PEAR AND BUTTERSCOTCH CRUMBLE
This, to me, is the perfect fall crumble recipe. As a bonus for making it, you learn how to make your own homemade butterscotch sauce and also should have enough left over to use as a topping for ice cream or rice pudding. Yum!

Steps:
- Start by making the dulce de leche.
- Take a small saucepan and heat together the sugar, butter and cream with a dash of vanilla.
- Stir gently until the sugar dissolves and then boil for three minutes.
- Take off the heat and set aside.
- Now, preheat the oven to 350 F or 180 degrees C.
- Place the pears in an ovenproof dish with the lemon juice, tossing gently to coat.
- Top the pears with the almonds, then spoon over as much dulce de leche, or home-made butterscotch sauce, as you need to cover all the pears and almonds.
- To make the crumble topping, combine the polenta, flour and sugar in a bowl, then rub in 75g of the butter and salt.
- Tip this over the pears and press down lightly.
- Dot the surface with the remaining butter and bake for 35-40 minutes or until golden brown.
- Allow the crumble to stand for about 10 minutes, then serve with ice cream.

PEAR SAUCE
This is a good way to use your ripe or over ripe pears. I use this for my pear bar recipe. It can also be used in preparing low fat baked goods. Make a lot and freeze it while the pears are in season.

- Bring to a boil.
- Cook 10-15 minutes or until pears are tender.
- Puree in blender and store in fridge or freezer.

PEAR GINGER CAKE WITH BUTTERED RUM SAUCE

- Drain pears and reserve 1/3 cup of the syrup. Cut each pear half into 4 pieces.
- Mix brown sugar and 6 tablespoons melted butter and spread in the bottom of a greased 9x13 baking pan. Arrange pear pieces, rounded side up, in rows on top of sugar mixture.
- Mix together cake mix, buttermilk, reserved pear syrup, oil, eggs, ginger, and cinnamon in a large bowl. Mix 1 minute on low speed. Scrape sides of bowl, then mix at medium speed for 3 minutes.
- Pour batter over pears in pan. Bake ar 350 degrees for 45 minutes.
- While cake is baking, boil together 1/2 cup butter, sugar, and water for 1 minute. Add rum. Cool.
- Frost cooled cake with cooled icing.
PORK CHOPS WITH GINGER PEAR SAUCE

Steps:
- Season porkchops with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Add pork and cook until browned and just cooked through, two to three minutes per side. Transfer to a plate and keep warm. Pour off fat from the pan.
- Add vinegar and sugar to the pan and stir to dissolve the sugar. Cook over medium-high heat until the syrup turns dark amber, 10 to 20 seconds. Pour in wine and bring to a simmer while stirring.
- Add broth, pears and ginger to the wine-vinegar sauce bring to a simmer. Cook, uncovered, turning the pears occasionally, for 4 minutes. Add scallions and cook until the pears are tender, about 2 minutes more.
- Mix together the water and cornstarch into a slurry and add to the pan. Stir until the sauce thickens. Reduce heat to low and return the pork and any accumulated juices to the pan; turn to coat with the sauce.
- Serve immediately.
GINGER PEAR SAUCE

- Peel, core, and finely chop fresh pears. In a saucepan simmer fresh pears, nectar, dried pears, sugar, butter, ginger, lemon juice, cinnamon stick, and a pinch of salt until pears are tender, about 25 minutes. Remove pan from heat and stir in vanilla. Discard cinnamon stick.
- Force pear mixture through a food mill or ricer, or in a food processor purée to desired consistency.
GINGER BUTTERSCOTCH PEAR TART
Steps:
- Make the shell:
- In a food processor grind coarse the walnuts with the sugar,add the flour, the salt, and the butter, and blend the mixture until it resembles coarse meal. Transfer the mixture to a bowl, add 3 tablespoons ice water, and toss the mixture until the water is incorporated. Press the dough into the bottom and up the side of a 7 1/2-inch tart pan with a removable fluted rim, crimping the edge decoratively, and prick the bottom with a fork. Chill the shell for 30 minutes, line it with foil, and fill the foil with the rice. Bake the shell in the middle of a preheated 425°F. oven for 7 minutes, remove the rice and foil carefully, and bake the shell for 5 minutes more, or until it is golden. Let the shell cool in the pan on a rack.
- Poach the pears:
- In a saucepan just large enough to hold the pears in one layer combine the wine, the cinnamon stick, and the sugar and bring the liquid to a boil over moderately high heat, stirring until the sugar is dissolved. Add the pears, peeled, and poach them, turning them occasionally, for 15 minutes, or until they are just tender. Let the pears cool in the syrup.
- Make the ginger butterscotch pastry cream:
- In a bowl with an electric mixer beat lightly the egg yolks. Add the brown sugar, a little at a time, beating, beat the mixture until it ribbons when the beaters are lifted, and beat in the flour. Add the milk, scalded, in a stream, whisking, transfer the mixture to a heavy saucepan, and bring it to a boil over moderately low heat, stirring constantly. Boil the mixture, stirring constantly , for 2 minutes. Strain the pastry cream through a fine sieve into a bowl and stir in the butter, the salt, and the gingerroot. Let the pastry cream cool, its surface covered with a buttered round of wax paper, for 1 hour.
- Remove the rim of the tart pan, set the shell on a platter, removing the bottom of the pan, and spread the pastry cream in the shell. Arrange the pears, drained, cut lengthwise into sixths, and cored in a spoke pattern on top of the pastry cream.
PEAR GINGER SOUFFLE
This souffle has a fruit-puree base, which makes it very light and intensely flavored.

- Preheat oven to 400 degrees. Butter dishes well, coat with sugar, and tap out excess. Chill.
- Peel, quarter, and core pears. Cut into 1-inch pieces. Squeeze lemon halves over pieces to prevent discoloring. Place pears and 2 tablespoons sugar in a small saucepan and cook, stirring frequently, over medium heat until they become a chunky sauce, about 10 minutes. Transfer to a food processor, and puree. Return to pan.
- Using a clean garlic press, squeeze juice from ginger into puree; discard pulp. Continue cooking puree over low heat until thick and a spoon drawn through puree leaves a trail, about 15 minutes.
- In a small bowl, dissolve the cornstarch in 2 tablespoons cold water. Stir into the puree, and bring to a boil, stirring constantly. Simmer a few minutes more. Transfer to a large bowl, and beat in egg yolks. Cover with plastic wrap, pressing it onto the surface of the mixture. Keep warm until ready to use.
- In a large bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add remaining 3 tablespoons sugar. Beat until stiff and glossy.
- Spoon 1/3 of the whites into pear base. Add Poire William, if desired, and whisk until smooth. Quickly fold in remaining whites until combined. (Don't worry if there are some streaks.) Fill prepared dishes to about 1/4 inch from the top. Run your thumb around edge of dishes to make a groove. Sprinkle with granulated sugar if desired.
- Bake 10 minutes at 400 degrees, then reduce heat to 375 degrees and continue baking for 10 minutes. Serve immediately.

- Trim fat from porkchops.
- In larg non stick skillet heat oil (med heat).
- Cook pork 3-5min per side.
- Transfer to dish and cover with foil to keep warm.
- Add the lemon juice and the sugar to the pan and stir contantly abd cook until golden.
- Stir in wine and chicken broth.
- Add pears and cook uncovered for 5-7 minutes or until tender.
- Mix cornstarch with 2 tsp water.
- Add salt and pepper to taste.
- Add ginger.
- Return pork chops to skillet and heat through.
- ***I serve this with rice.
