BUTTERMILK WAFFLES WITH HOMEMADE STRAWBERRY SAUCE

Steps:
- Beat the egg whites and cream of tartar with a hand mixer until stiff peaks appear.
- In a bowl, whisk together the egg yolks, buttermilk, vanilla and 2 tablespoons melted butter.
- Into a large bowl stir together the flour, brown sugar, salt, baking soda, baking powder and cinnamon.
- Combine with the wet ingredients and mix until incorporated. Fold the whites into the batter, gently.
- Grease the waffle iron with a small amount of melted butter and heat the waffle iron according to the manufacturer's instructions.
- Ladle batter onto the waffle iron and cook until golden brown, about 3 1/2 to 5 minutes. Repeat with the remaining batter.
- For the strawberry sauce:
- In a small pot over medium heat, combine the strawberries, sugar, water, lemon zest, lemon juice and cornstarch. Bring to a simmer and whisk gently until mixture thickens slightly.
- Serve waffles with powdered sugar and strawberry sauce.
WAFFLES WITH VANILLA SAUCE
I like to serve these flavorful waffles when we have company because they add nice color to the table and look so elegant, yet they're so easy to prepare. Everyone raves about the unique rich vanilla sauce served over the warm waffles.

- In a bowl, combine flour, baking powder and salt. In another bowl, beat egg yolks lightly. Add 1-2/3 cups milk and oil; stir into dry ingredients just until moistened. Set aside 1/4 cup batter in a small bowl. Beat egg whites until stiff peaks form; fold into remaining batter. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown. , In a saucepan, heat sugar and remaining milk until scalded. Stir a small amount into reserved batter; return all to pan. Bring to a boil; boil for 5-7 minutes or until thickened. Remove from the heat; add vanilla and mix well (sauce will thicken upon standing). Serve over waffles. Top with berries.

YOGURT WAFFLES
First breakfast after vaca plans weren't spoiled just because the milk was -- I used non-fat vanilla yogurt and ended up w/delicious, crispy on the outside, soft and fluffy on the inside, none left-to-freeze waffles. I am sure any yogurt will work - not just the one I listed and the addition of cinnamon is because it helps to regulate our blood-sugar -- plus the taste just works. I also like that there is no oil except to prep the waffle iron.

Steps:
- Preheat waffle iron.
- In a mixing bowl, whisk together eggs, sugar, salt, vanilla and yogurt.
- Whisk together remaining dry ingredients in a large mixing bowl.
- Add the wet ingredients to the dry and mix together until all dry is wet. Don't overmix here. The batter will be very thick.
- Using a towel, oil the heated waffle iron.
- Load waffle batter into iron and cook until crisp and brown. Remove cooked waffle, re-oil the iron and reload with batter. Repeat until batter is gone.
- Enjoy with butter and syrup or however you usually eat them.

- Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, sugar, baking powder, and salt in a medium bowl; make a well in center of mixture.
- Place strawberries, milk, oil, vanilla, and egg in a blender; process until smooth. Add pureed strawberry mixture to flour mixture, stirring just until moist.
- Coat a waffle iron with cooking spray; preheat. Spoon about 1/4 cup batter per 4-inch waffle onto hot waffle iron; spread batter to edges.
