Steps:
- Add the amaretto, peach puree, peach schnapps, bourbon and bitters to a cocktail shaker filled with ice, and shake vigorously to blend. Pour into a Collins glass filled with ice and enjoy!

- In a large pitcher, stir together the nectars, seltzer, vodka and schnapps, if using. Pour over ice-filled glasses and garnish with slices of peach or pear if desired.

- Combine the pear nectar, vodka and lemon juice in a cocktail shaker with ice. Shake well until cold, then strain into a champagne flute or coupe.

PEPPERY PEAR COCKTAIL
Steps:
- Put the Honey Simple Syrup, lemon juice and peppercorns in a cocktail tin and muddle. Add the pear brandy, pear puree and large ice, shake vigorously and double-strain into a cocktail glass. Garnish with ground pink peppercorns and serve.
- Combine the honey and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the honey dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.
