Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 10

All-purpose flour, for dusting
1 pound pizza dough, thawed if frozen
4 1/2 tablespoons extra-virgin olive oil
8 ounces ground pork
Kosher salt and freshly ground pepper
2 1/2 teaspoons smoked paprika
1 red bell pepper, chopped
8 ounces shredded mozzarella (about 2 cups)
6 cups mixed greens
1 tablespoon sherry vinegar or red wine vinegar

Steps:

  • Put a baking sheet in the oven and preheat to 450 degrees F. On a lightly floured surface, divide the dough into quarters; cover with a towel.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the pork, 3/4 teaspoon salt and 1/2 teaspoon pepper and cook, breaking up the meat with a wooden spoon, until no longer pink, 3 to 4 minutes. Add 2 teaspoons paprika and cook, stirring, 30 seconds. Stir in the bell pepper and cook until slightly softened, about 2 more minutes. Transfer to a bowl and stir once or twice to cool slightly.
  • Pat and stretch each portion of dough into a rough 8-inch round. Pile the pork mixture and mozzarella on one side of the rounds, leaving a 1/2-inch border, then fold the dough over the filling. Pinch and crimp the edges to seal. Mix 1/2 tablespoon olive oil with the remaining 1/2 teaspoon paprika; brush over the calzones. Cut a 1-inch vent in each.
  • Remove the baking sheet from the oven and add the calzones. Bake until golden brown, 12 to 15 minutes. Meanwhile, toss the greens with the vinegar and the remaining 3 tablespoons olive oil in a bowl and season with salt and pepper. Serve with the calzones.

Flaming Broiled Provolone with Parsley Toast image

Provided by Alex Guarnaschelli

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 7

3 tablespoons extra-virgin olive oil
2 large cloves garlic, minced
Kosher salt
5-6 (inch thick) slices sourdough bread, halved lengthwise and toasted (or grilled)
8 sprigs flat-leaf parsley, finely chopped, stems and all
1 pound Provolone cheese, cut into 1-inch cubes
2 ounces neutral gin (like Bombay Sapphire)

Steps:

  • Preheat oven to 350F.
  • Make the toasts: In a medium bowl, whisk together the olive oil and garlic with a pinch of salt. Spread on top of the toasts and arrange them in a single layer on a baking sheet. Place the tray in the oven and cook until the toast is browned, 5-8 minutes. Remove from the oven, arrange on a platter and top with the parsley.
  • Broil and serve: Arrange the cheese in single layer in a 9-inch baking dish and place in the oven to melt, 5-8 minutes. Turn on the broiler and place the dish under the broiler 2 minutes more. Remove, sprinkle with salt and place on the table next to the toasts. Pour the gin over the cheese and carefully light it until it flames. Watch the flame burn until it runs out and dig in!

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 9

1 1/2 cups shredded roast chicken
1 1/2 cups shredded mozzarella cheese
1 10-ounce package frozen chopped spinach, thawed and squeezed dry
1/2 cup chopped roasted red peppers, drained
Kosher salt and freshly ground pepper
1 pound refrigerated pizza dough, at room temperature
All-purpose flour, for dusting
1 large egg, lightly beaten
Warm marinara sauce, for serving

Steps:

  • Preheat the oven to 450˚. Line a baking sheet with parchment paper. Combine the chicken, mozzarella, spinach, roasted red peppers, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Divide the pizza dough into 4 pieces; keep covered with plastic wrap until ready to use. Working with 1 piece at a time, roll the dough into a ball and dust with flour, then roll into a 7-inch round on a lightly floured surface. Spoon one-quarter of the chicken mixture on one side of the dough round, then fold the dough over the filling and crimp the edges with a fork to seal. Transfer to the prepared baking sheet. Repeat with the remaining dough and filling.
  • Brush the calzones with the beaten egg and make a few slits in the top of each with a paring knife. Bake until the calzones are golden and puffed, about 25 minutes. Let rest 5 minutes. Serve with marinara sauce.

Time 1h13m

Yield 8 servings

Number Of Ingredients 7

2 pieces provolone cheese (about 1 1/2-pounds total)
1/4 cup extra-virgin olive oil
1 tablespoon dried oregano
1/4 teaspoon chili flakes
5 to 6 cloves garlic, minced
1 tablespoon freshly minced parsley leaves
Grey salt and freshly ground black pepper

Steps:

  • Prepare a charcoal or gas grill.
  • Rub the pieces of provolone all over with the olive oil and season with the rest of the ingredients. Let marinate refrigerated for 1 hour. Grill the cheese on the hot grill over moderately-high heat for about 2 minutes per side until grill marks appear and the cheese just begins to soften.

  • Serve hot with crusty bread or grilled bread slices.
