APPLE PEANUT BUTTER OATMEAL COOKIES
Great for breakfast! Three cookies and a glass of milk will fill you up. Please refrigerate them cuz they have chopped apple in them.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Beat eggs, applesauce, peanut butter, brown sugar, and vanilla extract in a bowl until smooth.
- Combine oats, all-purpose flour, flax seed meal, whole wheat flour, baking soda, and cinnamon in another bowl. Stir egg mixture into oat mixture and add apples; mix until evenly blended.
- Roll dough into golf ball-sized balls and place 2 inches apart onto baking sheets.
- Bake in preheated oven until cookies are golden, about 12 minutes.

I was out of eggs so I couldn't make my usual gluten free PB cookies. So I experimented and came up with this. Its not for everyone, I will admit. Its just an okay cookie. I'm posting it because I want to know the calorie count of it. :)

Steps:
- Preheat oven to 325°F.
- Mix everything together and drop tablespoonfuls onto a greased baking sheet, flatten.
- Place in preheated oven for 20 minutes. The insides will be very moist.
APPLESAUCE AND PEANUT BUTTER SPREAD OR DIP
We use this spread on bagels, toast, tortilla roll ups and for sandwiches. Since applesauces / apple butter and peanut butter vary by brands you'll have to adjust for the differences regionally. This recipe is presented as a spread, though you can adjust the amounts and use it as a dip.
