1 beef rump roast or bottom round roast (3 to 3-1/2 pounds)
2 tablespoons canola oil
4 medium carrots, halved lengthwise and cut into 2-inch pieces
3 medium potatoes, peeled and cut into chunks
2 small onions, sliced
1/2 cup water
6 to 8 tablespoons horseradish sauce
1/4 cup red wine vinegar
1/4 cup Worcestershire sauce
2 garlic cloves, minced
1-1/2 to 2 teaspoons celery salt
3 tablespoons cornstarch
1/3 cup cold water

Steps:

  • In a large skillet, brown roast on all sides in oil over medium-high heat; drain. Place carrots and potatoes in a 5-qt. slow cooker. Top with meat and onions. Combine the water, horseradish sauce, vinegar, Worcestershire sauce, garlic and celery salt; pour over meat. Cover and cook on low until meat and vegetables are tender, about 8 hours., Combine cornstarch and cold water until smooth; stir into slow cooker. Cover and cook on high until gravy is thickened, about 30 minutes.

An easy, comforting meal, with fall-apart tender beef, carrots and potatoes, all in a tangy tomato gravy.

6 medium yellow-fleshed potatoes (peeled and halved)
6-8 carrots (peeled and halved if thick or left whole if thinner)
1 medium onion (peeled and thinly sliced)
1 Tbsp olive oil
Salt and freshly ground pepper
3 lb boneless beef roast (inside or outside round, blade or cross-rib works well)
2 cups tomato sauce (or passata)
1/4 cup brown sugar (packed)
2 Tbsp Worcestershire sauce
2 Tbsp cider vinegar
2-3 fresh thyme sprigs (or 1 tsp dried thyme leaves)
1 tsp salt
Freshly ground pepper
1 Tbsp cornstarch
1 Tbsp water
Fresh parsley (chopped)

Steps:

  • Scatter the prepared potatoes, carrots, and onions in the bottom of a slow cooker.
  • On the stove top, heat oil in a large skillet over medium-high heat. Sear beef roast on both sides until well browned, about 3 minutes per side. Place beef on top of vegetables in slow cooker.
  • In a medium bowl, stir together the tomato sauce, brown sugar, Worcestershire sauce, cider vinegar, salt and pepper. Pour over the roast. Scatter the fresh thyme sprigs over-top.
  • Place cover on slow cooker and cook on low for about 6-8 hours, or until beef is fall-apart tender.
  • Remove roast to a cutting board and cut in to slices. Meanwhile, combine cornstarch with water and stir in to gravy with vegetables and let cook for a few minutes until gravy thickens a bit. Taste gravy and season with additional salt and pepper, as needed. Return meat to slow cooker. Gently stir to coat with gravy. Allow to cook a few minutes to re-warm the meat, then remove all to a large platter or bowl to serve. Garnish with some chopped fresh parsley.

For as long as I can remember, my mother has been fixing the perfect rump roast. It is by far my favorite meal. Served with rice and gravy, I am one happy camper. I love mine rare. Lately I have been fixing one on Sunday, having my Sunday meal and then I have the rest to eat on all week long. Life doesn't get any better. One thing my mom used to always remind me was to take your meat out well before you are going to cook it so it gets to room temperature.

1 (4 lb) rump roast (room temp.)
3 garlic cloves
1 tablespoon salt
1 tablespoon pepper
1 onion
1 cup water

Steps:

  • DO NOT USE A GLASS PAN FOR THIS RECIPE.
  • Pre-Heat the oven to 500 degrees.
  • Prep the roast by making 4-5 slits in the roast and filling the holes with salt, pepper and 1/2 of a clove of Garlic.
  • Now Salt and Pepper the rest of the roast.
  • Put the Roast in the oven and sear for 20 minutes.
  • Then add the water, the chopped onion and reduce the temperature to 275 degrees.
  • Cook for 20 minutes per lb. I like mine rare so that is what you will get if you cook for this period of time.

1 tablespoon canola oil
1 boneless beef chuck roast (4 pounds)
2 medium onions, sliced into 1/2-inch rings
1 cup plus 2 tablespoons water, divided
3/4 cup honey barbecue sauce
1/2 cup red pepper jelly
3 tablespoons hoisin sauce
2 tablespoons cornstarch

Steps:

  • In a large skillet, heat oil over medium heat. Brown roast on all sides. Transfer to a 5-qt. slow cooker; add onions and 1 cup water., In a small bowl, mix barbecue sauce, jelly and hoisin sauce; pour over meat. Cook, covered, on low 7-9 hours or until meat is tender. Remove roast from slow cooker; tent with foil. Let stand 10 minutes before slicing., Meanwhile, skim fat from cooking juices; transfer juices to a small saucepan. Bring to a boil. This recipe couldn't be easier! The "tang" comes from the cranberry sauce (one of the just 5 ingredients used in this recipe).

3 -5 lbs rump roast, trimmed
1 (8 ounce) package onion soup mix
1 (10 1/2 ounce) can jellied cranberry sauce
2 tablespoons butter, softened
2 tablespoons flour

Steps:

  • Sprinkle the onion soup mix in the bottom of the crock pot.
  • Place the rump roast in next.
  • Spoon the cranberry sauce around and over the roast.
  • Cover and cook on low 8 - 12 hours.
  • Remove roast from crock pot and allow to rest while you thicken the gravy.
  • Turn the crock pot up to High.
  • Blend the softened butter and flour into a paste and whisk it into the gravy.
  • Cover and cook on high for about 10 minutes, until thick.
  • Slice the roast into 1/4" thick slices and serve with the gravy.
  • The left-over slices may be frozen in the gravy in plastic freezer bags.

Alcatra ( Portuguese Pot Roast With Wine, Bacon & Garlic) image

This pot roast needs no knives... it's tender and absolutely delicious. "Alcatra" comes from the term "alcatre", the Portuguese word for "rump", indicating that rump roast is preferred there for pot roasts, but I've prepared this with sirloin tip roast as well with fabulous results.

1/4 lb lean bacon, diced
1 tablespoon olive oil
3 1/2 lbs boneless beef rump roast or 3 1/2 lbs sirloin tip roast
2 cups thinly sliced onions
3 cloves garlic, minced
2 bay leaves
12 whole peppercorns
4 whole cloves
3 tablespoons tomato paste
3 cups white wine (cheaper is better)
3/4 teaspoon salt

Steps:

  • In a large heavy Dutch oven, saute the bacon in the olive oil until drippings are rendered and bacon is browned a bit and crisp; transfer bacon to a paper towel-lined plate to drain.
  • In the bacon drippings, brown the beef roast well on all sides over moderately high heat.
  • Transfer to the plate with bacon, then add onions, garlic, bay leaves, peppercorns and cloves to the Dutch oven.
  • Saute about 10 to 15 minutes or until lightly browned.
  • Blend in tomato paste, lower the heat, cover and steam for 20 minutes.
  • Remove and set aside half of the tomato-onion mixture; place the beef roast back into the Dutch oven with the bacon, then spoon remaining tomato-onion mixture on top.
  • Carefully pour the wine and salt around the beef roast and bring to a simmer.
  • Preheat oven to 375 degrees F.
  • Cove and bake in the 375 degree oven for 2 hours; remove and turn beef over in the liquid.
  • Lower oven temperature to 325 degrees F then bake uncovered about 1 hour longer or until meat is falling-apart tender (and it will be!).

OVEN BAG RUMP ROAST

This is one of my adopted recipes. This is suitable for any size roast just adjust the veggies for amount you want to serve. I didn't have new potatoes, I just halved regular Yukon God potatoes. I used an Oven Bag for this and roasted to 140°F and it came out nice and tender.

1/2 cup flour
1 (1 -14 ounce) can tomato sauce
1/2 cup water
1 teaspoon instant beef bouillon powder
2 medium-size onions (peel and quarter)
3 stalks celery (cut in 1" pieces)
1 whole green peppers (chopped) or 1 whole red pepper (chopped)
3 medium-size carrots (peel and quarter)
8 whole new potatoes
1 large oven cooking bag (14"X20")

Steps:

  • NOTE: This recipe is adjustable to all sizes of roasts.
  • Preheat oven to 350°F.
  • Shake flour in bag and place it in 9X13 inch baking pan.
  • Roll top of bag down and add tomato sauce, water, instant bullion powder, salt and pepper taste.
  • Squeeze bag to mix up, being careful not to put hole in it. Place roast in bag and add quartered carrots, onions, celery, potatoes and peppers.
  • Turn bag gently to coat roast and vegetables with sauce.
  • Close bag with tie and place about 6 (1/2") slits in top of bag If you have an electronic thermometer set it for 140°F and insert through one of the slits into roast.
  • Bake 1 3/4 hours to 2 1/4 hours or until thermometer signals ready; remove and let rest about 20 minutes before removing to plate; Snip off strings.
  • Serve with juices spooned over vegetables and roast.

7 tablespoons olive oil, divided
1 ½ tablespoons kosher salt
2 teaspoons Italian seasoning
1 teaspoon red wine vinegar
½ teaspoon ground black pepper
1 pinch garlic salt
1 (2 1/2 pound) rump roast
1 tablespoon salted butter
1 cup vegetable broth
1 large Spanish onion, chopped
1 large bunch fresh parsley, chopped
5 medium carrots, halved
5 stalks celery, cut into large chunks
2 cloves garlic, minced
salt and ground black pepper to taste

Steps:

  • Whisk 1/4 cup wine, 3 tablespoons olive oil, kosher salt, Italian seasoning, vinegar, 1/2 teaspoon black pepper, and garlic salt together in a bowl and pour into a resealable plastic bag. Add rump roast, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours to overnight.
  • Remove roast from the refrigerator. Melt butter in a large skillet over medium-high heat. Sear roast in hot skillet, turning to brown all sides, about 10 minutes.
  • Place roast in a slow cooker with vegetable broth, remaining 1/2 cup red wine, onion, parsley, carrots, celery, remaining 4 tablespoons olive oil, garlic, salt, and pepper. Cover and cook on Low heat until roast is fall-apart tender, 9 to 10 hours. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

This is my favorite way to cook a rump roast and many years ago, our local butcher told me how to fix this. In my opinion, a rump roast is the very best cut for a roast and it has never failed me! I like to sear it first to seal in the juices.

Steps:

  • Preheat oven to 500 degrees.
  • Put rump roast into large roasting pan and sear each side of roast for about 15 minutes until dark brown.
  • Add 1/4 cup of water to pan.
  • Cover with foil, reduce heat to 325 degrees and cook approximately 1-1/2 to 2 hours (depending on the size of your roast), OR until fork goes easily into meat.
  • Remove roast from pan and let it "rest" for about 30 minutes. Meanwhile, make the most wonderful gravy from all of the drippings.

6 lbs moose rump roast
4 tablespoons Worcestershire sauce
vegetable oil
salt and pepper
1 large onion, sliced
1 teaspoon garlic powder
1/2 cup red wine
1 cup water

Steps:

  • Trim off all excess fat and rub roast all over with vegetable oil.
  • Sprinkle on salt, pepper and garlic powder.
  • Slice onion and lay in bottom of roasting pan.
  • Pour two tablespoons of worcestershire over onions.
  • Place roast on onion slices.
  • Pour rest of worcestershire sauce over roast.
  • Add wine and water.
  • Seal roasting pan with aluminum foil and bake at 325 degrees for 3 1/2 to 4 hours, adding water as necessary to keep moist.
  • When roast is done, remove from pan.
  • To make gravy, add 2 cups water to contents of roasting pan.
  • Bring to boil and scrape bottom of pan.
  • Mix 3 tsps corn starch with 1/2 cup water and pour into pan, stirring constantly, until gravy is bubbling.
  • Salt and pepper to taste.

14 1/2 ounces diced tomatoes, undrained
3 -5 lbs boneless beef rump roast
2 slices bacon, chopped
1 garlic clove, finely chopped
1 tablespoon italian seasoning
3 tablespoons cornstarch
1/4 cup water
8 ounces fresh whole mushrooms
1 cup green giant frozen cut green beans, thawed
1/2 cup ripe olives, if desired

Steps:

  • In a 4 - 5 quart slow cooker, mix onion, and tomatoes.
  • If roast comes in netting or is tied, remove netting or strings.
  • Place beef in slow cooker.
  • In small bowl, mix bacon, garlic and Italian seasoning; rub over beef.
  • Cover; cook on Low heat setting 8 - 10 hours.
  • Remove beef from cooker.
  • In small bowl, mix cornstarch and water; stir into tomato mixture.
  • Return beef to cooker.
  • Cut large mushrooms in half. Arrange mushrooms, beans and olives around beef.
  • Increase heat setting to High.
  • Cover; cook for 20 - 30 minutes or until tomato mixute has thickened and vegetables are tender.
  • I served this over egg noodles tossed with butter and garlic powder. Mmmmmm -- .
