From just two trees, we get an abundance of pears. So I'm always looking for new ideas on how to use them. This elegant roast offers a delicious way to incorporate pears into a main dish stuffing and glaze.

1 boneless whole pork loin roast (3 to 4 pounds)
1/2 cup chopped peeled ripe pears
1/2 cup chopped dried pears
1/2 cup chopped walnuts
1/4 cup minced fresh cilantro
3 tablespoons honey
2 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
GLAZE:
1 cup finely chopped peeled ripe pears
1/2 cup finely chopped onion
1/4 cup maple syrup
2 tablespoons Worcestershire sauce
2 tablespoons chili sauce
1 jalapeno pepper, seeded and finely chopped
1/8 teaspoon cayenne pepper

Steps:

  • Cut a lengthwise slit down the center of roast to within 1/2 in. of bottom. Open roast so it lies flat. On each half, make another lengthwise slit down the center to within 1/2 in. of bottom; open roast and cover with plastic wrap. Flatten to 3/4-in. thickness. Remove plastic wrap., In a small bowl, combine the ripe pears, dried pears, walnuts, cilantro, honey, garlic and pepper flakes; spread over roast to within 1 in. of edges. Roll up from a long side; tie with kitchen string at 2-in. intervals. Place in a shallow roasting pan lined with heavy-duty foil. , Combine the glaze ingredients; spoon over roast. Bake, uncovered, at 350° for 1-1/4 to 1-1/2 hours or until a thermometer reads 160°, basting occasionally with pan drippings. Let stand for 10-15 minutes before slicing.

This Pear and Blue Cheese Stuffed Pork Tenderloin is an incredible meal that comes together quickly. Pork tenderloin is butterflied and filled with white wine poached pears, shallots, blue cheese, and rosemary.

1.5 pounds Pork Tenderloin
2 Pears (2 cups once diced)
2 Medium Shallots (1 cup once sliced)
1 tablespoon Salted Butter
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
2 1/2 cups White Wine
1/2 cup Crumbled blue cheese
3 sprigs of Rosemary
2 1/2 feet of Butcher's Twine
1 tablespoon Olive Oil
1 1/2 cups Chicken Broth

Steps:

  • Heat oven to 425 degrees. Dice pears into small 1/4 inch squares. Thinly slice the shallot.
  • Melt butter in a Dutch oven or an oven-safe pan over medium heat. Add the shallots and 1/4 teaspoon Salt and 1/8 teaspoon black pepper. Sauté for 2 minutes, stirring frequently. Add the pear and 2 cups of the white wine. Let steadily simmer until the liquid has absorbed/evaporated and the pears are translucent for about 14 minutes.
  • While the pears simmer, slice the pork tenderloin horizontally down the center. Slice almost all the way through the tenderloin, and then lay it flat. Pound the pork with a kitchen mallet flattening it as much as possible.
  • Once the pears and shallots are done simmering, generously pile the mixture into the center of the tenderloin.
  • Pile the crumbled blue cheese on top of the shallots and poached pears. Cut the butcher's twine into 6-inch pieces. Then, press the shallots, pears, and blue cheese down and pull the tenderloin together, top with the rosemary, and tie with the butcher's twine. The easiest technique is to slide the butcher's twine underneath the pork and then pull the pork together and tie it closed. Cut the excess twine after tying it. Top the pork with the remaining salt and pepper.
  • Heat olive oil in the same Dutch oven or pan (no need to wash it) over medium high heat. Once the pan is hot, add the pork tenderloin and sear for 2-3 minutes until it has browned. Rotate the tenderloin in the pan 2-3 times letting all sides brown. Pour chicken broth into the pan to prevent any of the drippings from burning.
  • Once the pork has browned, pour 1 cup of chicken broth and 1/2 cup of white wine around the pork. Then place a lid on the pot, and put the tenderloin in the oven to bake. Let the tenderloin bake for 12-14 minutes, or until it reaches 145 degrees on a meat thermometer.
  • Remove the tenderloin from the pot and place it on a cutting board to rest. The tenderloin needs to rest for 5 minutes before slicing it. This keeps the juices in the meat making it tender.
  • Place the pot with the juices on the stove. Simmer over medium heat, scraping up the browned bits with a wooden spoon. Let reduce and thicken for 5 minutes creating a sauce.
  • Slice the tenderloin, removing the butcher's twine and rosemary as you go. Serve with the sauce poured over the meat.

1 tablespoon butter
1 beef tenderloin roast (2-1/2 pounds)
1 cup fresh arugula or baby spinach

1 tablespoon plus 1 teaspoon each minced fresh parsley, basil and tarragon
1 tablespoon olive oil
1/8 teaspoon salt
1/8 teaspoon pepper
SAUCE:
4 shallots, finely chopped
2 teaspoons butter
1/2 cup sherry
1/2 cup reduced-sodium beef broth
2 tablespoons minced fresh tarragon
2 teaspoons cornstarch
2 teaspoons cold water

  • In a large skillet, saute pears in butter until tender., Cut a lengthwise slit down the center of the tenderloin to within 1/2 in. of bottom. Open tenderloin so it lies flat. Bake at 425° for 40-50 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 15 minutes before slicing., In a small saucepan, saute shallots in butter until tender. Add sherry; cook over low heat for 4 minutes. Add broth and tarragon. 6 pork tenderloin chops (1 inch thick)
2 cups yellow onions, thinly sliced
15 ounces pear halves, with syrup
2 teaspoons garlic, minced
1/4 cup dried cranberries
1/2 cup white wine
1/4 cup balsamic vinegar
1 tablespoon olive oil
1 teaspoon dried thyme
1/4 teaspoon ground nutmeg
1/2 teaspoon ginger, grated fresh
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Spray 9x13 baking dish with nonstick spray.
  • Place 6 pork loin slices in the prepared dish or crock pot.
  • Combine remaining ingredients and mix until well incorporated.
  • Pour over pork.
  • Cover dish with aluminum foil and bake 2 hours at 325.
  • Crock pot: You can also cook in crock pot - same assembly instructions and cook on low for 5-6 hours.
  • To freeze: place all ingredients into a ziploc freezer bag. Thaw before baking, transfer to baking dish sprayed with nonstick spray and cook as directed above.

1 ripe pear, cored and coarsely chopped
1 clove garlic, pressed
¾ cup extra-virgin olive oil
½ cup dry white wine
½ teaspoon minced rosemary
1 (1 1/2 pound) pork tenderloin, cut in half

1 teaspoon ground mixed peppercorns
5 pearl onions, peeled and chopped

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mash together soft pear, garlic, olive oil, white wine, and rosemary. Season pork with salt and pepper, and place into a 10x10 inch glass baking dish. Pour pear mixture over pork and sprinkle with chopped onion. Cover baking dish with aluminum foil.

2 cups (500 mL) fresh or canned pears, drained and sliced
1/4 lb (115 g) pork tenderloin:
1/2 tsp. (3 mL) ground coriander
Sufficient quantity, flour
Salt and pepper to taste
2 Tbsp. (30 mL) butter

Steps:

  • Preheat the oven to 375°F/190°C.In a pot, bring to a boil 3/4 cup (180 mL) of maple syrup and add the pears.Cook about 5 min or until the pears come apart easily.Strain the mixture. Keep the liquid warm. It will be used to prepare the sauce and the pulp will be used to stuff the pork tenderloin.Incise the pork in two, season it and stuff it with the pear pulp. Close the tenderloin and finely coat it with flour.In a pan, heat half of the butter. Brown the tenderloin on all sides and finish cooking in the oven for about 20 min.In a pot, heat the liquid and then add the rest of the maple syrup and the coriander.Cook 2-3 min and incorporate remaining butter, whipping vigorously.Serve warm and top with the sauce.

1 Tbsp Coconut Chai Sugar Shaker
2 tsp Cumin Spice Sea Salt
4oz Chevre
1/4 Red Apple, small dice
1/4 Pear, small dice
1 Tbsp Blood Orange Infused Olive Oil
Optional: Fresh Rosemary, chopped

Steps:

  • Preheat oven to 400F.
  • Butterfly pork tenderloin using the tip of a chefs knife to make a slit down the length of the pork, only cutting about halfway through. Use a meat mallet to flatten out the pork tenderloin to 1/2" in thickness.
  • Rub both sides of pork with sugar shaker and sea salt.
  • In a bowl mix together the chevre, apples and pears. Spread out mixture evenly over pork and roll tightly. Place pork seam side down on a baking sheet. If needed secure pork with toothpicks or cooking twine.
  • Drizzle with olive oil and cook until internal temperature reaches 145F, about 25 minutes. Make sure to take the temperature of the pork and not the filing.
  • Let rest for 5 minutes before cutting into slices. Garnish with rosemary if desired and serve!
