This simple pear jam recipe has just a few ingredients and a lot of flavor! Pears are full of pectin, so it's easy for beginners to make this no pectin preserve.

Number Of Ingredients 3

4 lbs Pears
2 to 4 cups Sugar (see note)
1/4 cup lemon juice

Steps:

  • 1. Peel, core and dice pears. (Be sure to chop the pears relatively small, as they'll remain close to that size in the finished jam.) 2. Toss the pears in lemon juice and sugar, cover and refrigerate for overnight (12 to 24 hours). This step is important, and at an absolute minimum, they need 4 hours, preferably more. 3. Prepare a water bath canner (if canning, skip for a freezer jam). 4. Place pear mixture into a heavy-bottomed saucepan and bring to a boil on high. The mixture will foam, so be sure your pan is big enough to handle foaming to avoid overflows. 5. Stir the mixture occasionally, watching for overflows, and cook for about 10-15 minutes. If pear pieces are too large, crush slightly with a potato masher (optional). 6. Cook until the pear jam reaches gel stage, using an instant-read thermometer or testing a small amount on a plate placed in the freezer. (Gel stage is 220 degrees F at sea level and a bit below that at higher elevations. The finished temperature drops by 1 degree for every 500 feet above sea level. I'm at 1000 feet, so my jams finish at 218 F.) 7. Once the jam reaches gel stage, immediately remove it from the heat and pack it into jars leaving 1/4 inch headspace, sealing with 2 part canning lids. 8. Store the pear jam in the refrigerator for immediate use, or process in a water bath canner for 5 minutes. Turn off the canner and allow the jars to sit an additional 5 minutes before removing them to a towel on the counter. Check for seals after a few hours, and store any unsealed jars in the refrigerator. Canned pear jam should last 18 months or more at room temperature if properly sealed (refrigerate after opening) Refrigerated jam should last at least 2-3 weeks.

8 cups chopped or coarsely ground peeled pears (about 5-1/2 pounds)
4 cups sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves

Steps:

  • In a Dutch oven, combine all ingredients. Bring to a boil; reduce heat and simmer, uncovered, until thick, 1-1/2 to 2 hours, stirring occasionally. Stir more frequently as the mixture thickens. , Remove from the heat; skim off foam. Carefully ladle into hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process for 10 minutes in a boiling-water canner.

6 cups peeled, cored, and sliced pears
1 cup water
1 tablespoon lemon juice
1 (2 ounce) package powdered fruit pectin
8 cups white sugar
2 teaspoons ground allspice
2 teaspoons ground nutmeg
½ cup brown sugar

Steps:

  • Sterilize jars and lids in boiling water for at least 10 minutes. Let simmer while making jam.
  • In a large saucepan, combine pears, water, and lemon juice. Cover, and simmer for 10 minutes. Stir in pectin, and bring to a full boil. Stir in the white sugar, and continue boiling and stirring uncovered for 1 minute, until sugar is dissolved. Remove from heat, and stir in brown sugar, allspice, and nutmeg.
  • Quickly fill jars to within 1/2 inch of the top. Wipe rims clean, and top with lids. Process jars in boiling water for 10 minutes to seal.

If you like the taste of cardamom you will love this jam. I used a combination of Bosc and Asian pears. I peeled the Asians, but not the Bosc. No-sugar dry pectin is used, so there's 50% less sugar in the recipe.

8 -9 pears, cored and chopped (peeling is optional)
1/4 cup lemon juice
1 (1 3/4 ounce) box pectin, Sure-Jell no-sugar, powdered
1/2 teaspoon cardamom, ground
1/4 teaspoon cinnamon, ground
1 tablespoon ginger, fresh grated
3 cups sugar

Steps:

  • Place 5-1/2 to 6 cups chopped pears and the lemon juice in a heavy pot.
  • Mash pears with a potato masher to desired chunkiness. If you like it fine you can coarsely grind it. But a food processor will make it too pureed for this recipe.
  • Stir-in the powdered pectin, spices and ginger.
  • Bring to a boil and boil hard for one minute.
  • Add the sugar.
  • Bring back to a boil and boil hard for 4-minutes stirring frequently.
  • Ladle into sterile jars, seal and process for 10 minutes.
  • Yield 7 half pints.

4 cups prepared fruit (buy about 3 lb. fully ripe pears)
2 Tbsp. fresh lemon juice
1 box SURE-JELL Fruit Pectin
5 cups sugar, measured into separate bowl (see tip below)
1/2 tsp. butter or margarine

Steps:

  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • Peel and core pears. Finely grind or chop fruit. Measure exactly 4 cups prepared fruit into 6- or 8-qt. saucepot. Stir in lemon juice.
  • Stir in pectin. Add butter to reduce foaming. Bring to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Add sugar; stir. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with 2-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 min. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. 8 cups peeled finely chopped ripe pears (about 5 1/2 lb.)
4 cups sugar
1 teaspoon ground cinnamon (or more according to your taste)
1/4 teaspoon ground cloves

Steps:

  • Add all the ingredients to a dutch oven.
  • Bring mixture to a boil and stir constantly.
  • Lower the heat and simmer, stirring frequently, for 2 hours or until thickened.
  • Skim off foam with a metal spoon.
  • Pour immediately into hot sterilized jars, filling to about 1/4 inch from the top.
  • Remove air bubbles and wipe jar rims.
  • Cover quickly with metal lids and screw on bands.
  • Process in a boiling water bath for 10 minutes.

PEAR & GINGER JAM

  • Peel and chop the pears and apples into small chunks. Place a couple of tea plates in the freezer for later.
  • Place half the pears and all of the apples into a preserving pan, with just enough water to cover the fruit, and simmer gently until soft and mushy (about 40 mins)
  • Remove from the heat, add the sugar, pectin, ginger, lemon juice and zest, also add the rest of the chopped pears. Put the pan back on the heat and dissolve sugar gently.
  • Once the sugar is dissolved, bring to the boil, and boil rapidly for about 15 minutes, or until setting point has been reached. If you are getting a scum on top, put a nob of butter in at this stage.
  • To check if the jam has set, put a small amount on the cold tea plate, then push gently with the spoon, the jam should wrinkle.
  • Pour into sterilised jars.

GINGER SPICED PEAR JAM - RECIPE

6 cups chopped pears
3/4 cup brown sugar
3 1/4 cup granulated sugar
1 tsp butter
1 tsp lemon juice
1 star anise
1 cinnamon stick
1 tsp freshly grated nutmeg
3 TBS freshly grated ginger root
pinch of salt
1 box low sugar pectin
additional lemon juice, some fruit fresh or citric acid to put into the water to keep the pears from turning brown while you get them all chopped

Steps:

  • Have your canner and 6 half pint jars ready.
  • Chop the pears into small pieces. As you work put them in a bowl of water with some lemon juice, fruit fresh or citric acid to keep them from turning brown.
  • Grate your ginger; I keep my ginger root in the freezer - that way I can always have some on hand and it is very easy to grate. I used my Microplane citrus grater for this recipe.
  • Place the 6 cups of pears, the ginger, the lemon juice and the 3/4 cup of brown sugar in a heavy bottomed large pot on the stovetop. Let this cook just until the sugar melts.
  • Add the star anise, the cinnamon stick and the grated nutmeg.
  • Add the pectin and 1/4 cup of granulated sugar. Add the 1 tsp of butter. Cook over med-high heat until this comes to a rolling boil.
  • Add the remaining granulated sugar and the 1 tsp of butter. When it comes back to a rolling boil let it boil for one minute and turn off the heat. Remove the star anise and cinnamon stick.
  • Fill your jars. Use a non-metal utentsil (I use my plastic offset spatula) to remove and bubbles. Wipe off the rims and seal.
  • Process in a water bath canner for 20 minutes if under 3,000 ft., 25 minutes if 3,000+. Always check your canner's instructions before using it. Turn off the heat and let the jars sit in the canner for 5 minutes then remove.

PEAR GINGER JAM

4 to 5 pears, peeled, cored and cut into small cubes
1 Tablespoon peeled and finely grated fresh ginger
1/2 cup light brown sugar
1 lemon

Steps:

  • In a large pot, combine the pears, fresh ginger, sugar and juice from one lemon.
  • Bring to a boil over medium-high heat them reduce the heat to medium. As you cook the jam for 10-15 minutes, it will thicken.
  • Use a potato masher to help break down the fruit if necessary. If you want to make more of a sauce similar to an applesauce, you could puree the jam before canning it.
  • When the jam is the consistency you prefer, ladle it into jars leaving 1/4 inch headspace.
  • Process the jars for 10 minutes in a water bath canner (adjust for your altitude as needed). Or you could store the jam in the refrigerator for about a month.

Preserve pears at home with this simple water bath canning recipe!

17 to 18 pounds pears (roughly 30 to 35 pears)
Canning Syrup, Juice or Water *see note
(Optional- lemon juice to prevent browning)

Steps:

  • Prepare a water bath canner.
  • Peel and halve pears.
  • Core pears, using a small measuring spoon to scoop out the core.
  • Slice if desired, or leave as halves.
  • Place prepared pears in a bowl of cool water with a splash of lemon juice added to prevent browning while you work.
  • Once pears are prepared, bring a pot with the canning liquid of your choice to a boil on the stove (see note on canning liquids).
  • Add the pears and cook for 5 minutes, until the pears are fully heated through.
  • Pack the pears into canning jars leaving 1/2 inch headspace. Ladle canning liquid over the top of the fruits maintaining a 1/2 inch headspace.
  • De-bubble jars, do any final headspace adjustments, and then cap with 2 part canning lids.
  • Process the jars in a water bath canner for 20 minutes for pints and 25 minutes for quarts. (Recipe is written for a 7-quart canner batch below 1000 feet in elevation, see notes for other batch sizes and elevations.)
  • Once the canning time is complete, remove the jars to cool on a towel on the counter. After 24 hours, check seals and store any unsealed jars in the refrigerator for immediate use.

3 cups peeled, cored and quartered pears ((any variety will work))
1 cup peeled, cored and quartered apples ((any variety will work))
2 tablespoons lemon juice
¼ teaspoon cinnamon
⅛ teaspoon allspice
⅛ teaspoon ginger
⅛ teaspoon cloves
Pinch of nutmeg
1.75 ounce package dry fruit pectin or ½ cup Dutch jel pectin
1 tablespoon butter
5 ½ cups sugar
6-7 half-pint canning jars and lids, sterilized

Steps:

  • In a food processor, pulse pears and apples until fruit is chopped into very small pieces. Transfer the fruit to a large Dutch oven or other heavy-bottomed pot. Stir in lemon juice, cinnamon, allspice, ginger, cloves, nutmeg, pectin and butter.
  • Bring to a rolling boil over medium-high heat. Add sugar and stir to mix well. Return to a rolling boil, then boil for exactly 1 minute. Remove from heat; skim off foam with a metal spoon.
  • Ladle jam into hot sterilized jars, leaving ¼-inch headspace. Wipe rims clean with a damp cloth; add lids.
  • Process in a boiling-water bath for 10 minutes. Transfer jars to a towel and cool completely. Check for seals and refrigerate any jam that did not seal properly.

4 ½ cups mashed ripe pears
3 tablespoons powdered fruit pectin
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground allspice

¼ cup lemon juice
7 ½ cups white sugar
1 teaspoon butter
8 half-pint canning jars with lids and rings, or as needed

Steps:

  • Mix pears, fruit pectin, cinnamon, cloves, allspice, nutmeg, and lemon juice in a large heavy pot; bring to a boil, stirring constantly. Add sugar all at once, stirring, and bring back to a full rolling boil. Boil for 1 minute. Mix in butter to settle foam.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the pear jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

  • Add honey-pectin or sugar-pectin mixture, stir vigorously 1-2 minutes while cooking to dissolve pectin. Return to boil and remove from heat. Stir in vanilla extract.
  • Ladle jam into sterilized jars leaving 1/4″ headspace. Wipe rims clean and screw on the lids. Process for 10 minutes in water bath canner (add 1 minute for every 1,000 feet above sea level).
