1 tablespoon jelly (or jam, your choice of flavor)
1 tablespoon butter (or margarine, softened)

Steps:

  • Gather the ingredients.
  • Prepare peanut butter sandwich using desired jelly or jam . Make sure it isn't too runny because the sandwich will be heated and jam could leak out.
  • Heat a frying pan to melt 1 tablespoon of butter. Tilt pan so butter covers pan evenly. This is key to get a perfectly crispy crust on the bread.
  • Butter one side of sandwich. Place buttered-side down in the pan. If possible, place a steak weight or bacon press on sandwich so it cooks evenly. When one side is golden brown, butter other side. Turn sandwich over and place weight back on sandwich. The second side will cook faster because sandwich is already heated.

1/2 cup butter-flavored shortening
1/2 cup butter
1 cup creamy peanut butter
1 cup sugar
1 cup packed brown sugar
3 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup creamy peanut butter
3 cups confectioners sugar
1 teaspoon vanilla extract
5 - 6 TBSP milk

Steps:

  • In a large bowl, cream the butter, shortening, peanut butter and sugars until light and fluffy, about 4 minutes. Beat in eggs and vanilla.
  • Combine the flour, baking soda and salt; add to creamed mixture and mix well.
  • Shape into 1-in. balls and place 2 in. apart on ungreased baking sheets. Flatten to 3/8-in. thickness with fork. Bake at 375° for 7-8 minutes or until golden.
  • Remove to wire racks to cool.
  • For filling, in a large bowl, beat the peanut butter, confectioners' sugar, vanilla and enough milk to achieve spreading consistency. Spread on half of the cookies and top each with another cookie.
