PEANUT BUTTER BROWNIE BARS
These Peanut Butter Brownie Bars are so delicious and easy to make! Fudgy brownies and peanut butter - two of my favorite things combine to make this treat irresistible.

- Preheat the oven to 350°F (180°C). Grease a 8x8-inch pan and line it with parchment paper, leaving an overhang on the sides to lift the finished bars out. Set aside.
- Place butter and chocolate in a heatproof bowl over a saucepan of simmering water (don't let the bowl touch the water). Stir until melted then remove from heat.
- Quickly stir in sugar, flour, cocoa powder, eggs, vanilla extract and salt until just combined. Pour batter into prepared pan.
- Bake for 30 minutes or until a skewer inserted in the center comes out with only with a few moist crumbs attached. Set aside to cool completely, about 1 hour.
- In the bowl of a stand mixer fitted with the paddle attachment, beat cream cheese, peanut butter, powdered sugar and vanilla together on medium speed until smooth and creamy. Spread evenly onto crust. Set aside.
- Place butter and chocolate in a heatproof bowl over a saucepan of simmering water (don't let the bowl touch the water). Stir until melted and smooth. Spread evenly over peanut butter filling. Refrigerate until set, for about 2 hours.
- Use the parchment paper to lift the bars from the pan and cut into small pieces. Store bars covered in the refrigerator.

- Set aside 50g each of the peanut butter and chocolate. Heat oven to 180C/160C fan/gas 4 and line a 20cm square baking tin with baking parchment. Gently melt remaining peanut butter, chocolate and all the sugar in a pan, stirring occasionally, until the sugar has just about melted. Transfer mix into a bowl to cool down slightly. Turn off heat and use a wooden spoon to beat in the eggs one by one. Stir in the flour and scrape into the tin.
- Melt reserved peanut butter in the microwave on High for 45 secs, or in a pan, until runny, then drizzle over the brownie. Bake for 20-25 mins until it has a crust, but the middle still seems slightly uncooked.
- Melt reserved chocolate, drizzle over the brownie, then cool in the tin before cutting into squares.

- Prepare the brownies: Heat the oven to 350 degrees. Coat a 9-by-13-inch pan lightly with cooking spray and line it with parchment paper, leaving a 2-inch overhang on the two long sides.

- Preheat oven to 350 degrees F.
- Grease the bottom of a 9" x 13" baking dish.
- Prepare and bake the brownies according to box directions.

This is an adaptation of a "Brownie Goody Bar" recipe I found on the back of a Better Crocker brownie box a few years ago. We also call them Scotcharoo Brownies, because they have a butterscotch, peanut butter, rice crispy layer on top of a fuggy brownie. This is my family's favorite sweet treat! They are sooo good. I usually wrap them individually in suran wrap and store in the refrigerator so that they do not all get eaten at once. This slows the guys down a little.

- For the brownies: Preheat the oven to 350 degrees F. Position a rack in the lower third of the oven.
- Melt the chocolate and then pour it in a large bowl. Stir in the butter and the superfine and Demerara sugars, adding them in stages and beating each time with a wooden spoon until well mixed. - Bake until the center doesn't jiggle when the pan is shaken and the coconut is golden brown, 1 hour 10 minutes to 1 hour 20 minutes. (A knife inserted in the middle will still come out wet, because the brownie layer is super fudgy. The jiggle cue is the key to determining doneness.)
- Transfer the pan to a rack, and let the bar mixture cool completely, preferably overnight. Lift it out of the pan, and peel off the foil. Trim the bar mixture to make neat edges, and cut into very small squares, about the size of fudge.
