GERMAN PEAR PANCAKE



German Pear Pancake image

This delicious German-style pancake is traditionally made with apples, but pears are a delightful variation. Serve with maple syrup or creme fraiche.

2 large firm pears, cored and cut into 1/8-inch-thick slices
½ cup white sugar, divided
2 tablespoons lemon juice
1 ½ teaspoons lemon zest
¼ cup butter, sliced
6 large eggs
1 cup whole milk
1 teaspoon pure vanilla extract
½ teaspoon kosher salt
1 cup all-purpose flour
1 tablespoon confectioners' sugar, or to taste

Steps:

  • Toss pear slices with 1/4 cup white sugar, lemon juice, and lemon zest to coat.
  • Arrange butter in a 12-inch cast-iron skillet and place on the center rack of the oven. Heat oven to 400 degrees F (200 degrees C). Remove skillet from oven once the butter has just melted, 3 to 5 minutes.
  • Beat eggs in a large bowl until frothy; add milk, 1/4 cup white sugar, vanilla extract, and salt and mix until just combined. Sift flour into egg mixture and stir until batter is just mixed.
  • Stir pear slices into the melted butter and spread into a single layer. Pour batter over pears.
  • Bake in the preheated oven until pancake is set in the middle, the sides have risen, and the bottom is browned, 28 to 30 minutes. Top pancake with confectioners' sugar.

2 Bosc pears
2 tablespoons pure maple syrup, plus more for drizzling
1/2 teaspoon ground cinnamon
1/2 teaspoon unsalted butter
1 recipe Best Quick Pancakes
Sour cream, for garnish

Steps:

  • Core pears with an apple corer. Starting at the bottom, slice pears crosswise into 1/8-inch-thick rings, and toss in a small bowl with maple syrup and cinnamon.
  • Heat an electric griddle to 375 degrees or a heavy skillet until very hot. Brush with butter; wipe off excess with a folded paper towel. Place a few pear slices on the griddle, 2 1/2 inches apart. Let cook 1 minute. Ladle about 1/4 cup of the batter into center of each pear ring. Using the bottom of a ladle, gently push batter over edges of pears. Let cook until pancakes have bubbles on top and are slightly dry around the edges, about 2 1/2 minutes.
  • Using a spatula, turn pancakes over; cook until golden on bottom, about 1 minute. Repeat with remaining pears and batter. Serve with a dollop of sour cream and extra syrup.

3 medium pears, peeled and sliced
1/2 cup packed brown sugar, divided
1 tablespoon lemon juice
1/2 cup all-purpose flour
1/2 cup 2% milk
3 large eggs, room temperature, beaten
2 tablespoons maple syrup
1 teaspoon vanilla extract
1/8 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Whipped cream, optional

Steps:

  • In a 10-in. cast-iron or other ovenproof skillet, melt 3 tablespoons butter over medium heat. Add pears; cook and stir until tender, about 5 minutes. Stir in 1/4 cup brown sugar and lemon juice. , In a bowl, whisk the flour, milk, eggs, syrup, vanilla and salt until smooth; pour over pears. Bake at 450° until puffy, 10-12 minutes. , Meanwhile, in a microwave-safe bowl, melt remaining butter. Stir in cinnamon, nutmeg and the remaining brown sugar. Spread over pancake. Bake until golden brown, 8-10 minutes. Cut into wedges and serve immediately. If desired, top with whipped cream.

In this perfect oven pancake, cottage cheese lightens the batter and keeps it fluffy and moist as it bakes atop a pinwheel of caramelized pears. A generous pat of butter and a drizzle of maple syrup are the finishing touches on the easiest, most impressive pancake around.

1 3/4 cups all-purpose flour (see Cook's Note)
3 tablespoons granulated sugar
1 tablespoon baking powder
Kosher salt
1 1/4 cups milk
1 teaspoon pure vanilla extract
3 large eggs, lightly beaten
6 tablespoons unsalted butter, melted, plus more at room temperature for serving
1 cup cottage cheese
1 firm ripe pear, peeled, cored and cut into 12 wedges
2 tablespoons light brown sugar
Maple syrup, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Whisk the flour, granulated sugar, baking powder and 1/2 teaspoon salt in a large bowl. Whisk the milk, vanilla, eggs and 4 tablespoons of the butter in a medium bowl. Add the wet ingredients to the dry and whisk until just combined. Fold in the cottage cheese with a rubber spatula. Transfer the mixture to a large liquid measuring cup for easy pouring.
  • Heat the remaining 2 tablespoons butter in a medium ovenproof nonstick skillet over medium heat until bubbling. Arrange the pear wedges in the skillet in a pinwheel pattern, with the thin tips pointing out and the rounded ends meeting in the center. Cook to soften the pears slightly, about 2 minutes. Sprinkle with the brown sugar, cover and cook until the sugar starts to melt, about 2 minutes.
  • Uncover the skillet and pour in the batter, starting at the outside edge and working in a circular pattern towards the center. (This will keep the pears in place.) Continue to cook on the stovetop until the butter starts to bubble up around the edges, about 2 minutes. Transfer to the oven and bake, uncovered, until set and golden, 25 to 30 minutes.
  • Carefully invert the pancake onto a serving dish. Serve with pats of butter and maple syrup for topping.

SHEET-PAN RICOTTA PANCAKES RECIPE

4 Bartlett pears (about 2 lb.), coarsely chopped
1/4 cup unsweetened apple cider
3 Tbsp. fresh lemon juice
3 Tbsp. honey
3/4 tsp. ground cinnamon
1/4 tsp. kosher salt
Butter or nonstick vegetable oil spray (for pan)
1 cup old-fashioned oats
1 1/2 cups unsweetened apple cider
2 1/2 cups all-purpose flour
3 tsp. baking powder
1 tsp. baking soda
1 tsp. kosher salt
4 large eggs
2 1/2 cups whole-milk ricotta
1/4 cup honey
1 Tbsp. finely grated lemon zest
Powdered sugar (optional, for serving)

Steps:

  • Combine pears, cider, lemon juice, honey, cinnamon, and salt in a medium saucepan. Cover and heat over medium-high. When mixture starts to boil (about 5 minutes), stir and reduce heat to medium-low. Cover again and simmer, uncovering and stirring occasionally, until pears are softened, about 15 minutes.
  • Using a potato masher, mash until pears are a chunky purée. Continue to cook, uncovered, stirring occasionally, until liquid is mostly evaporated and compote is the consistency of chunky applesauce, 25-30 minutes. Let cool.
  • Do Ahead: Compote can be made 5 days ahead. Transfer to an airtight container and chill.
  • Preheat oven to 350°F. Butter an 18x13" rimmed sheet pan. Line with parchment, then butter parchment.
  • Mix oats and cider in a medium bowl.
  • Whisk flour, baking powder, baking soda, and salt in another medium bowl to combine.
  • Whisk eggs, ricotta, honey, and lemon zest in a large bowl to combine, making sure eggs are fully incorporated. Add one-third of dry ingredients to egg mixture and whisk to combine. Add half of cider mixture to egg mixture and whisk again. Add half of remaining dry ingredients and whisk to combine. Add remaining cider mixture and whisk to combine yet again. Using a rubber scraper, fold remaining dry ingredients into batter just until combined.
  • Pour batter into prepared pan and spread evenly into corners with a spatula.
  • Dollop tablespoonfuls of pear compote across top of batter. Stick a butter knife or skewer straight down into batter and drag through compote in a figure-eight motion to create a swirling pattern.
  • Bake pancake until top is golden brown and center springs back when pressed with a finger, 35-40 minutes.
  • Let pancake cool at least 10 minutes. Dust with powdered sugar, if using, then cut into 16 pieces.
  • Do Ahead: Pancakes can be made 5 days ahead. Transfer to an airtight container and chill, or freeze up to 3 months. To reheat, heat sliced pancake in a toaster oven until warmed through, about 8 minutes (10 minutes if frozen); or wrap in a damp paper towel and microwave about 30 seconds (60 seconds if frozen).
