CLASSIC PEAR CRISP
Pears and crystallized ginger are baked under a crispy golden oat crust.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Grease a 2 quart casserole dish or 9 inch square baking dish.
- In a medium bowl, stir together the oats, brown sugar, 1/2 cup flour, 1 teaspoon crystallized ginger, and cinnamon. Stir in the butter until the mixture is crumbly with pea sized lumps. Set aside.
- In a separate bowl, stir together the white sugar, 2 tablespoons flour and 2 teaspoons of crystallized ginger. Add the sliced pears, and toss to blend. Transfer to the prepared baking dish. Spread with the oat topping.
- Bake for 30 to 35 minutes in the preheated oven, until pears are soft and topping is golden brown. Cool slightly before serving with vanilla ice cream.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
- Spread pears to cover bottom of the baking dish; drizzle with melted butter and maple syrup.
- Stir flour, brown sugar, white sugar, cinnamon, nutmeg, and vanilla extract together in a bowl. Cut softened butter into flour mixture until mixture resembles coarse crumbs, adding more flour if necessary. Sprinkle topping over pears.
- Bake in preheated oven until pears are bubbling and topping is crisp, about 30 minutes.

PEACH CRISP WITH MAPLE CREAM SAUCE

- Begin by making the maple cream sauce. It needs to chill before serving.
- Pour the cream into a heavy saucepan. Add the maple syrup and corn syrup. Cook over a moderate heat, stirring constantly, until the sauce is thickened and reduced by about a third, about 20 minutes. Chill for at least an hour before serving over the warm peach crisp.
- To prepare the peach crisp, preheat the oven to 350 degrees F. Butter a 9-inch square or 8- by 12-inch baking dish.
- Start with the crumb mixture. In a medium bowl, combine the flour, brown sugar, granulated sugar, cinnamon, nutmeg and salt.
- Cut the cold butter into pieces. Add the butter to the bowl and use a fork, pastry cutter or pastry blender to cut into the flour mixture. The mixture should resemble a moist, coarse meal.
- Place the peaches in a bowl, add the lemon zest to the peaches, mix in the lemon juice and maple syrup and gently stir the peaches to combine. Pour the peaches into the prepared baking dish. Top with the crumb mixture, evening out the surface with a fork.
- Cover tightly with foil and bake, about 15 minutes.
- Remove the foil and bake until the topping is crisp and golden brown, about 30 minutes more. If the topping appears underdone, continue baking in 10 minute increments until it's done.
- Spoon the warm crisp onto a plate, and drizzle the chilled maple cream sauce over the top.
PEAR CRISP WITH LEMON SAUCE

- In a large bowl, combine 2 tablespoons flour, sugar and 1/4 teaspoon of lemon peel. Add pears; gently toss to coat. Transfer to a greased 8-in. square baking dish. Combine the oats, brown sugar, cardamon and remaining flour and lemon peel; mix well. Cut in butter until mixture resembles coarse crumbs. Stir in almonds. Sprinkle over pears. Bake at 375 F. for 35-40 minutes or until pears are tender and topping is golden brown. For lemon sauce, combine sugar and corn starch in a saucepan. Gradually stir in water until smooth. Bring to a boil over medium heat; cook and stir for 1 minute or until thickened. Remove from the heat. Stir a small amount of hot mixture into egg yolk; return all to the pan, stirring constantly. Bring to a gentle boil over medium heat. Cook and stir 1 minute longer. Remove from the heat; stir in butter, lemon juice and peel. Serve with warm pear crisp. Yield: 9 servings. - Make lemon sauce ahead of time: Dissolve arrowroot in a little milk; place in a saucepan with rest of milk and cinnamon stick.
- Stir and cook over low heat, stirring, until slightly thickened.
- Stir in lemon peel, lemon juice and 1/4 cup of the honey.
- Remove from heat, remove and discard cinnamon stick, cover and place in refrigerator to chill.
- Preheat oven to 350°F.
- Halve and core pears; place in a glass baking dish.
- In a small saucepan, bring 1/4 cup honey, water and cloves just to boiling point, but do not boil; pour over pears.
- Bake until pears are fork-tender (time for this varies considerably depending on firmness of pears--really hard ones can take as much as an hour).
- Remove and discard whole cloves.
- Serve warm with chilled lemon sauce.
