THAI PEANUT SHRIMP, ASPARAGUS AND NOODLES



Thai Peanut Shrimp, Asparagus and Noodles image

I made up this recipe after experimenting with several different recipes from many different sources. I like to serve this with recipe #101790 (Oriental Cucumber Salad) and either potstickers or hot and sour soup. You can also make it with other meats like chicken or pork, or rice instead of noodles. This is one of my DH's favorite meals.

2 quarts water, cold
1/4 cup salt
1/4 cup sugar
1 lb shrimp, shelled and deveined
1/2 cup peanut butter, smooth
1/2 cup hoisin sauce
1/2 cup water
3 -4 tablespoons brown sugar
2 tablespoons sesame oil
2 tablespoons soy sauce
2 tablespoons lime juice
2 tablespoons red wine vinegar
1 teaspoon garlic salt (optional)
1 teaspoon ginger, minced
1 teaspoon garlic, minced
1 teaspoon chili-garlic sauce
1/2 teaspoon hot sauce (I like Cholula)
2 tablespoons cornstarch, mixed with 2 T Water (optional)
1 tablespoon canola oil
1 onion, diced
1 red pepper, diced
2 teaspoons garlic, minced
2 cups asparagus, cut into 1 inch pieces
3 cups noodles, cooked and drained

Steps:

  • Mix water, salt and sugar together with a whisk until salt and sugar are dissolved. Add shrimp and let it sit in the brine for at least 30 minutes. Longer doesn't hurt. Drain shrimp well and pat dry with a paper towel when ready to cook.
  • While shrimp is brining, combine all sauce ingredients except cornstarch and water slurry in a small saucepan. Heat over low heat for 30 minutes. Cornstarch/water slurry can be whisked in if sauce isn't thick enough after heating.
  • Pour canola oil into a large, hot, non-stick skillet over medium high heat. Add onion, red pepper and garlic. Stir-fry for 7 minutes, until veggies are softened. Add asparagus and continue stir-frying for about 5 more minutes. Pour veggies into a large bowl and set aside.
  • Re-heat skillet over medium high heat. Add additional canola oil if desired. Add drained shrimp and stir-fry until they are pink, about 5 - 7 minutes. Add reserved veggies and noodles and stir well. Pour peanut sauce over everything and combine.

1/2 lb whole wheat spaghetti
1 tablespoon canola oil or 1 tablespoon peanut oil
3 -4 garlic cloves
1 medium onion
1 carrot
2 heads baby bok choy
1/3 cup creamy peanut butter
1/3 cup hot water
1/4 cup soy sauce
2 tablespoons rice wine vinegar
2 tablespoons honey or 2 tablespoons agave nectar, for vegan friends
1 tablespoon lime juice or 1 tablespoon lemon juice
1 tablespoon sriracha sauce or 1 teaspoon crushed red pepper flakes

Steps:

  • Prepare peanut sauce by whisking the first 7 ingredients together (or putting in a jar and shaking).
  • Put the pasta on to boil.
  • While pasta is cooking, chop your veggies. I prefer them kind of matchstick or julienned.
  • Heat the oil in a large skillet.
  • Saute onion and garlic. Be careful not to burn them!
  • Add bok choy and carrots to the pan and sauté just until the greens wilt.
  • Drain the pasta and add it to the pan. Toss with the veggies.
  • Pour the peanut sauce over everything and carefully toss.
  • Eat hot or at room temperature.
  • If you want to get fancy, garnish with chopped peanuts, cilantro, or sesame seeds.

1/4 cup low sodium chicken broth
2 tablespoons low sodium soy sauce
1 tablespoon mirin
1 1/2 teaspoons cornstarch dissolved in 1 tablespoon water
2 tablespoons canola oil
2 tablespoons peeled fresh ginger, finely julienned
1 garlic clove, thinly sliced
1/2 teaspoon crushed red pepper flakes
1 large onion, thinly sliced crosswise
1/4 lb shiitake mushroom, steammed and caps thinly sliced
1 head bok choy, thinly sliced crosswise
1 lb medium shrimp, shelled and deveined
0.25 (3 ounce) package instant ramen noodles, crumbled

Steps:

  • In a small bowl, whisk the broth, soy sauce, mirin and cornstarch slurry.
  • Heat a nonstick wok untl very hot (3 minutes).
  • Add canola oil, ginger, garlic and red pepper. Stir fry until fragrant (20 seconds).
  • Add onion and mushroom. Stir fry until lightly browned (3 minutes).
  • Add bok choy and cook until the leaves are wilted and stems are crisp-tender (2 minutes).
  • Add shrimp and stir-fry until pink and curled (nearly cooked through) (3 minutes).
  • Stir the sauce, then stir it into the wok. Cook until slightly thickened (2 minutes).
  • Transfer the shrimp and bok choy mix into a medium serving bowl and garnish with the crispy noodles.

115 g rice noodles (1/2 package)
1 lb pork tenderloin
salt and pepper
1 tablespoon vegetable oil
1 cup green onion, thinly sliced
1 red pepper, thinly sliced
1/3 cup hot water
1/4 cup peanut butter, smooth
1 tablespoon seasoned rice vinegar
1 tablespoon soy sauce
2 garlic cloves, minced
1 teaspoon chili paste
2 tablespoons peanuts, shelled and chopped

Steps:

  • Place rice noodles into a large bowl and pour boiling water over to cover. Let stand for 10 minutes or until softened.
  • Cut tenderloin in half lengthwise, then slice thinly. Season with salt and pepper.
  • Heat oil in a large non-stick skillet over medium-high heat and saute pork until browned, about 4 minutes. Remove to plate. Add green onions and red peppers and saute for about 4 minutes until crisp-tender. Add to plate with pork tenderloin.
  • Whisk together water, peanut butter, vinegar, soy sauce, garlic and chili paste and pour into skillet, bring to a boil. Return pork and vegetables to skillet.
  • Drain noodles and add to skillet. Cook for about 3 minutes or until coated well.
  • Sprinkle with peanuts before serving.
