7 medium pears, peeled, cut into 1/2-inch slices (about 5 cups)
1 1/4 cups sugar
1 teaspoon grated lemon peel
3 tablespoons lemon juice
1 frozen pie crust (9 inch)
1/2 cup Gold Medal™ all-purpose flour
1 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoon ground mace
1/3 cup cold butter or margarine

Steps:

  • Heat oven to 350°F. In large bowl, gently toss pears, 3/4 cup of the sugar, the lemon peel and lemon juice. Spoon into frozen pie crust.
  • In medium bowl, mix flour, remaining 1/2 cup sugar, the nutmeg, cinnamon and mace. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like coarse meal. Sprinkle evenly over pears. Place pie on cookie sheet.
  • Bake 1 hour or until pears are tender and topping is lightly browned. Cool on cooling rack about 2 hours.

3 tablespoons all-purpose flour, plus more for dusting
1 1/2 pounds assorted pears (such as Bosc or Bartlett)
1 1/2 pounds assorted apples (such as Gala, Honeycrisp or Golden Delicious)
1/2 cup chopped assorted dried fruit (such as cranberries, apricots and cherries)
1/2 cup chopped assorted dried fruit (such as cranberries, apricots and cherries)
1/2 cup honey
1/4 cup granulated sugar
Finely grated zest and juice of 1 lemon
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon salt
3/4 cup rolled oats
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
6 tablespoons cold unsalted butter, cut into small pieces

Steps:

  • Prepare the crust: Roll out the dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate. Fold the overhanging dough under itself and crimp the edge with a fork or your fingers. Refrigerate until firm, about 30 minutes.
  • Meanwhile, make the filling: Peel and thinly slice the pears and apples and transfer to a large microwave-safe bowl; add the dried fruit, honey, granulated sugar, flour, lemon zest and juice, vanilla, cinnamon and salt and toss to coat. Cover with plastic wrap and microwave until the apples and pears are tender and juicy, 5 to 7 minutes. Refrigerate until cold, 10 to 15 minutes.
  • Preheat the oven to 375 degrees F. Make the topping: Whisk the oats, flour, brown sugar, salt and cinnamon in a medium bowl. Using your fingers, work the butter into the oat mixture until small clumps form. Refrigerate until ready to use.
  • Place the pie crust on a baking sheet. Add the filling, slightly mounding it in the center. Press the crumble topping evenly over the filling. Bake until the topping is browned and the filling is bubbling, about 1 1/2 hours. (Tent with foil if the topping browns too quickly.) Transfer to a rack and let cool completely.

Steps:

  • For filling:
  • Stir first 6 ingredients in large bowl. Add pears and toss to coat.
  • For topping
  • Whisk flour, sugar and cinnamon in medium bowl. Add butter and rub in with fingertips until mixture resembles coarse meal. Mix in nuts.
  • Preheat oven to 375°F. Spoon pear filling into pie crust. Sprinkle topping evenly over filling. Bake pie 15 minutes. Reduce oven temperature to 350°F. Continue baking pie until pears are tender and filling is bubbling thickly, covering edges with foil if crust is browning too quickly, about 1 hour 5 minutes longer. 6 -8 fresh pears, peeled, cored, sliced
3/4 cup sugar
1 dash salt
1 tablespoon cornstarch
1 teaspoon grated fresh lemon rind
1 tablespoon lemon juice
1/4 teaspoon cinnamon
1/4 teaspoon mace
1/2 teaspoon ginger
1/2 cup flour
1/4 cup butter or 1/4 cup margarine, softened
1 (9 inch) unbaked pie shells

Steps:

  • Fill pie shell with sliced pears.
  • Mix together 1/4 cup of the sugar,the salt, cornstarch, lemon rind, and lemon juice and spread over the pears.
  • Mix together remaining sugar, spices and flour and add to butter.
  • Stir with a fork until crumbly and sprinkle over pears.
  • Bake at 450F for 15 minutes, reducing to 350F to bake about 30 minutes more.

9 inches unbaked pie shells
1 cup sour cream
2 -2 1/2 lbs ripe pears
1 large egg
1/2 cup sugar
2 tablespoons flour
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup flour
1/3 cup sugar
3 tablespoons cold butter
1/2 teaspoon cinnamon

Steps:

  • Combine the sour cream, egg, 1/2 c sugar, 2 T flour, and vanilla in a medium sized bowl.
  • Fold in the peeled and sliced pears.
  • Scrape into the pie shell and place in a 375 degree oven for about 40 minutes.
  • While the pie bakes, make the crumble; mix together the flour,sugar and cinnamon, cut in the butter to the size of petite peas.
  • After the pie has baked for about 40 minutes, pull it from the oven and sprinkle the crumble topping on. Put pie back into the oven for about 20 minutes longer.
  • Keep this pie refrigerated, if there are any leftovers.

4 cups sliced pears
2 tablespoons lemon juice
2/3 cup sugar
1 1/2 teaspoons quick-cooking tapioca
1/2 cup flour
1/2 cup brown sugar
1 teaspoon cinnamon

Steps:

  • Prepare pastry for one 9" unbaked pie shell.
  • Combine pears, lemon juice, sugar, and tapioca. Mix all together and turn into pastry-lined pie plate.
  • Prepare topping by combining flour, brown sugar, and cinnamon. Cut in butter until crumbly. Sprinkle crumbs on top of pear mixture.

1 recipe pastry for a 9 inch double crust pie
½ cup white sugar
3 tablespoons all-purpose flour
¼ teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon lemon zest
5 cups peeled and sliced pears
1 tablespoon butter
1 tablespoon lemon juice

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Place a baking sheet on the bottom oven rack.
  • Combine sugar, flour, salt, cinnamon, and lemon zest in mixing bowl. Roll out half the pastry and line a 9-inch pie pan.
  • Arrange pear slices in layers in the pastry-lined pan, sprinkling the sugar mixture over each layer. Dot with butter and sprinkle with lemon juice.
  • Roll out remaining dough for the top crust. Use your finger dipped in a small bowl of water to moisten the rim of the bottom crust. Place top crust over filling, and trim edge using kitchen shears or a sharp paring knife. Fold edge under bottom crust, pressing to seal. Flute edge. Cut slits in top crust to allow steam to escape.

  • In a large bowl, mix the flour with the salt. Cut in the shortening until the mixture resembles coarse meal. Sprinkle on the ice water and mix lightly with a fork. Gently knead the dough until it just comes together. Cut the dough in half and flatten each piece into a disk. Wrap in plastic and refrigerate until firm, about 30 minutes.
  • Preheat the oven to 350°. In a large bowl, stir together the sugar, flour, cinnamon and cloves. Add the pears and toss to coat.
  • On a lightly floured work surface, roll out 1 disk of dough to an 11 1/2-inch round. Fit the dough into a 10-inch aluminum pie pan without stretching. Roll out the second disk of dough to an 11-inch round. Transfer the pear filling to the pie pan and arrange the slices so there are no gaps. Dot the pears with the butter. Cover the pie with the top crust and press all around the edge to seal. Trim any overhang and crimp the edge decoratively.
  • In a bowl, mix the milk, sugar and butter and brush this glaze over the pie. With a small knife, make 5 evenly spaced slits in the top crust.
