"I make this sweet chunky syrup on Saturday mornings when my husband and I have extra time," says Kristina Dalton of Coker, Alabama. "You can substitute fresh or canned peaches," she notes.

Number Of Ingredients 6

1 package (20 ounces) frozen unsweetened peach slices, thawed and chopped
2 cups water
1/2 to 2/3 cup confectioners' sugar
1/8 teaspoon ground cinnamon
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • In a large saucepan, combine peaches, water, confectioners' sugar and cinnamon. Bring to a boil. Reduce heat; simmer, uncovered, 20 minutes. , Combine cornstarch and cold water until smooth; gradually add to peach mixture. Bring to a boil; cook and stir until thickened, 1-2 minutes.

2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 1/2 cups sliced peaches, chopped into 1/4 inch pieces
1/2 teaspoon vanilla
1/2 teaspoon lemon juice

Steps:

  • In a large metal or glass bowl, cream the butter and sugar together. Add the eggs and beat until well mixed.
  • In a seperate bowl, sift the flour with the baking powder and salt.
  • Add the flour mixture to the egg mixture along with the milk, lemon juice and vanila. Mix well. Fold in the peach pieces.
  • Bake in a well-greased waffle iron according to manufacturer's instructions.

1 cup packed light brown muscovado sugar
4 tablespoons unsalted butter
1/4 teaspoon salt
1/2 cup heavy cream
1/2 cup chopped pecans, toasted
3 ripe peaches, halved, pitted and sliced
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
Rounded 1/4 teaspoon salt
1/4 teaspoon ground nutmeg or cardamom
1 cup whole milk
1 cup sour cream
3 tablespoons unsalted butter, melted
2 tablespoons pure cane sugar
1 teaspoon pure vanilla extract
2 large eggs
Nonstick spray or melted unsalted butter, for waffle iron
Confectioners' sugar, for garnish
Sprigs fresh mint, for garnish

Steps:

  • For the sauce: In a small saucepan over medium heat, combine the muscovado, butter and salt. Cook for 5 minutes, stirring constantly. Whisk in the cream and cook for an additional minute, continuing to whisk. Remove from heat and stir in the pecans and peaches. Keep warm over a double boiler.
  • For the waffles: Whisk together the flour, baking powder, baking soda, salt and cardamom and in a large bowl. Whisk together the milk, sour cream, butter, cane sugar, vanilla and eggs in a medium bowl. Add the wet ingredients to the dry and whisk until just combined. Let rest for 10 minutes.
  • Preheat a waffle iron and lightly spray with nonstick spray or brush with butter. Add about 1/2 cup of the batter per waffle. Close the lid and wait until the steam has stopped emerging from the cracks of the iron, about 4 minutes.
  • Serve the waffles with the toasted pecan praline sauce, dust with confectioner's sugar and garnish with a sprig of mint.

5 cups peaches, puree (peel, remove pits and toss the rest in the blender)
2 cups sugar
2 tablespoons lemon juice
2 teaspoons vanilla

Steps:

  • Combine peach puree, sugar and lemon juice in kettle.
  • Bring to a boil.
  • Simmer 5 minutes.
  • Add vanilla.
  • Pour into hot jars and seal.
  • Process in boiling water bath for 20 minutes.
