Pear, Caramelized Onion, and Brie Quesadillas image

A delicious lunch or picnic quesadilla that's really easy to make. Make it for a crowd or for two; it's also a great party appetizer.

2 teaspoons olive oil
1 sweet onion (such as Vidalia®), thinly sliced
2 tablespoons honey
½ teaspoon dried thyme
salt and ground black pepper to taste
1 (10 ounce) package flour tortillas
cooking spray
6 ounces Brie cheese, cut into 1/4-inch slices
2 ripe d'Anjou pears, sliced 1/4-inch thick

Steps:

  • Heat oil in a skillet over medium heat. Cook onion until soft and translucent, 10 to 15 minutes. Stir in honey, thyme, salt, and pepper; continue to cook until golden brown, about 10 minutes more. Add pears and cook until just softened, 2 to 3 minutes. Remove from heat and set aside.
  • Heat a nonstick skillet over medium heat and grease with nonstick cooking spray. Place 1 tortilla in the skillet and top with 1/4 of the Brie. Add 1/4 of the onion-pear mixture and cover with a second tortilla. Weigh down quesadilla with a smaller skillet or plate and cook until lightly browned on the bottom, 2 to 3 minutes. Flip and continue cooking until browned on the other side, 2 to 3 minutes more. Transfer to a plate.
  • Repeat with remaining tortillas, Brie cheese, and onion-pear mixture. Slice quesadillas into wedges, or wrap in foil to take along for a picnic.

This recipe is a lovely savoury quiche featuring fresh pears and onions. It is great any time of the year, but especially in autumn. Serve this with a nice salad and you have a fantastic healthy meal. I hope youll enjoy it as much as we do!

100 g spelt flour (can use ap, too)
100 g whole spelt flour (can use whole wheat, too)
1/2 teaspoon mixed Italian herbs, dried
1 pinch salt
100 g vegetarian pate (like tartex, tofu or sunflower seed based, with onion flavour, may sub butter)
1 egg, beaten
1 tablespoon cold water (may need more)
1 tablespoon oil
3 red onions, halved and sliced
2 pears, firm but ripe (halved and sliced)
200 g light sour cream
2 eggs
200 g swiss cheese, grated (can use light)
1/4 teaspoon nutmeg
1/4 teaspoon fresh ground black pepper
1/4 teaspoon mixed Italian herbs, dried
1/8 teaspoon paprika

Steps:

  • For the Crust combine flours, herbs and salt in a big bowl. Using your fingers work in the vegetarian spread or butter until coarse crumbs have formed. Add the egg and the tbs of water. Knead into a smooth dough. If dough is too dry, add another tbs of water and knead again.
  • Pat dough into a greased 10 inch spring-form pan (or pie dish). Prick with a fork and pre-bake in the preheated oven at 180°C/350°F for 10 minutes.
  • Meanwhile for the filling heat the oil in a pan. Sautee onions and pear slices for 4 minutes. Set aside.
  • In a big bowl beat together eggs and sour cream. Add cheese, herbs and spices.
  • Fold the slightly cooled sauteed onions and pears into the sour cream mixture. Pour this into the pre-baked pie shell.
  • Bake in the oven at 180°C/350°F for 30 minutes or until toothpick inserted in the centre comes out clean and quiche is slightly browned.

Make quiche Lorraine to perfection every time with this easy recipe for a crisp pastry base and rich smoked bacon, cheese and thyme filling

25g butter
2 large onions, halved and thinly sliced
1 tbsp fresh thyme leaves, plus a few sprigs
350g shop-bought shortcrust pastry
plain flour, for dusting
200g pack smoked bacon lardons
300g pot double cream
100ml milk
3 large eggs
2-3 pinches of nutmeg, plus extra for the top
140g mature cheddar, grated

Steps:

  • Melt the butter in a large non-stick frying pan, add the onions and cook for 20 mins, stirring now and then, until they are soft and golden brown. Season, stir in the thyme leaves, then transfer to a plate to cool.
  • Heat oven to 200C/180C fan/gas 6 with a large baking sheet inside. Roll out the pastry on a lightly floured surface until large enough to line a 25cm loose-bottomed tart tin, with a little overhang of pastry all the way round the top. This will stop the pastry shrinking in the oven later. If there is more overhang than you need, trim off the excess with scissors. Gently press the pastry into the sides of the tin and prick the base with a fork. Chill for 15 mins.
  • Line the pastry case with a sheet of baking parchment and fill with ceramic baking beans. Bake for 15 mins on the hot baking sheet (this helps to prevent a soggy bottom). Carefully remove the parchment and beans, then return to the oven for 10 mins more until the pastry looks cooked like shortbread, but is not too brown.
  • Meanwhile, put the bacon in the pan you cooked the onions in (there's no need to wash it first or add any oil) and fry for 10 mins until golden. Lift from the pan onto kitchen paper to remove any excess fat. Beat the cream, milk and eggs with seasoning and nutmeg, then stir in the bacon and half the cheese.
  • Remove the pastry case from the oven and reduce heat to 190C/170C fan/gas 5. Spoon the caramelised onions evenly over the base of the pastry case. Pour in the bacon mixture, then scatter with the remaining cheese, the thyme sprigs and a little nutmeg. Bake for 25-30 mins until golden and the filling is just set with a slight wobble in the centre.
  • Trim the excess pastry and leave to settle for 10 mins, then remove from the tin and slice.

1 (9 inch) ready-made refrigerated pie crusts (I use Pillsbury)
4 -6 ounces grated monterey jack cheese or 4 -6 ounces any other grated cheese
2 cups half-and-half
12 slices bacon, cooked and crumbled
1/2 teaspoon sugar
1/3 cup chopped onion
4 eggs
salt and pepper, to taste

Steps:

  • Mix all the ingredients above and pour into the pie crust.
  • Bake at 425-degrees F for 10 minutes.
  • Next, bake at 375-degrees F for 40 minutes.

2 cups/250 grams all-purpose flour, more as needed
1 teaspoon kosher salt
1/4 teaspoon sugar
1 cup/225 grams unsalted butter (2 sticks), cold, cut in 1/2-inch cubes
Scant 1/2 cup ice water, or as needed
4 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil
2 1/2 pounds onions (about 6 to 8 large), finely chopped
1 1/2 tablespoons all-purpose flour
2 ounces lardons, diced pancetta or bacon (about 1/2 cup)
2 large eggs
2/3 cup heavy cream
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon freshly grated nutmeg
2 ounces Gruyère, shredded (about 1/2 cup)

Steps:

  • Make the tart dough: In a food processor, pulse flour, salt and sugar to combine. Add butter, then pulse until lima-bean-size pieces form. Gradually drizzle water into mixture and pulse just to combine, adding more water by the tablespoon if dough doesn't come together. Transfer dough to a lightly floured surface. Press it together into a ball, flatten into a disk and wrap in plastic. Refrigerate for at least 1 hour and up to 3 days. (If you don't have a food processor, see Tip below.)
  • While dough chills, cook the onions for the filling: In a 12-inch skillet over medium heat, melt 3 tablespoons butter and oil. Add onions and cook, stirring occasionally, until pale golden and liquid has been cooked off, about 1 hour. (If the onions start to get too dark, reduce the heat to low.) Stir in flour and cook for an additional 5 minutes. Remove from heat.
  • Butter a 9-inch tart pan. Take chilled dough out of plastic wrap and place on a floured surface. Roll dough into an 11-inch circle, drape over it over tart pan and press into bottom edges and down sides. Use a knife or rolling pin to cut off excess dough, then use your fingers to push dough 1/4-inch up past the edge of pan. Use a fork to poke evenly spaced holes in the bottom and sides of the dough and chill for 30 minutes.
  • Heat oven to 400 degrees. Place chilled tart on a baking sheet. Line with foil, fill with pie weights and bake for 15 minutes. Remove tart from oven and carefully remove foil and pie weights. Return tart to oven to continue baking, uncovered, until dough is just baked through and barely turning golden on the edges, about 5 minutes. Remove from oven and let cool to room temperature. Reduce oven temperature to 375 degrees.
  • Prepare lardons: Heat a medium, dry skillet over medium heat, then add lardons and cook until they start to brown, about 8 minutes. Use a slotted spoon to transfer to a plate lined with a paper towel.
  • In a large bowl, whisk to combine eggs, cream, salt, pepper and nutmeg. Fold in onions, then half the Gruyère. Cube remaining 1 tablespoon butter into pea-size pieces.
  • Scatter cooked lardons over parbaked tart shell. Scrape egg and onion mixture into shell, smoothing top, and then scatter remaining Gruyère on top. Dot with butter pieces, then bake in a 375-degree oven until puffed and browned, 25 to 30 minutes. Let cool slightly, then remove tart ring from pan and slide quiche onto a wire rack. Serve warm or at room temperature.

25g butter
500g small onion, (about 5 in total), halved and finely sliced
2 eggs
284ml pot double cream
140g mature cheddar, coarsely grated
280g plain flour, plus extra for dusting
140g cold butter

Steps:

  • To make the pastry, tip the flour and butter into a bowl, then rub together with your fingertips until completely mixed and crumbly. Add 8 tbsp cold water, then bring everything together with your hands until just combined. Roll into a ball and use straight away or chill for up to 2 days. The pastry can also be frozen for up to a month.
  • Roll out the pastry on a lightly floured surface to a round about 5cm larger than a 25cm tin. Use your rolling pin to lift it up, then drape over the tart case so there is an overhang of pastry on the sides. Using a small ball of pastry scraps, push the pastry into the corners of the tin (see picture, above left). Chill in the fridge or freezer for 20 mins.
  • Heat oven to 200C/fan 180C/gas 6. While the pastry is chilling, heat the butter in a pan and cook the onions for 20 mins, stirring occasionally, until they become sticky and golden. Remove from the heat.
  • Lightly prick the base of the tart with a fork, line the tart case with a large circle of greaseproof paper or foil, then fill with baking beans. Blind-bake the tart for 20 mins, remove the paper and beans, then continue to cook for 5-10 mins until biscuit brown.
  • Meanwhile, beat the eggs in a bowl, then gradually add the cream. Stir in the onions and half the cheese, then season with salt and pepper. Carefully tip the filling into the case, sprinkle with the rest of the cheese, then bake for 20-25 mins until set and golden. Leave to cool in the case, trim the edges of the pastry, then remove and serve in slices.

2 lbs vidalia onions, about 4 thinly sliced
9 inches unbaked pie shells
