OLD-FASHIONED BEEF STEW

Old-Fashioned Beef Stew image

The original recipe comes from my Pressured Cook cookbook, however I've made modifications. It can be prepared in a pressure cooker, crock pot or on the stove top. The key is to use good quality beef and cook until it is 'meltingly' tender. Also don't take any shortcuts. . . follow the directions and brown the meat properly, it really does intensify the flavor. If you are planning to freeze a portion of this stew, cook only the amount of potatoes you need for immediate use, they don't freeze well. Passive work time is calculated using a pressure cooker. Additional time needed for crock pot or stove top preparation. UPDATE: Recently made in the crock-pot and instead of putting the potatoes and carrots in with the meat, I tossed them with about a tablespoon of olive oil and sprinkled with thyme and wrapped in aluminum foil; placed on top of the meat in the crock-pot. About an hour before serving, stirred the veggies into the stew.

Yield 4 serving(s)

Number Of Ingredients 16

2 -3 tablespoons vegetable oil
1 1/2 lbs beef, cut into 1 inch pieces well trimmed
2 tablespoons flour
1/2 teaspoon salt
fresh ground pepper
2 garlic cloves, crushed
1 large onion, cut into wedges
3 tablespoons tomato paste
1/3 cup dry red wine (optional)
2 cups beef or 2 cups vegetable broth
1 tablespoon Worcestershire sauce
2 large bay leaves
1 teaspoon dried thyme leaves (to taste)
5 large potatoes, peeled and cut into 1 1/2 inch chunks
4 large carrots, peeled and cut into 2 inch chunks
2 stalks celery, sliced

Steps:

  • To flour mix in salt and pepper.
  • Dredge beef cubes in flour mixture.
  • In large pan add oil and brown beef.
  • Remove beef to pressure cooker (or crock pot).
  • Add additional oil if required and saute onions for 1 minute.
  • Stir in tomato paste and broth to deglaze pan.
  • Add the wine (if using) and cook another 30 seconds.
  • Add Worcestershire sauce, bay leaves and pour over beef.
  • Pressure Cooker:.
  • Lock the lid in place. Over high heat, bring to high pressure.
  • Reduce heat just enough to maintain high pressure and cook for 30 minutes.
  • Allow the pressure to come down naturally (about 15 minutes).
  • Remove the lid and test beef, if not sufficiently tender, return to high pressure for an additional 5 minutes. Again, let the pressure come down naturally.
  • Stir in garlic, thyme, potatoes, celery and place carrots on the top.
  • Lock the lid in place. Over high heat, bring to high pressure. Reduce the heat just enough to maintain high pressure and cook for 5 minutes.
  • Quick-release the pressure.
  • If vegetables are not sufficiently tender, set the lid in place and allow them to steam in the residual heat, another minute or two.
  • If you would like a thicker gravy, mash a few pieces of potato against the side of the cooker and stir into the stew.
  • Crock pot:.
  • Place beef, liquids and remaining ingredients in the crock pot.
  • Cover and cook on low 12 hours or on high 5 to 6 hours or until tender.
  • Serve with fresh biscuits!

BONNIE'S SUNDAY DINNER POT ROAST- HER WAY

BONNIE'S SUNDAY DINNER POT ROAST- HER WAY image

I just threw this recipe together for tonight's dinner after Church. It cooked all day in the slow cooker, and it came out just perfect. It is so tender, and the gravy is just yummy. This is one of those food experiments that works on the first try. I won't change a thing, and I will serve it to the kids the next time they...

Time 6h20m

Number Of Ingredients 9

1 2 1/2 to 3 pound chuck roast
5 medium size red potatoes, unpeeled, scrubbed and cut in half
2 cans cream of chicken soup (do not add water to it)
2 cans mushroom slices, drained
1 mushroom can filled with marsala wine
1 heaping teaspoon of chopped garlic
cracked black pepper
2 tablespoons olive oil for searing meat
salt and pepper the meat to your taste before searing

Steps:

  • 1. Trim the fat from the chuck roast, and pat it dry. Add salt and pepper to your taste. Heat the oil in a dutch oven over medium high heat and add the roast. (I use cast iron) Get a good sear on both sides of the meat.
  • 2. While the meat is searing, combine the following ingredients in a medium size mixing bowl: 2 cans cream of chicken soup, 2 cans of sliced and drained mushrooms. 1 mushroom can of Marsala wine, 1 heaping teaspoon chopped garlic and black cracked pepper. Mix well. Set aside.
  • 3. Cooks Tip: I used a liner for easy clean up. It is great for storing the leftovers. You just lift it out and place it in a container. Refrigerate. The next day, you put it back in the slow cooker to reheat it.
  • 4. Place the seared meat in the bottom of the slow cooker. Add the potatoes. Pour the bowl mixture over the top of the roast. Put on the lid and don't look at it again until dinner time. Cook 2 hours on high, and then 4 to 6 hours on low until it is as tender as you like it. The gravy will turn a lovely golden brown, and there is no need to thicken it.
  • 5. Here is a couple of shots of how it looks! Enjoy!
  • 6. Leftovers are great the next day!

50 CLASSIC RECIPES WE NEED TO BRING BACK - EAT THIS NOT THAT

From eatthis.com
Author Erich Barganier
  • Classic Meatloaf. Even if you have nightmares of cafeteria meatloaf, giving this classic another shot can make you realize why this staple was such a hit.
  • Southern-Style Cornmeal Catfish with Tomato Gravy. Fried fish has always come across tables as a dinner standard, but it gets harder and harder to find fried catfish on the menu at most dinners.
  • Chicken and Dumplings. Whether you grew up in the North or the South, you've likely tried some variant of this classic dish that has stretched far and wide across America.
  • Classic Green Bean Casserole. Everyone remembers their first green bean casserole, likely made with cream of mushroom soup and fried onion straws. Even if you eventually burnt out on this dish as a kid, now is the perfect time to explore the casserole again.
  • Braised Sweetbreads Eugenie. Searching for ingredients off the beaten path always ensures you can find some good throwback recipes. Sweetbreads, a type of organ meat, have slowly crawled back into culinary fashion, so why not experience a blast from the distant past with this rich and scrumptious recipe?
  • Brown Butter Honey-Glazed Carrots. Sometimes, simplicity brings out the best flavors from quality ingredients. This old-fashioned recipe takes that mentality to heart by pairing fresh carrots with a sweet and rich honey butter glaze.
  • Honey-Glazed Ham and Cheddar Muffins. When you imagine an old-fashioned Sunday meal, each table spread probably includes a baked ham and bread offered up for everyone.
  • Hamburg Steaks. You probably haven't thought about Hamburg steaks in quite some time, but there's no reason you shouldn't take a crack at this once-popular staple.
  • Sunday Chili. It's harder to find Sunday Chili on home menus nowadays. This classic not only provides a cumin kick to liven up any night, and one big pot could last for days.
  • Root Beer-Glazed Ham. In the '50s and '60s, home cooks paired novel items in ways you might never have expected. While many of these recipes deserve to have died out, some deserve a second chance.
