3/4 cup granulated sugar
1/3 cup butter
2 tablespoons water
1 (12 ounce) package semisweet chocolate morsels
1 teaspoon vanilla extract
2 large eggs
1/2 cup pecans or 1/2 cup walnuts

Steps:

  • Preheat oven to 325°.
  • Grease a 9-inch pan.
  • In a small bowl, mix flour and baking soda.
  • In a small saucepan combine sugar, butter and water.
  • Bring to boil over medium heat: remove immediately from heat.
  • Stir in 1 cup of chocolate morsels and vanilla until melted and smooth.
  • Transfer mixture to a medium bowl and cool completely.
  • Stir in eggs beating well.
  • Gradually stir in flour until smooth.
  • Stir remaining chocolate morsels and nuts into batter.
  • Pour into pan.
  • Bake until inserted toothpick is clean, 30-35 minutes.
  • Place pan on rack and cool completely.

16 tablespoons (2 sticks) unsalted butter
2 1/4 cups granulated sugar
1 1/2 cups all-purpose flour (see Cook's Note)
1 cup semisweet chocolate chips
3/4 cup packed light brown sugar
1/2 cup light corn syrup
4 tablespoons (1/2 stick) unsalted butter, melted
1 tablespoon pure vanilla extract
1/2 teaspoon kosher salt
2 large eggs
1 tablespoon bourbon, optional
3 1/2 cups coarsely chopped pecans

Steps:

  • For the brownie layer: Preheat the oven to 350 degrees F. Line a 9-by-9-inch baking pan with parchment, leaving a 2-inch overhang on 2 sides. Spray the parchment with nonstick cooking spray.
  • In the bowl of a stand mixer fitted with the paddle attachment, combine the eggs, cocoa powder, vanilla, salt, baking powder and espresso powder, if using. Beat on medium-low speed until smooth, about 2 minutes.
  • Melt the butter in a small saucepan over medium-low heat. Add the sugar and stir until mostly dissolved, 2 to 3 minutes.
  • Add the melted butter mixture to the bowl and mix on medium-low speed until the batter is smooth and shiny, about 2 minutes. Reduce the speed to low and carefully add the flour and chocolate chips, mixing until the flour is fully incorporated. Pour the batter into the prepared pan and bake until the brownie layer is cooked through, 32 to 34 minutes.
  • For the pecan layer: While the brownie layer is baking, whisk together the brown sugar, corn syrup, melted butter, vanilla, salt, eggs and bourbon, if using, in a medium bowl until well combined and the sugar is dissolved. Add the pecans and stir until the nuts are completely coated.
  • Gently pour the pecan mixture over the baked brownie, using a spoon or small offset spatula to carefully spread all the way to the edges. Bake until the pecan pie layer is golden, set and no longer jiggly, 30 to 35 minutes. Let cool completely, about 3 hours, before slicing into 9 squares.

115g/4oz unsalted butter, softened, plus extra for greasing
170g/6oz caster sugar
2 free-range eggs
40g/1½ oz plain chocolate (minimum 65% cocoa solids)
55g/2oz pecans (optional)
1 tsp vanilla extract
2 tsp instant coffee granules
2 tbsp warm water
1 tsp baking powder
55g/2oz plain flour
55g/2oz cocoa powder
icing sugar, for dusting

Steps:

  • Preheat the oven to 180C/350F/Gas 4.
  • Prepare the cake tin. Grease an 18cm/7in square cake tin and line with non-stick baking parchment.
  • In a clean bowl, cream together the butter and sugar until pale and fluffy. Beat in the eggs, one at a time.
  • Chop the chocolate and put to one side.
  • Chop the pecans, if using. Gently fold the nuts and chocolate into the butter and egg mixture. Add the vanilla extract.
  • Dissolve the coffee granules in two tablespoons of warm water and add to the mixture. Mix together well.
  • Add the baking powder, then sift in the flour and cocoa powder. Mix well; the mixture will be quite wet.
  • Spoon the brownie batter into the prepared tin and level out the top with a spatula.
  • Bake in the oven for 35-40 minutes. Allow to cool in the tin for ten minutes, then place on a wire rack to cool.
  • To serve, cut into rectangles and dust with icing sugar.

3/4 cup butter, melted
1 can (5 ounces) evaporated milk, divided
75 caramels
1 cup chopped pecans
1 cup semisweet chocolate chips

Steps:

  • In a large bowl, combine the cake mix, butter and 1/3 cup milk. Spread half of the mixture into a greased 13-in. x 9-in. baking pan. Bake at 350° for 15 minutes., Meanwhile, in a microwave, heat caramels and remaining milk, uncovered, on high for 2-3 minutes or until caramels are melted; stir until smooth. Pour over crust. Sprinkle with pecans and chocolate chips. Drop reserved cake mixture by tablespoonfuls over the top. , Bake for 10 minutes; remove from the oven and smooth top.   • Make the brownies: Put butter and chocolate into a medium pot and place it over low heat. Melt the mixture, taking care not to let the chocolate burn and stirring constantly with a rubber spatula until smooth. Scrape chocolate mixture into a large bowl and mix in the sugar.
