PEACHES " FOSTER" WITH ICE CREAM
This is a variation of the classic New Orleans dessert Bananas Foster. You can use any Ice cream, Premium vanilla or butter pecan ice cream is suggested. Peaches can be made 2 hours ahead and reheated to serve over ice cream.

Steps:
- Have ready a large bowl of ice and cold water; Bring a 6-quart pot three-fourths full of water to a boil, then gently drop peaches gently into water and cook 15 minutes, Transfer with slotted spoon to ice water and cool completely to stop cooking.
- Remove skin with a paring knife and cut peaches into 1/2-inch thick wedges, discarding pits.
- Melt butter in a 10-to 12-inch heavy skillet over moderate heat, then stir in brown sugar, rum, cinnamon, and salt until smooth.
- Add peaches and simmer, stirring and turning peaches over occasionally, until tender, 3 to 5 minutes.
- Cool until warm and serve over scoops of ice cream. Garnish with toasted pecans.

SOUR CREAM WAFFLES WITH FRESH PEACHES AND TOASTED PECAN PRALINE SAUCE

- For the sauce: In a small saucepan over medium heat, combine the muscovado, butter and salt. Cook for 5 minutes, stirring constantly. Whisk in the cream and cook for an additional minute, continuing to whisk. Remove from heat and stir in the pecans and peaches. Keep warm over a double boiler.
- For the waffles: Whisk together the flour, baking powder, baking soda, salt and cardamom and in a large bowl. Whisk together the milk, sour cream, butter, cane sugar, vanilla and eggs in a medium bowl. Add the wet ingredients to the dry and whisk until just combined. Let rest for 10 minutes.
- Preheat a waffle iron and lightly spray with nonstick spray or brush with butter. Add about 1/2 cup of the batter per waffle. Close the lid and wait until the steam has stopped emerging from the cracks of the iron, about 4 minutes.
- Serve the waffles with the toasted pecan praline sauce, dust with confectioner's sugar and garnish with a sprig of mint.

- In a large skillet, melt butter over medium heat.
- Add sugar, cinnamon and nutmeg, stir and cook 1 minute.
- Remove pan from heat, pour in rum and schnapps and ignite.
- Place back on burner over medium high heat until flames die out.
- Add peach slices, toss gently and cook 1 minute.
- Remove from heat and let cool 5 minutes.
- In the meantime, scoop ice cream into 4 bowls then spoon peaches and sauce over top.

PEACH AND BUTTER PECAN ICE CREAM ICEBOX CAKE

- Line a 9x5" loaf pan with plastic wrap, leaving a few inches of overhang on all sides. Chill pan until ready to use. Toast pecans in a dry small skillet over medium heat, tossing occasionally, until fragrant and slightly darkened, 5-8 minutes. Let cool, then coarsely chop; set aside.
- Using an electric mixer on medium-high speed, beat cream and powdered sugar in a large bowl until stiff peaks form, about 3 minutes. Place jam in a medium bowl and whisk to loosen, then gently mix in half of the whipped cream. Mix vanilla and salt into plain whipped cream.
- Scoop half of vanilla whipped cream into prepared loaf pan and spread into an even layer. Arrange a layer of crackers on top, breaking or cutting to fit as needed. Add half of peach whipped cream, smooth into an even layer, and top with another layer of crackers. Dollop ice cream across top and smooth into an even layer. Add a third layer of crackers, followed by remaining peach whipped cream. Repeat with a fourth layer of crackers and finally spread remaining vanilla whipped cream over (don't worry if it's a little higher than edges of pan). Scatter reserved pecans on top. Cover with plastic overhang and freeze until set, at least 6 hours.
- To serve, using plastic overhang, unmold cake (if it's hesitant to come out, run the sides of the pan under warm water for a few seconds to loosen) and cut into slices. Do ahead: Cake can be made 2 days ahead. Keep frozen.
CANE SYRUP PECAN ICE CREAM
It's really worth seeking out the cane syrup for this recipe - it makes for a much more complex-flavored ice cream. Look for cane syrup that is labeled "100 percent pure;" some brands are cut with corn syrup. Cane syrup is available at some southern supermarkets and by mail order for Steen's (800-725-1654). - Whisk together cane syrup, sugar, cornstarch, and a pinch of salt in a large bowl, then add eggs, whisking until combined. Bring milk and cream just to a boil in a 4-quart heavy saucepan over moderately high heat, stirring occasionally, then add egg mixture in a stream, whisking constantly. Transfer custard to saucepan.
- Cook custard over moderately low heat, stirring constantly with a wooden spoon, until thick enough to coat back of spoon and registers 170°F on thermometer, 5 to 8 minutes (custard may look slightly curdled; do not let boil).
- Immediately pour custard through a fine-mesh sieve into a bowl, then stir in vanilla and cool, stirring occasionally. Chill custard, its surface covered with wax paper, until cold, at least 3 hours.
- Freeze half of custard in ice cream maker until almost firm, then stir together ice cream and half of pecans in a large bowl. Transfer to an airtight container and put in freezer to harden. Repeat with remaining custard and pecans.
