FLUFFY STRAWBERRY-LEMON CAKE
This Fluffy Strawberry-Lemon Cake recipe starts with an angel food cake-and ends with a strawberry-topped dessert they'll be talking about for ages!

Steps:
- Place cake on serving plate. Cut 3/4-inch-thick slice off top of cake; set slice aside. Carefully hollow out center of cake, leaving 1-inch-thick shell on bottom and sides. Reserve removed cake for snacking or other use.
- Beat pudding mix and milk with whisk 2 min. Stir in lemon zest. Spoon 1/2 cup pudding into medium bowl; reserve for later use.
- Spoon chopped strawberries into cake shell; spoon remaining pudding over strawberries. Replace top of cake.
- Add COOL WHIP to reserved pudding; stir with whisk until blended. Spread onto top and side of cake.
- Refrigerate 1 hr.
- Garnish cake with strawberry halves just before serving.

GRANDMA'S STRAWBERRY OR LEMON FLUFF
Jello and fruit based mousse dessert highly favored by children and adults. Summer Saturdays this dessert was always in the fridge during my childhood. With 5 children my mother had to watch her food budget and still fill us all up. Posting here to keep safe and offer a dessert that is a mouthful of creamy delight and brings back summer memories. Use 1/4 cup lemon juice if lemon is desired or 1 10oz container of frozen drained strawberries with juice for strawberry.

Steps:
- Chill can of evaporated milk for 3 to 4 hours. Must be icy cold.
- Dissolve jello in hot water and chill until partially set.
- Whip jello until light and fluffy while adding either lemon juice or strawberry juice.
- Whip evaporated milk until firmly mounded adding sugar slowly.
- Fold whipped milk into jello mixture; add drained strawberries if using and turn out into a 13 X 9 cake pan and return to fridge for at least 2 hours while it continues to set.
- Crust;.
- Add melted butter to graham cracker crumbs and line sides and bottom of cake pan. Reserve 1/4 cup to top dessert after frosting with whipped cream. Note; if you feel creative, this recipe can be adapted to other flavors and fruit.

- In a small bowl, stir together gelatin and 1 cup boiling water for 2 minutes.
- Add 1/2 cup cold water and the yogurt.
- Cover and chill for 10 minutes.
- Beat until frothy and fold in thawed whipped topping.
- Spoon lemon mixture into four 4 ounce ramekins with parchment paper collars.
- Chill for about an hour or two, remove collars before serving.

FROZEN STRAWBERRY FLUFF
This is my great grandmother's recipe, and it is addicting. It takes a lot of time, but it's totally worth it. It's the perfect dessert for summer entertaining.

Steps:
- Combine flour, butter, brown sugar and nuts.
- Press flat on a large cookie sheet and bake at 375 degrees for 15 minutes.
- Crumble mixture when cooled and set aside.
- Beat egg whites, sugar, lemon juice, vanilla, and strawberries in a very large bowl for 20 minutes.
- Fold in cool whip.
- Sprinkle half of the crumb mixture on the bottom of a 9x13 pan.
- Pour fluff mixture over the crumb and sprinkle fluff with the remaining crumb.
- Freeze for 2 hours.

LEMON FLUFF
This is a lemony tart and sweet dessert. Looks pretty in parfait glasses with raspberries and whipped cream. Cooking time is cooling time. Original recipe called for whipping egg whites until stiff and folding into cooled lemon mixture, but I have eliminated that step for safetys sake. It doesn't really alter the flavor at all, just the texture. Now I freeze the egg whites and save them for a meringe or Angel Food cake.

Steps:
- Mix spenda and cornstarch with a pinch of salt in a medium saucepan.
- Add water and cook over medium heat, stirring with a whisk, until thick.
- Beat egg yoks in a small bowl and add some of the sugar mixture a tbl at a time and then pour all back into saucepan, stirring constantly. Bring to a boil and then remove from heat.
- Add butter, zest and lemon juice.
- Cool completely.
- Fold in 1/2 container of Cool Whip.or whipped cream.
- Pour into serving dishes and serve with berries and top with more whipped cream or Cool Whip.

STRAWBERRY FLUFF
Once you make this once you will keep making it over and over!! This recipe was passed down from my grandma to my mother then to me! You all know you cant go wrong with grandmas recipes!! Very simple and you family and friends will love it... It is not one of those overwhelming rich deserts that you cant eat much of....very light and fluffy a sure hit!! Something to remember.....is save about 4 T of the crust to sprinkle on top. I have also substituted strawberry jello and yogurt for orange, blueberry, lemon.....etc!! Enjoy!!

Steps:
- Mix all crust ingredients together and press into a 13'' x 9'' pan. I use a food processor to crumb my gram crackers.
- Then mix your crust layer until it is the consistency of frosting and spread it over your crust. Put in refrigerator until you are ready for topping.
- In a big bowl have your Cool Whip waiting to add jello mixture to. Be sure you have the extra 1 C of Cool Whip waiting on the side. Then boil 1/2 C water and add your jello -- mix well with fork -- then add yogurt. Add that mixture to your Cool Whip -- FOLD with spoon or rubber spatula (DO NOT USE BLENDER IT WILL NOT SET UP! LEARNED THAT FROM EXPERIENCE)! After that is mixed well and there is no residue at the bottom add on top of your crust layer.
- Now put that in the refrigerator for 1 hours Add final cup of Kool Whip to the top of strawberry mixture. The add your extra crust crumbs on top of that! Your done, enjoy!

LEMON STRAWBERRY FLUFF
This fast and VERY EASY dessert was created one busy evening when I invited some friends over for dinner at the spur of the moment and did not have time to prepare much of a dessert for after the meal. I am glad I did not have time because this recipe was a big hit that night! It literally goes together in 2 minutes or less. The strawberries and whipped topping can be thawed in the microwave (use defrost setting in 15 sec increments if doing this way--just make sure the whipped topping does not get runny) if you are truly rushed for time. This would make a great dessert to take to your next potluck.
