1/2 cup butter
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
1 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup oatmeal
8 ounces semi-sweet chocolate chips
3/4 cup powdered sugar
1/2 cup creamy peanut butter
2 1/2 tablespoons milk

Steps:

  • beat butter and peanut butter for 30 seconds. add sugars and beat until fluffy. add remaining ingredients, except chocolate chips, in order given. spread into 9 x 13 pan. bake at 350 degrees for 20 minutes. sprinkle with chocolate chips and let stand for 5 minutes. spread chocolate and cool. prepare icing by beating ingredients together for a drizzling consistency. drizzle over chocolate layer and cut into bars.

1 cup light brown sugar
1/4 cup granulated sugar
3/4 cup creamy peanut butter
2 teaspoons vanilla extract
1 egg
1 1/2 cups all purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups chocolate chips

Steps:

  • Preheat oven to 350 degrees and grease a 13 x 9 pan.
  • Cream butter and both sugars in a stand mixer with the paddle attachment until combined 2-3 minutes.
  • Add in peanut butter and mix until incorporated. (Make sure to scape the sides)
  • Add in vanilla and egg and mix to combine.
  • In a medium bowl combine the flour, baking soda and salt.
  • Slowly add the dry ingredients to the wet ingredients.
  • Fold in the chocolate chips.
  • Pour into prepared pan and bake for 20 minutes or until a toothpick comes out clean.
  • Place pan on a wire rack to cool completely. (Do not cut when they are still warm they will crumble.)

Steps:

  • Preheat oven to 350F. Line an 8-by-8-inch baking pan with aluminum foil, spray with cooking spray; set aside.
  • In a large, microwave-safe bowl melt the butter, about 1 minute on high power.
  • Wait momentarily before adding the egg so you don't scramble it. Add the peanut butter, egg, brown sugar, vanilla, and whisk until smooth.
  • Add the flour, salt, and stir until just combined, don't overmix.
  • Stir in 1 cup chocolate chips.
  • Turn batter out into prepared pan, smoothing the top lightly with a spatula.
  • Sprinkle evenly with 2 tablespoons chocolate chips, smoothly the top lightly with a spatula.
  • Bake for about 20 to 25 minutes, or until done. A toothpick inserted in the center should come out clean, or with a few moist crumbs, but no batter. Allow bars to cool in pan for at least 30 minutes before slicing and serving.

8 ounces cream cheese, softened
1/3 cup sugar
1 egg

  • Make the cookie dough: Preheat oven to 325 degrees. Cream the butter, sugars, and peanut butter until smooth and fluffy. Add the egg and beat until incorporated. In a separate bowl, mix the flour, baking soda, and salt. Slowly add the flour mixture in with the butter and sugar, mixing well after each addition. Stir in the oats and chocolate chips.
  • Make the cheesecake filling: Cream the cream cheese, egg, sugar, and vanilla until smooth.

I love these rich, very sweet, addictive cookies. I adapted this recipe from one I found and loved on allrecipes.com. I have altered it somewhat to suit my tastes and my preferred baking techniques but this is based on the recipe known there as Aunt Cora's World's Best Cookies. Cook time is per batch, cooking one sheet at a time.

1 cup sweet unsalted butter, at room temperature
1 cup sweet creamy peanut butter (do not use reduced fat versions - I use Jiff or Peter Pan brands)
1 cup granulated sugar
1 cup brown sugar or 1 cup light muscovado sugar, packed
2 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 325 degrees F.
  • Have ready at least 2 baking sheets lined with parchment paper.
  • Cream butter until smooth.
  • Add peanut butter and both sugars and beat until combined well.
  • Add egg and beat well.
  • Stir in flour and baking soda gradually until well combined.
  • Stir in chocolate chips by hand.
  • Using a meatball scooper or a spoon, scoop out small portions of dough and drop onto parchment lined cookie sheets, leaving 2" gap between each cookie.
  • Bake for about 15 minutes or until cookies are just firm around the edges- don't overbake- if you wait until they are brown on top, they will be too hard.
  • Slide parchment sheet, cookies and all, carefully off pan and onto your counter, set a new piece of parchment paper onto your baking sheet and repeat until all dough is baked.
  • Meanwhile, as the next batch bakes, remove baked cookies from the parchment and let cool completely on wire racks.
  • Wipe off the crumbs from the old sheet of parchment and you can reuse it for your next batch.
  • These will keep about 3 days stored in a cookie tin (for crisp cookies) or an airtight plastic container (for softer cookies).

2/3 cup creamy peanut butter

Steps:

  • Position a rack in the middle of the oven and preheat the oven to 350 degrees F. Line a 13by-9-inch baking pan with foil, letting the excess hang over the edges of the pan by about 1 inch (this will help you lift the bar easily from the pan in one piece). Spray the pan with cooking spray.
  • Mix the flour, baking soda and salt in a medium bowl. In a large bowl, whisk the melted butter and sugars until combined. Use a whisk or a rubber spatula to mix in the egg, egg yolk, peanut butter and vanilla until smooth. 3/4 cup brown sugar (light or dark)
3/4 cup white sugar
1 cup smooth peanut butter* (do not use homemade or natural)
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chocolate chips*
3/4 cup peanut butter chips* (or replace the peanut butter chips with more chocolate chips)

Steps:

  • Preheat the oven to 350F degrees.
  • Lightly spray a 9x13 inch (23x28 cm) pan non-stick cooking spray and then with parchment paper, leaving an overhang around the edges. Lightly greasing the pan first stops the parchment from sliding around.
  • In a large bowl beat together the butter, brown sugar and white sugar until no lumps remain.
  • Beat in the peanut butter until smooth. Then mix in the eggs and vanilla extract.
  • Turn the mixer down to low speed and mix in the flour, baking powder and salt. Turn of the mixer and scrape down the sides of the bowl as needed.
  • Stir in the chocolate chips and peanut butter chips.
  • Spoon the batter into the prepared pan and smooth the top.
  • Place in the preheated oven in the middle rack and bake for 30 minutes, or until an inserted toothpick comes out clean or with a few crumbs. It may take anywhere between 25-35 minutes, depending on your oven.
  • Remove from the oven and place the pan on a wire rack to cool, keeping the bars in the pan. Cool for at least 45 minutes, or cool the pan is room temperature for clean cuts (what's pictured).
  • To slice the bars, lift them out of the pan using the parchment paper overhang. Place on a cutting board and slice. Store cooled bars in an airtight container for up to 4 days at room temperature.

These gooey chocolate chip peanut butter bars are a super popular party dessert!

1/4 cup applesauce, (or yogurt such as coconutmilk yogurt)
1 cup peanut butter OR allergy-friendly alternative - nut-free recipe here
1 tsp pure vanilla extract
1 1/2 tsp baking soda
1/8 tsp salt
1/4 cup plus 2 tbsp flour - you can use spelt, (white, sorghum, oat, almond, even or buckwheat (50g))
2/3 cup granulated sugar of choice or xylitol
1/4 cup chocolate chips, (optional)
up to 2 tbsp milk of choice, (only if needed)

Steps:

  • Preheat oven to 350 F. Grease an 8-inch pan, or line with parchment. Gently heat nut butter if not already stir-able, then stir in the applesauce and vanilla extract. In a separate bowl, stir baking soda, salt, flour, sugar, and chocolate chips. Pour the dry ingredients into the wet and keep stirring-it will seem very dry at first, so you'll need to break up the nut butter and stop occasionally to scrape it off your spoon. If needed, slowly add up to 2 tbsp milk of choice as you stir. Don't add more milk; it will eventually get gooey like cookie dough. Transfer the batter to the prepared pan. Smooth down evenly. (I press a second sheet of parchment on top to smooth, then remove this sheet.) Press some chocolate chips into the top if desired. Bake 10 minutes. When you take the peanut butter bars out, the top will look set but they will still be very undercooked underneath. This is okay! Leave them to cool for at least 20 minutes, during which time they will firm up. (They also firm up even more overnight.)View Nutrition Facts
