Homemade Chocolate Peanut Butter Ice Cream Recipe image

The best homemade chocolate peanut butter ice cream! An ultra-rich & creamy chocolate peanut butter ice cream base is loaded with peanut butter chunks so there's one in every bite! Better than any ice cream shop and the perfect summer dessert.

2 cups heavy cream
4 TBS unsweetened cocoa powder
4 oz semisweet chocolate, chopped ((2/3cup))
½ cup creamy peanut butter
1 cup whole milk
¾ cup granulated sugar
Pinch sea salt
4 egg yolks
½ tsp pure vanilla extract
½ cup creamy peanut butter
3 TBS powdered sugar

Steps:

  • Line a large baking sheet with wax paper.
  • Mix together powdered sugar and peanut butter (if your peanut butter is solid at room temperature, you may need to warm it slightly in the microwave to be able to add the powdered sugar).
  • Drop ½ tsp portions of the mixture onto the wax paper, with ½" space between.
  • Put in freezer to harden.
  • Add 1 cup cream and cocoa powder to a 2 or 3-quart saucepan. Whisk to combine.
  • Bring mixture to a boil. Boil for 15 seconds whisking constantly.
  • Remove from heat add peanut butter and chocolate and whisk until smooth.
  • Add the additional 1 cup cream. Whisk to combine.
  • Transfer the mixture to a large bowl and place a fine metal strainer over it. Set aside
  • Add milk sugar and salt to the same saucepan you used to make the cream/chocolate mixture, whisk to combine. Warm over medium heat
  • Whisk egg yolks in a medium bowl.
  • Once the milk mixture is slightly warm, add ½ cup of warm milk to the beaten egg yolks and whisk to combine. Add the milk/egg mixture back into the saucepan, whisking during the addition.
  • Stir the mixture constantly with a spatula until the mixture slightly thickens and lightly coats the spatula.
  • Pour the custard through the metal strainer into the other ingredients in the bowl. Stir until combined.
  • Discard any residue left on the strainer.
  • Add vanilla and stir to combine.
  • Chill for at least 3 hours in the refrigerator, or overnight.
  • Once the ice cream mixture is completely chilled, churn it for 30-40 minutes in an ice cream maker until it reaches the consistency of frozen yogurt.
  • Add half of the churned ice cream to a freezer-friendly container.
  • Add half of the frozen peanut butter chunks to the ice cream in the container. Repeat with the second half of the ice cream and peanut butter chunks. Stir lightly to combine.
  • Freeze for at least 6 hours or overnight.
  • Serve!

12 sugar-style ice cream cones with pointed ends
2 1/4 cups semisweet chocolate chips
1 container (1 1/2 quarts) peanut butter cup ice cream
1/4 cup peanut butter
1 cup peanuts, chopped

Steps:

  • Stand each ice cream cone in small glass or cup. In small microwavable bowl, microwave 1/4 cup of the chocolate chips uncovered on High 30 to 60 seconds, stirring once, until chips are softened and can be stirred smooth. Spoon melted chocolate into small resealable food-storage plastic bag; seal bag. Cut off corner of bag; squeeze bag to drizzle chocolate in bottom of each cone.
  • Fill each cone to the top with ice cream. Using small scoop, top each cone with a scoop of ice cream. Freeze until firm, about 30 minutes.
  • In medium microwavable bowl, microwave peanut butter and remaining 2 cups chocolate chips uncovered on High 1 minute; stir until melted. Cool about 10 minutes. Place chopped peanuts in small bowl.
  • Remove ice cream cones from freezer. Working with one at a time, dip top of cone into chocolate-peanut butter mixture. Immediately roll in peanuts. Return cones to glasses; return to freezer until completely set.

1/2 cup semi-sweet chocolate chips
1 1/2 cups heavy cream
2 tablespoons sugar
1/2 cup peanut butter
1/4 cup peanuts, chopped rough cut
waffle ice cream cones (optional)
graham cracker crust (optional)
grated chocolate (optional)
grated coconut (optional)

Steps:

  • Chocolate cream: Place the chips in a bowl. Heat 3/4 cup cream in a small saucepan until edges bubble then pour over chips and let stand 5 minutes. Stir until smooth and refrigerate 10 minutes. Use a mixer or whisk whip the chocolate until fluffy.
  • Peanut butter cream: In medium bowl, whip the rest of the cream into peaks. Add the sugar then fold the whipped cream into the peanut butter.
  • Parfait: Divide ingredients into four juice glasses and top with chocolate cream and the chopped peanuts. Cover with plastic wrap and chill until you serve.
  • Ice cream: Freeze a batch of the peanut butter and the chocolate creams. Swirl together in a bowl and then scoop into cones. Roll in the peanuts.
  • Layer a 8 or 9 inch graham cracker crust with the creams. Refrigerate or freeze until firm and sprinkle with coconut or grated chocolate.

Kraft has introduced, here in Canada, a chocolate peanut butter. I knew I had to try it in an ice cream, and came up with this yummy dessert. But it's not just me who likes it; so far, everyone who has tried it has been impressed.

3/4 cup whole milk
1/2 cup sugar
1 1/2 tablespoons all-purpose flour
1 pinch salt
1 egg, beaten
6 tablespoons chocolate peanut butter
1 1/2 cups light cream
1/2 cup whipping cream (heavy cream)
1 teaspoon vanilla extract

Steps:

  • In a heavy saucepan, over medium heat, whisk together the first four ingredients, milk to salt, and cook, stirring constantly, until thickened. Turn off heat.
  • Using a small ladle or spoon, add about 2 tablespoons of the milk mixture into beaten egg, whisking egg mixture constantly as the hot liquid is added to prevent the egg from clumping up. I do this a dribble at a time.
  • Whisking milk mixture constantly, pour egg mixture back into the pot in a very slow, thin stream. When egg is completely whisked in, turn heat back on, to medium.
  • Whisking constantly, cook egg mixture for just two minutes, then turn off heat and remove pot from burner.
  • Place the chocolate peanut butter in a small bowl and whisk about half the milk mixture in and combine well, then add this mixture back into the pot, combining all well. Scrape into a bowl (it will be thick), cover with plastic wrap, and refrigerate until completely cold (about 3 hours should do it).
  • After mixture is cold, remove from fridge and whisk in the light cream. The peanut butter mixture will be very stiff so it's slow-going at first, but bear with it as it will all come together. Once the peanut butter mixture is completely combined with the light cream, whisk in the heavy cream and the vanilla.
  • Prepare ice cream according to the directions that came with your ice cream maker; I let my Cuisinart ice cream maker run for about 25 minutes and that worked well.
  • Freeze for several hours to harden. This mixture yields slightly less than one quart.

Rich, decadent combination of two great flavors. I have an electric ice cream maker with a removeable, freezeable chamber. This makes enough batter to make 1 1/2 quarts of ice cream. I originally got this recipe after writing to Chef Bob Bowersox at QVC, after I saw him demonstrate this recipe. He very kindly sent me the recipe and I very kindly bought the machine. :) Plan ahead - you need to have your freezer chamber ready to go and you will also need to pre-chill the batter in the fridge for at least 30 minutes prior to making ice cream. If you like your ice cream to be firm enough to scoop, then after freezing in the machine, you will need to put it in your regular freezer for a while to get harder. It is more of soft serve consistency when the machine completes its cycle. "Cook" time is about how long the machine takes to run its cycle.

2 ounces pasteurized liquid egg substitute (such as Egg Beaters)
2 teaspoons real vanilla extract
1 cup granulated sugar
1 cup unsweetened cocoa powder
2 cups heavy cream (no substitutes)
1 cup half-and-half (do not use fat free)

Steps:

  • If you are using an electric ice cream maker with a removeable chamber, make sure your freezing chamber is already frozen according to the manufacturer's directions.
  • Combine peanut butter,egg substitutes,vanilla, sugar,and cocoa powder until very smooth.
  • Mix in cream and half& half and combine well.
  • Put this mixture into a pitcher, cover, and chill in the refrigerator at least 30 minutes or up to 8 hours.
  • When you are ready to make your ice cream, set your freezing chamber into your machine (or follow the instructions on your machine if you have a diffrent type of ice cream maker).
  • Stir the ice cream batter before adding to your machine and freezing according to the directions on your ice cream maker.
  • Once the machine is finished, place ice cream (which may still be a bit soft but should not be runny when done) into an airtight plastic freezer container and let harden to the consistency you prefer.
  • Homemade ice cream does not keep for more than a couple of days, so eat this up soon.

4 tablespoons cocoa powder
1 1/2 cups milk
2 eggs, lightly beaten
2/3 cup sugar
1 cup whipping cream

Steps:

  • Melt chocolate over low heat.
  • Gradually stir in cocoa powder and milk while continuing to heat.
  • Beat sugar into eggs in a separate bowl.
  • Stir hot chocolate/milk mixture into eggs.
  • Add cream and vanilla extract.
  • Cool.
  • Just before adding to ice cream maker, stir a cup of ice cream mixture into peanut butter.
  • Once mixed, stir into rest of ice cream mixture.
  • Freeze in ice cream maker according to manufacturer's instructions.
  • I used all-natural peanut butter (100% ground peanuts).

15 Nutter Butter sandwich cookies
2 ounces white chocolate candy melts
2 ounces white chocolate candy melts, plus
pink food coloring or red food coloring
2 ounces peanut butter chips, plus
1/2-1 ounce semi-sweet chocolate chips
M&M'
multi-color non-pareils
wax paper

Steps:

  • Lay a sheet of wax paper on the counter top.
  • Vanilla Ice Cream: Put 2 oz. white candy melts to a small dish. At 50% power, microwave the candy melts for about a minute. Stir, then microwave in 15-20 second internals. Do not overcook. If you do, add a bit of vegetable shortening and stir.
  • Dip top half of Nutter Butter cookies into the melted candy, then lay on wax paper. Sprinkle with multi-color non-pareils and top with an M&M.
  • Strawberry Ice Cream: Add red/pink food coloring to white candy melts. Repeat dipping/decorating process used above.
  • Chocolate Ice Cream: Put peanut butter chips and semisweet chocolate chips in a small dish. Use just enough semisweet chocolate to get a nice chocolate ice cream color. Microwave at 50% power for 45 seconds, continue in 15-20 second intervals until melted. I like adding a little bit of shortening. Repeat dipping/decorating process used above.
  • Allow to harden and enjoy.
