SLOW COOKER BERRY COBBLER

Slow Cooker Berry Cobbler image

This colorful cobbler is very juicy, but the sweetened berry "sauce" is so delicious it's worth spooning up. If you don't have time to make the sour cream topping, a sprinkle of confectioners' sugar or a dollop of vanilla yogurt works well, too.

Provided by Food Network Kitchen

Categories     dessert

Time 4h40m

Yield 6 to 8 servings

Number Of Ingredients 15

Unsalted butter, for greasing insert
1/4 cup cornstarch
2 tablespoons lemon juice (about 1 lemon)
Two 12-ounce bags frozen mixed berries (about 5 1/2 cups)
2/3 cup granulated sugar
1 1/4 cups all-purpose flour
3 tablespoons granulated sugar
1 teaspoon baking powder
Pinch fine salt
4 tablespoons cold unsalted butter, cut into small pieces
3/4 cup milk
1/4 teaspoon ground cinnamon
1/2 cup heavy cream
1/4 cup sour cream
2 tablespoons confectioners' sugar

Steps:

  • For the filling: Butter the sides and bottom of the insert of a 6-quart slow cooker. Whisk together the cornstarch, lemon juice and 2 tablespoons water in a small bowl. Add the mixture to the insert, add the berries and granulated sugar and toss.
  • For the biscuit topping: Whisk together the flour, 2 tablespoons of the granulated sugar, baking powder and salt in a large bowl. Add the butter and rub the mixture together with your fingers so that it forms a coarse meal with some pea-sized lumps. Add the milk and stir with a wooden spoon to form a wet dough.
  • Drop spoonfuls of the dough on top of the berry mixture. Combine the remaining 1 tablespoon granulated sugar and the cinnamon and sprinkle over the dough. Cover the slow cooker and set to high for 3 to 4 hours. The cobbler should be bubbly and the biscuits should be cooked through. Let rest for 20 minutes before serving.
  • For the sour cream topping: Meanwhile, combine the heavy cream, sour cream and confectioners' sugar in a medium bowl and beat with an electric mixture until the mixture forms medium peaks.
  • Spoon the cobbler into bowls and top with the whipped sour cream topping.

SLOW COOKER TRIPLE BERRY CRISP

Slow Cooker Triple Berry Crisp image

Triple berry crisp, made easy in the slow cooker! Recipe works with fresh or frozen berries, is healthy compared to most, and can be made gluten free.

Provided by Erin Clarke / Well Plated

Categories     Dessert

Time 2h10m

Number Of Ingredients 12

1 1/4 cups old-fashioned rolled oats
3/4 cup white whole wheat flour
1/2 cup sliced almonds (or swap chopped walnuts, pecans, or simply omit)
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
6 tablespoons unsalted butter
1/3 cup pure maple syrup (or honey, I use maple syrup)
5 cups mixed berries (fresh or frozen (I used a blend of blueberries, raspberries, and blackberries))
1 tablespoon freshly squeezed lemon juice
2 teaspoons pure vanilla extract
1/2 to 1 tablespoon cornstarch
Optional for serving: vanilla ice cream ( or frozen yogurt, whipped cream, or Greek yogurt)

Steps:

  • Coat a 5- to 6-quart slow cooker with nonstick spray or line with a nonstick liner. In a large bowl, combine the oats, whole wheat flour, almonds (if using), cinnamon, and salt. Pour the melted butter and maple syrup over the top, then stir to evenly moisten.
  • If using frozen berries, rinse them so that any large ice crystals are removed (the berries do not need to be completely thawed). Place in a large bowl, then stir together with the lemon juice, vanilla, and 1/2 tablespoon cornstarch (if using fresh berries) or 1 tablespoon cornstarch (if using frozen). Transfer to the prepared slow cooker, then sprinkle the oat mixture evenly over the top. Lightly coat the top of the crisp with nonstick spray.
  • Lay a sheet of paper towel or kitchen towel over the top of the slow cooker so that it overhangs the sides and will stay in place once the slow cooker is covered**. (This absorbs moisture and helps the top to crisp). Cover and cook for 1 to 2 hours on high or 2 to 3 hours on low, until the fruit is bubbly and the top is browned. If your berries are still frozen, the cooking time may be longer. Serve warm, topped with vanilla ice cream, Greek yogurt, or whipped cream as desired.

BERRY COBBLER

Berry Cobbler image

Provided by Food Network

Categories     dessert

Time 1h5m

Yield 6 servings

Number Of Ingredients 13

1/2 cup granulated sugar
2 tablespoons cornstarch
Two 12-ounce packages frozen mixed berries (or substitute 6 cups fresh in season)
1/2 teaspoon finely grated lemon zest
1 1/3 cups all-purpose flour, plus additional for dusting
1/4 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
5 tablespoons cold unsalted butter, cut into cubes
1/2 cup heavy cream
1 large egg
2 tablespoons turbinado sugar, such as Sugar in the Raw
Vanilla ice cream, for serving, optional

Steps:

  • Preheat the oven to 400 degrees F.
  • For the filling: In a large bowl, combine the granulated sugar and cornstarch; whisk until thoroughly mixed. Add the berries and lemon zest, and stir until the berries are completely coated. Pour the mixture into a 2-quart casserole dish or into 6 individual ramekins.
  • For the topping: Sift together the flour, granulated sugar, baking powder and salt in a large bowl. Cut the butter into the dry ingredients with a pastry blender or two knives until the mixture has the texture of coarse meal.
  • Add the cream and mix in with a fork until a dough forms. Dust a work surface and your hands with flour. Gather the dough into a ball.
  • Knead the dough gently for about 1 minute. Flatten the dough ball and then roll out with a lightly-floured rolling pin, shaping the dough into a rectangle or oval that matches the top of your casserole dish; cut into rounds if using ramekins.
  • Lay the dough on top of the berries in the casserole dish or ramekins. In a small bowl, whisk the egg with 1 tablespoon water until milky. Brush the dough with the egg wash and sprinkle with the turbinado sugar.
  • Bake the cobbler until the topping is golden brown, about 35 minutes. Let rest for at least 10 minutes before serving. Serve with ice cream if using.
