This Peanut Butter Pie has a rich flavor and texture, and stores well in the freezer.

1 sleeve chocolate graham crackers*
1/4 cup sugar
6 tbsp melted butter
8 oz mascarpone cheese (at room temperature)
1 cup peanut butter (creamy or crunchy, up to you)
1 cup confectioner's sugar ((4 ounces by weight))
1 tsp vanilla extract
1.5 cups heavy cream
1/2 cup heavy cream
1 tbsp sugar
chopped peanut butter cups (for garnish (about 6 mini, or 2 regular))

Steps:

  • Preheat oven to 350 degrees F.
  • In a food processor, pulse together the graham crackers and sugar, until ground.
  • Add the melted butter, and pulse until evenly moistened, about 10 times.
  • Press the mixture evenly into a 9" pie plate, pushing the crust about halfway up the sides.
  • Bake for 8-10 minutes, until it looks dry and has lots its sheen, then cool completely on a wire rack.
  • To make the filling, with a hand mixer, beat the mascarpone, peanut butter, confectioner's sugar, and vanilla extract, until fluffy and light, about 2 minutes.
  • In a separate bowl, whip the cream to soft peaks, then gently fold it into the peanut butter mixture in 3 separate installments.
  • Spoon the mixture evenly into the cooled crust, cover with plastic wrap, and chill completely. It will take about 6 hours in the refrigerator, or you can expedite the process by freezing for 2 hours.
  • To serve, whip the 1/2 cup cream and 1 tbsp sugar to soft peaks, and spread over the pie. Garnish with chopped peanut cups, and serve.
  • Note: Make sure the pie is fully chilled before serving, or it will be difficult to slice. Enjoy!

1 cup sugar
3/4 cup heavy cream
Pinch salt
3 cups pretzels
4 whole graham crackers
1/3 cup (5 tablespoons plus 1 teaspoon) butter, melted
1/2 cup sugar
One 8-ounce brick cream cheese, cold
1/3 cup heavy cream, cold
2/3 cup peanut butter

Steps:

  • For the caramel sauce: Preheat the oven to 350 degrees F.
  • Line a 10-inch springform pan with parchment paper and set aside.
  • Add the sugar to a heavy-bottomed saute pan over medium heat and let the sugar melt without stirring. Continue to cook until the sugar turns a deep brown color around the edges, but is still clear in some places, 3 to 4 minutes, then turn off. Stir, making sure all the sugar has melted. Slowly pour in the cream, stirring the entire time, and being careful because the sugar is very hot and will probably splatter. If the caramel sauce seizes up, just return it to the heat and stir until all the lumps dissolve. Stir in the salt and set aside to cool.
  • For the crust: Add the pretzels and graham crackers to a food processor and pulse until ground. Drizzle in the melter butter and pulse to evenly coat. Transfer the pretzel mixture to a bowl and pour in 1/2 cup caramel sauce. Stir to combine and press into the bottom and 1 1/2 inches up the sides of the prepared springform pan. Bake for 10 to 12 minutes. Set aside to cool.
  • For the filling: Whip the sugar and cream cheese in a stand mixer fitted with the paddle attachment until evenly combined. Add the cream and continue to whip until smooth and light. Add the peanut butter and mix until the filling is creamy and well combined. Add the filling evenly to the cooled crust.
  • For the garnish: Whip the heavy cream and sugar in a stand mixer fitted with the whisk attachment until light and fluffy and the cream holds the shape of the whisk. Spoon it evenly over the filling. Refrigerate for 45 to 60 minutes or until ready to serve. Drizzle with the remaining caramel sauce and sprinkle peanuts on top just before serving.

1 pre-made graham cracker pie crust
1 recipe Peanut Butter Sauce, recipe follows
1/4 cup chocolate shell ice-cream topping, such as Magic Shell
1 cup crushed roasted salted peanuts
1/4 cup mini chocolate chips
1/4 cup sweetened condensed milk
1/4 cup creamy peanut butter
1 teaspoon vanilla extract

Steps:

  • Combine the heavy cream, powdered sugar and vanilla extract in the clean, cold bowl of a stand mixer fitted with the whisk attachment. Whip until the mixture holds stiff peaks. Gently transfer the whipped cream to a new bowl. Add the cream cheese to the stand mixer bowl, switch to the paddle attachment and beat on medium speed for 1 minute. Add the peanut butter and beat until light and fluffy about 3 minutes.
  • Gently fold the whipped cream and chopped peanut butter cups into the cream cheese mixture. Pour the filling into the pie crust and place in the fridge to set for 2 to 3 hours.
  • Using a spoon, drizzle the pie in vertical lines with peanut butter sauce. Repeat with the chocolate shell ice-cream topping, also in vertical lines. Sprinkle the peanuts and mini chocolate chips around the perimeter of the pie.
  • Heat the condensed milk, peanut butter and 3 tablespoons water in a small saucepan over medium-low heat until smooth and melted, 5 to 7 minutes. (Thin with a little more water if too thick.) Let cool slightly.

1/2 cup chocolate chips
One 8-ounce package cream cheese, softened
1/2 cup creamy peanut butter
1 cup powdered sugar
1 cup heavy cream
1 teaspoon vanilla extract
One 9-inch graham cracker crust
1/4 cup salted peanuts, roughly chopped

Steps:

  • Heat the milk in a small pot over low heat until warm. Remove from the heat and stir in the chocolate chips until melted and smooth. Set aside to cool slightly; mixture should be thick but have a pourable consistency.
  • In a large bowl using an electric mixer on high, beat together the cream cheese with the peanut butter and powdered sugar. In a separate bowl, beat together the heavy cream with the vanilla until doubled in volume and soft peaks form.
  • Stir one-third of the whipped cream into the peanut butter mixture to lighten it. Fold in the remaining whipped cream until combined.
  • Spread into the graham cracker crust. Pour the melted chocolate over the top of the pie and sprinkle with the chopped peanuts. Place the pie in the freezer to set up, about 1 hour.

Steps:

Steps:

  • 1 (9-inch) baked chocolate cookie pie crust
  • Sauce: Add the cream, brown sugar, corn syrup, cocoa powder, salt, and vanilla extract to a heavy-bottomed saucepan over medium heat. Reduce the heat to a simmer and add the chopped chocolate. Stir continuously until the chocolate is melted and the sauce has thickened, roughly 3 to 4 minutes. Let the sauce cool for 10 minutes before serving.

Filling:
1 cup margarine or butter

  • Heat oven to 450 degrees. Prepare pie crust according to package directions for unfilled one crust pie using a 9 inch pie pan. Bake at 450 for 9-11 minutes or until light golden brown. 1-1/2 cups light corn syrup
1/2 cup sugar
1/2 cup creamy peanut butter

4 large eggs

  • Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate.
