These bars are a sweeter, gooey-er, more lunchbox-friendly version of the classic sandwich. They'll hold up much better and much longer-without the risk of soggy bread and unwanted crusts.

2 sticks (16 tablespoons) salted butter, melted and slightly cooled, plus more for greasing
2 1/4 cups all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
1 cup finely chopped salted peanuts
1 cup firmly-packed dark brown sugar
1/2 cup granulated sugar
1 1/2 cups crunchy peanut butter
2 large eggs, lightly beaten
2 teaspoons vanilla extract
1 cup grape jam or chunky preserves

Steps:

  • Preheat the oven to 350 degrees F. Cut a piece of foil 9 by 20-inches. Butter the corners and sides of a 9-by-13-inch baking pan. Line the pan with the foil so that the excess hangs over at each of the short sides of the pan.
  • Whisk the flour in a medium bowl with the baking powder, baking soda and salt. Whisk in 1/2 cup peanuts.
  • Put the melted butter in a large bowl and use a rubber spatula to stir in the sugars. Stir vigorously, mashing the brown sugar lumps with the spatula, so that the mixture is well combined and creamy. Using the rubber spatula, stir in the peanut butter, again making sure the mixture is well combined. Stir in the eggs and vanilla. Fold in the flour mixture until just combined.
  • Scrape the batter into the prepared pan. Press the back of a spoon or a curved rubber spatula into the batter to make little wells all over the batter, making sure not to push down to the bottom of the pan. Spoon the jam into the wells, making sure the jam is distributed evenly across the pan. Use a knife to pull the jam through the peanut butter mixture-it won't exactly ribbon, you will end up with some chunks of jam throughout. Sprinkle the remaining 1/2 cup chopped peanuts over the top.
  • Bake until a toothpick inserted in the center of a non-jammy spot comes out clean, about 35 minutes. Cool completely on a rack, about 1 hour.
  • When the bar has cooled completely, place a lightweight cutting board or a baking rack over the top of the pan. Flip and set on the counter. Gently pull the pan from the foil and the foil from the pan to remove. Gently peel the foil off the bar. Place another lightweight cutting board on top, and flip the bar right-side-up. For easier slicing, wrap with plastic wrap, and let sit at room temperature overnight. Cut into forty eight 1 1/2-inch squares.

1/2 cup plus 1 tablespoon sugar, plus additional for topping
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup Jif® Creamy Peanut Butter
1/3 stick Crisco® Butter Shortening Sticks or 1/3 cup Crisco® Butter Shortening
3 tbsps. milk
1 large egg yolk
1 tsp. vanilla extract
Smucker's® Concord Grape Jelly

Steps:

  • COMBINE flour, 1/2 cup plus 1 tablespoon sugar, baking soda and salt in large bowl; cut in peanut butter and shortening, using pastry blender or 2 knives until mixture resembles coarse meal.
  • COMBINE milk, egg yolk and vanilla extract in small bowl; beat with fork until blended. Add to flour mixture. Transfer mixture to an electric mixer; beat at low speed until well blended. Divide dough in half. Wrap with plastic wrap. Refrigerate at least 1 hour.
  • HEAT oven to 350 degrees F.
  • ROLL each half of dough between sheets of plastic wrap to 1/8-inch thickness. Cut with 2 1/2-inch heart-shaped cookie cutter. Place half the cut-outs 1 inch apart on ungreased baking sheets. Place about 1/2 measuring teaspoon jelly in center of each. Top with remaining cutouts. Press edges with fork. Pierce top several times with toothpick. Sprinkle tops of cookies lightly with sugar.
  • Bake 10 to 11 minutes or until golden brown. Sprinkle again with sugar. Cool 2 minutes on baking sheets; transfer to cooling racks to cool completely.

Steps:

  • COMBINE cream cheese and preserves in small bowl until well blended.
  • SPREAD tortillas with peanut butter to within 1/2-inch of edges. Top peanut butter with cream cheese mixture, to within 1/2-inch of edges. Carefully roll up tortillas.
  • WRAP each rolled tortilla securely in plastic wrap. Refrigerate for several hours or overnight. To serve, remove from refrigerator and unwrap. Slice each tortilla into 4 to 8 angled slices.

12 slices cinnamon-raisin bread, lightly toasted

  • Spread peanut butter over each of 6 bread slices. Spread cream cheese, then jelly, over remaining 6 bread slices. Top with peanut butter bread slices. Cut each sandwich into 4 triangles.

A fruit wrap infused with all the great flavor of a PB&J sandwich. A favorite of mine that I made to have as a quick lunch in college. I'm thinking of trying other fruits like kiwi or blackberries in place of strawberries to see if they're just as great as this combination. Or if you're feeling more adventurous, you could try changing the type of jam.

1 Sandwich wrap
2 -4 fresh strawberries
1 banana
1 tablespoon creamy peanut butter
1 tablespoon strawberry jam
granola cereal (optional)

Steps:

  • Lay out the wrap and all the ingredients.
  • Spread the peanut butter as the first layer on the wrap, the thickness depending on your preference. Leave about a centimeter or two around the outside edges not covered.
  • Next spread the jelly on top, leaving spaces to place the strawberries.
  • Clean and slice the strawberries and place them in the gaps of jelly.
  • Sprinkle the granola over the PB&J layers on the wrap.
  • Peel the banana and place it whole near one edge of the wrap.
  • Roll the wrap up tightly around the banana and enjoy!
