6 cups peeled and sliced Bosc pears
1 tablespoon fresh lemon juice
½ cup light brown sugar, packed
3 tablespoons cornstarch
¾ teaspoon ground cinnamon
⅛ teaspoon ground cloves
½ cup shredded sharp Cheddar cheese
½ cup all-purpose flour
½ cup light brown sugar, packed
¼ cup unsalted butter

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 2-quart casserole dish.
  • Toss pears with lemon juice in a bowl. Combine 1/2 cup light brown sugar, cornstarch, cinnamon, and cloves together in a separate bowl. Add sugar mixture to pear mixture; toss to coat. Transfer to the prepared casserole dish. Sprinkle pear mixture with Cheddar cheese.
  • Combine flour and 1/2 cup light brown sugar in a food processor; pulse to mix. Cut butter into flour mixture until crumb consistency. Sprinkle topping over Cheddar cheese layer.
  • Bake in the preheated oven until top is golden brown, about 45 minutes.

These cheesy, buttery gems will likely become a mainstay in your repertoire. Not only are they crispy, rich and, well, addictive, they can be partially made up to a month in advance. That's because once the dough is made it can be frozen and simply "cut to order" as you need it. Just be sure to freeze it in small portions so that you don't have to defrost it all at once. Although these crackers are great plain, you can draw on the age-old "apples and cheddar" theme by topping them with a dollop of apple or pear butter.

4 ounces cheddar, coarsely grated
2 ounces Parmesan, finely grated
3/4 cup all-purpose flour
1/4 teaspoon dry mustard
1/4 teaspoon kosher salt
1/8 teaspoon cayenne pepper
4 tablespoons (1/2 stick) unsalted butter, softened and cut into small pieces
2 tablespoons water, plus more if needed

Steps:

  • In the bowl of a food processor, place all ingredients except the butter and water. Pulse 5 times. Add the butter and pulse again until the butter pieces are the size of BBs. Add the water, 1 tablespoon at a time, and pulse just until the dough holds together. If the dough is still crumbly, add more water, 1 teaspoon at a time, until it reaches the right consistency.
  • Turn the dough out onto a large piece of waxed paper. Roll the dough into a log, 9 to 10 inches long, and square off the ends. Refrigerate, well wrapped, for at least 2 hours and up to 2 days. Or freeze it for up to 1 month. (You may want to cut the log in half or in thirds to freeze if you think you will want to defrost a smaller amount at a time.)
  • Preheat the oven to 375 degrees F.
  • To make the crackers, cut the log into 1/4-inch-thick slices. Arrange the slices on a baking sheet 1-inch apart. Bake for 8 to 10 minutes, or until the crackers are a light golden color. Turn the crackers and bake for 3 to 5 more minutes, or until they are golden around the edges. Cool on a rack. Serve at room temperature.

8 ounces sharp Cheddar, finely grated
1 cup all-purpose flour
4 tablespoons (1/2 stick) butter, cut into pieces
1/2 teaspoon kosher salt
1/2 teaspoon seasoned salt
Pinch of cayenne
3 tablespoons ice water

Steps:

  • Put the Cheddar, flour, butter, salt, seasoned salt and cayenne in a food processor and pulse until the mixture resembles sand. Add the ice water and pulse until the dough comes together. Form the dough into a ball, wrap in plastic and refrigerate for 1 hour.
  • Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat.
  • Roll out the dough to 1/4-inch thickness and cut into squares with a pizza cutter. Use a wooden skewer to poke a small hole in the center of each square. Transfer to the prepared baking sheet and bake until golden brown, 15 to 17 minutes. Allow to cool before packing up.

1 kg pear
1 tablespoon lemon juice
750 g sugar
250 g sharp cheddar cheese
125 g water crackers

Steps:

  • Core and chop pears, put into a saucepan with the lemon juice and half of the cores (make sure you dont have any seeds).
  • Barely cover the pears with water; simmer until pears are soft.
  • Puree the pears in a food processor, and return pears to a clean saucepan. Add the sugar and cook until very thick, make sure you are stirring regularly.
  • Pour the mixture into a lined deep baking tray and leave to firm at room temperature. Cut into pieces and serve with cheddar cheese and water crackers.

3/4 cup all-purpose flour
1/2 teaspoon kosher salt

  • Place the cheese, flour, salt and pepper flakes in a food processor; process until blended. Add butter; pulse until butter is the size of peas. 1 cup all purpose flour, plus more dusting
1 teaspoon kosher salt
1 teaspoon baking powder
4 tablespoons unsalted butter, cubed and chilled
8 oz white cheddar cheese, shredded
⅓ cup fresh chives, thinly sliced
¹⁄₈₂ teaspoon red pepper flakes
4 tablespoons ice water, divided, plus more as needed
1 large egg
leaf shaped cookie cutter, 2 in (5 cm)
star shaped cookie cutter, 2 in (5 cm)

Steps:

  • Add the flour, salt, and baking powder to the bowl of a food processor. Pulse a few times to combine. Add the butter and cheddar and pulse until well combined and the consistency is crumbly, with the butter and cheese broken down to uniform pieces throughout. Add the chives and red pepper flakes and pulse to combine.
  • Add 3 tablespoons of ice water, 1 tablespoon at a time, and pulse until the dough comes together. It should hold together on its own but crumble when you press it between 2 fingers. If the dough is still too dry, add more water, 1 teaspoon at a time, until the desired texture is reached.
  • Turn the dough out onto a lightly floured surface and shape into a disc, then wrap in plastic wrap. Transfer the dough to the refrigerator to chill for 30 minutes. Set 2 baking sheets in the refrigerator to chill while the dough is resting.
  • Preheat the oven to 350°F (180°C).
  • In a small bowl, whisk together the egg and 1 tablespoon cold water. Set aside.
  • On a lightly floured surface, roll out the dough to ⅛-inch thick, pinching together any cracks around the edges. Using a 2-inch leaf and/or star cutter, punch out as many crackers as you can. Gather up the dough scraps and roll out again, repeating the process up to 3 times.
  • Line the chilled baking sheets with parchment paper, then transfer the crackers to the pans. Brush the crackers with the egg wash.
  • Bake the crackers for 20-22 minutes, or until golden brown. Let cool completely, then store in an airtight container at room temperature (with a silica packet inside to absorb excess moisture) for up to 5 days.

The key to any short dough - that distinctive tender sandy crumbly texture - is the high fat-to-flour ratio, and this version not only relies on butter but also counts on the delicious fats that come from sesame seeds, block Cheddar and even the oil from the pecans. For a remarkable distinction among the many, many versions of these to be found, toast them until just passing golden into brown, and see how that in itself sets these apart.

1 1/3 cups all-purpose flour
1 cup loosely packed grated Cabot Farms Vermont white Cheddar (about 3 ounces)
2/3 cup loosely packed grated pecorino Romano cheese (about 1 ounce)
1 teaspoon kosher salt
1/2 teaspoon cayenne
8 tablespoons (1 stick) cold unsalted butter, cut into 1/4-inch cubes
1 large egg yolk
1/3 cup pecans, finely chopped (about 3 tablespoons)
3 tablespoons untoasted white sesame seeds
2 tablespoons ice water

Steps:

  • Add the flour, both cheeses, salt and cayenne to the bowl of a food processor, and pulse until combined.
  • Scatter the cold butter chunks on top, and pulse again to form coarse crumbs.
  • Add egg yolk, pecans and seeds, and pulse to combine thoroughly, yielding a coarse grainy meal.
  • Transfer mixture to a large stainless-steel bowl. Sprinkle the ice water on top, and knead briefly to bring the dough together, as you would a pie dough.
  • Divide the dough into thirds, and roll each into a neat, 8-inch-long cylinder that is about the width of a silver dollar. Wrap each log in plastic wrap, and twist the ends tightly in opposite directions, forming a perfect and compact torchon. Refrigerate until well chilled and completely firm; overnight is ideal.
  • Heat the oven to 375. Line two large baking sheets with parchment paper or nonstick baking mats. Unwrap the dough, discarding plastic wrap, and slice the logs into thin coins, each about the width of a pencil.
  • Arrange the coins in neat rows on the prepared sheets, making sure they're not quite touching one another. This dough won't expand or flatten after baking.
  • Bake until golden at their centers and just starting to toast at their edges, about 20 minutes. Check them midway through baking, and rotate sheets if your oven bakes unevenly.
  • Transfer the baking sheets to wire racks to cool. Once they are fully cooled, transfer coins to an airtight container, where they will keep for up to 3 weeks.

  • Place the poached pears in a colander to drain and allow them to cool for 10 or 15 minutes. Add the cooled pears to your blender or food processor and puree them. Measure the pear puree and add to a heavy-bottomed wide skillet or dutch oven
  • For every 1 cup of puree you need to add 3/4 cup of sugar. Add the lemon juice to the puree and sugar, stirring to dissolve the sugar and bring to a boil over medium-high heat. Boil for one minute, then reduce the heat to a simmer and add the liquid pectin. Continue simmering the mixture, string frequently. The mixture will gradually get to be very thick and turn a dark orangey color. This will take about one-and-a-half to two hours and when you can pull a wooden spoon through it and it leaves an open streak on the bottom of the pan that takes a few seconds to fill in, remove it from the heat.
  • Pour the hot mixture into a prepared 13x9x1/2 size baking sheet that has been lined with parchment paper. Smooth it out evenly in the pan and allow it to cool overnight. It should be about 1/4-inch thick.
