms with oil and season with salt and pepper. Grill caps until golden brown on both sides and just cooked through, 10 to 12 minutes. Fill the caps with the wild rice pilaf, drizzle the piquillo vinaigrette and sprinkle tops with the toasted almonds.
  • Place wild rice in a colander and rinse well with cold water. Combine 3 cups of the stock and the water in a large saucepan with a tablespoon of salt and bring to a boil. Add the rice and cook until the grains open and are very soft, 1 1/2 to 2 hours. Drain well.
  • Heat oil in a large saute pan over high heat. Add the onion and cook until soft. Add the garlic and cook for 1 minute. Add the wine and cook until reduced by half. Add the cooked wild rice, thyme, rosemary and remaining 1/2 cup of stock and season with salt and pepper and cook until heated through and flavors combine, 15 minutes. Remove from the heat and fold in the parsley.
  • Combine peppers, onion, garlic, vinegar, honey, mustard, and salt and pepper in a blender and blend until smooth. With the motor running, slowly add the oil and blend until emulsified.

VEGGIE AND WILD RICE PILAF

I just got myself a 10 cup rice cooker and have enjoyed using it for different rice recipes. Today I'm making baked fish and wanted something nice for a side dish. I think this one will work just great. The wild rice I used was from the Indian Cultural Center here in Albuquerque. The rice was grown in Minnisota and harvested by the natives up there. You can garnish this with some chives or green onions if you wish.

1 tablespoon olive oil
1 large onion (chopped in small cubes)
1 small carrot (chopped in small cubes)
2 stalks celery (chopped in small cubes)
10 snow peas (cut in small pieces)
2 garlic cloves (I used the garlic press)
3 1/2 cups stock (I used chicken)
1/2 cup wild rice (uncooked)
1 cup white rice (uncooked)
2 tablespoons chopped fresh parsley (optional)

Steps:

  • Heat the oil in a non stick saute pan. Cook the onion, carrot, celery, snow peas and garlic until soft.
  • Transfer to your rice cooker and turn it on.
  • Put about 2 cups of the broth into the saute pan and mix it around to remove all the goodies from the pan. Add this and the rest of the broth to the rice cooker.
  • Mix the veggies and wild rice up good and put the lid on and cook for 25 minutes.
  • Then, add the white rice and cook for an additional 20 minutes or until the rice is done.
  • Stir in the parsley and put the lid back on the rice in the rice cooker and let it sit to abosorb the rest of the moisture.
  • Season with salt and pepper.
  • Enjoy with your favorite fish or meat.
  • Bon Appetit!

1 cup long grain brown rice
1 medium onion, chopped

2 cups cremini mushrooms, sliced
1 medium green apple, diced about 1/4 inch pieces
4 medium garlic cloves, minced
1/2 cup walnuts, chopped
6 dried apricots, coarsely chopped
1/2 cup raisins
1/2 cup fresh parsley, chopped
2 tablespoons fresh sage, chopped
3 tablespoons fresh thyme, chopped
1/2 tablespoon fennel seed
3/4 cup chicken broth
2 tablespoons extra virgin olive oil
salt and black pepper

Steps:

  • Bring 3½ cups of lightly salted water to a boil. While water is coming to a boil rinse the wild rice under running water in a strainer. When water is boiling add both wild and brown rice, cover, turn heat to low and cook for about 45 minutes, until tender. Do not overcook. You will most likely have excess water when rice is cooked properly. Put cooked rice in a strainer and drain out excess water. Set aside in a bowl large enough to mix everything together.
  • Heat 1 TBS chicken broth in a large stainless steel skillet. Healthy Sauté onion in broth over medium heat for 5 minutes. Add mushrooms and celery and continue to sauté for another 2-3 minutes.
  • Mix all the stuffing ingredients together in bowl and season with salt and pepper.
  • Preheat oven at 350 degrees. Place stuffing in an 8 inch square baking dish and bake covered for about 1 hour. Drizzle with olive oil and mix with a fork keeping it fluffy.
  • Serving suggestion: Serve with 15 Minute Lamb Chops or Herbed Chicken Breasts and one of our Mediterranean Greens: Mediterranean Kale or Mediterranean Swiss Chard.

1 batch cooked Wild Rice (preceding recipe)
4 or 5 mushrooms, quartered
About 2 teaspoons butter or light olive oil
3 or 4 scallions, cut in half lengthwise (if they are very thin, leave them whole)
A small handful of snow peas
A scattering of slivered almonds
A couple of slices ham or prosciutto, in strips (optional)

Steps:

  • If the wild rice you have prepared has cooled, pour boiling water over it to warm it. Sauté the mushrooms in the butter or light olive oil for 3 or 4 minutes. Add the warmed rice, the scallions, and the snow peas to the pot and cook for a minute or two. Correct the seasoning, spoon everything onto a warm plate, and scatter the almonds on top. The addition of ham or prosciutto is only if you want to make a more substantial dish, and you can add the meat during the last minute or so of cooking, just long enough to warm it through.
  • Try other vegetables according to the season: asparagus spears, zucchini cut into matchstick-sized pieces, blanched green beans or fava beans, or artichoke hearts.
