SALISBURY STEAK A LA MICROWAVE
Maybe you're surprised to find a recipe for making Salisbury Steak from scratch. Did you, like many people do, assume that Salisbury was a pseudo-sophisticated code name for roadkill? I shall not attempt to disprove that theory here. Perhaps, in some cases, it is true. (I shall now show great restraint, and not delve into the mysterious offerings of School Cafeterias I Have Known.)If you make your own, you will know exactly what it contains. Assuming, of course, that you trust your meat supplier. Heh, heh. If the only Salisbury Steak you've ever tasted came pre-packaged, in a tray with mashed potatoes and corn, a few kernels of which managed to find their way over the divider and into the gravy before the whole mess was quick-frozen and shipped to your friendly grocer's freezer, then you MUST try this recipe. This is completely different, and quite tender and delicious. And though it is quick and prepared in a microwave oven, fear not! It bears no resemblance whatever to the gravy-simmered shoe leather TV dinners of your memories.

- Cover and cook on HIGH for 6 minutes; drain carefully.
- Turn patties over and rearrange so the ones in the middle will be on the outside.
- Distribute the sliced mushrooms around between the meat patties.
- Stir the consommé mixture, and pour over everything.
- Replace cover and cook on HIGH for 8-10 minutes or until meat is no longer pink inside.
- Let stand for 5 minutes.
- This is good served over hot cooked noodles or rice.
- Yes, you can have them with mashed potatoes and corn.
- I won't tell.

Steps:
- For the meat mixture: Combine the ground beef, breadcrumbs, ketchup, dry mustard, Worcestershire sauce, bouillon and some salt and pepper. Knead until all combined. Form into 4 to 6 oval patties, and then make lines across the patties to give them a "steak" appearance.
- Fry the patties in a skillet with the butter and oil over medium-high heat on both sides until no longer pink in the middle. Remove from the skillet and pour off any excess grease.
- For the gravy: Reduce the heat to medium and add in the sliced onions. Stir and cook until golden brown and somewhat soft, for several minutes. Add the beef stock, ketchup, seasoning sauce, if using, and the Worcestershire. Then combine the cornstarch with a little beef broth and add to the sauce if using. Stir and cook to reduce.
- Add a sprinkle of salt and pepper and more broth if needed for thinning. Then return the patties to the gravy. Spoon the gravy over the top and let them simmer and heat back up for a couple of minutes.
GRILLED SALISBURY STEAKS IN SAVORY MUSHROOM GRAVY
My recipe for Salisbury steaks grilled and simmered in a savory mushroom sauce, is fairly easy to prepare and delicious. This can be finished two ways -- simmered in the gravy on the stovetop -- or oven-baked.

Steps:
- NOTE: DO NOT ATTEMPT TO GRILL PATTIES ON A BARBECUE RACK OR GAS GRILL. USE AN INDOOR RIDGED FLAT GRILL OR PRESS "GEORGE FOREMAN" CLOSABLE GRILL. I RECOMMEND DOUBLING THE GRAVY RECIPE IF PLANNING TO SERVE GRAVY OVER MASHED POTATOES. THE DIRECTIONS HAVE BEEN CONDENSED SINCE FIRST REVIEW.
- MIX the GRILLED SALISBURY STEAKS ingredients in a medium to large mixing bowl (mixture will be soft; patties will shrink considerably while cooking); KNEAD well using hands or mix using a large fork; DIVIDE ground beef mixture to form 4-5 oval-shaped steak patties, about 3/4" thick; PLACE patties onto a platter.
- PREHEAT indoor grill to medium-high heat; OIL or spray grill surfaces completely with non-stick cooking spray; GRILL beef patties until sear-marks are obtained; TURN patties and repeat process (if using a press-type closable grill, sear without turning), searing until center of each beef patty is still a little pink, not quite done.
- CUT Spanish onion into 1/4" thick, julienne strips to yield 1/2 cup; THINLY slice 4 ounces fresh mushrooms; PREHEAT oven to 350 F if using the OVEN FINISH METHOD (SEE STEP 9).
- HEAT 3 tablespoons unsalted butter a large heavy saucepan over medium heat; ADD the onion, mushrooms and mashed garlic clove; SAUTE until onions are light golden and softened; STIR in 1 1/2 tablespoons all-purpose flour; COOK for 1-2 minutes.
- QUICKLY whisk the beef broth into the saucepan roux to deglaze, then add the remaining SAVORY MUSHROOM GRAVY ingredients; BRING mixture to a boil over medium-high heat while whisking constantly; REDUCE heat to medium.
- WHISK 1/4 cup cold water (or 2 tablespoons water with 2 tablespoons cognac) with 1 1/2 tablespoons cornstarch for the SLURRY in a small mixing bowl, until smooth and cornstarch is completely dissolved; ADD the slurry gradually to gravy base in saucepan, while whisking constantly, until thoroughly blended; COOK gravy until thickened and bubbly; REDUCE heat to low; ADD grilled beef patties, immersing them in gravy.
- STOVETOP FINISH METHOD: Simmer over low heat for 10 minutes. CAREFULLY turn steaks with a spatula. Simmer an additional 10 minutes until steaks are steam-cooked and tender.
- OVEN FINISH METHOD: Transfer oven-safe large heavy saucepan to preheated 350 F oven. Bake patties uncovered for 20 minutes, immersed in gravy.
- SERVE: Transfer steaks onto serving plates with a spatula. Whisk gravy to refresh consistency. Ladle gravy over steaks. Serve with desired side dishes. Enjoy!

This meat dish can be made in 25 minutes or made ahead and reheated with the gravy in the microwave. I often double the recipe and freeze one batch of cooked steaks and gravy for an even faster meal on an especially busy night. -Carol Callahan, Rome, Georgia

This recipe has been in my family for years. It's easy to cook, but tastes like it took hours to make! I usually make enough extra sauce to pour over mashed potatoes. YUM!

SALISBURY STEAK
I came up with this recipe while referencing another recipe here on Zaar. I would have simply reviewed the recipe and added to my cookbook but I made such changes that it is not like the original recipe I referenced, so I feel it would not be a fair rating if I did rate it(even a high rating, which it would have been) I am not saying this is better, but different, the recipe I went by is recipe #16143 . The main reason for the biggest change - the addition of brown gravy is because I like salisbury steaks with mashed potatoes and in order to have enough gravy for 4 or 5 serving of potatoes needs more gravy, plus when I think of salisbury steak I think of brown gravy.
