Recipe excerpted from Modern Comfort Food by Ina Garten. This dense, rich cake is somewhere between a chocolate torte and a molten cake, according to Ina.

15 tablespoon unsalted butter (1 7/8 sticks), plus more to grease the pan
7 ounce good-quality bittersweet chocolate (such as Lindt), broken into pieces
1 cup sugar
4 extra-large eggs, lightly beaten
0.5 teaspoon instant coffee granules
0.5 teaspoon kosher salt
0.25 cup all-purpose flour, plus more to flour the pan
Sweetened Whipped Cream (see recipe) or vanilla ice cream
1 cup cold heavy cream
1 tablespoon sugar
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 350°F. Butter and flour an 8-inch springform pan.
  • Place a large heatproof bowl over a pot of simmering water, making sure the water doesn't touch the bowl. Put the butter and chocolate in the bowl, stirring occasionally, until the chocolate melts. Take the bowl off the heat; set aside.
  • Whisk the sugar into chocolate mixture, then whisk in eggs, coffee, and salt until combined and smooth. Sprinkle on the 1/4 cup flour and fold it in with a rubber spatula until flour is incorporated.
  • Pour batter into the prepared pan; place it on a sheet pan. Bake 30 to 40 minutes, until the top puffs and cracks and cake doesn't wobble when you jiggle the pan. Cool completely on a wire rack. (The cake will deflate as it cools.) Run a small knife around edge of cake and remove sides of springform pan. Cut cake into wedges and serve warm or at room temperature with Sweetened Whipped Cream. If desired, garnish with additional chocolate. Serves 8. Sweetened Whipped Cream
  • Pour 1 cup cold heavy cream into the bowl of an electric mixer fitted with the whisk attachment. Add 1 tablespoon sugar and 1 teaspoon pure vanilla extract and beat on high until the cream forms soft peaks. Makes 2 cups.

2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
2 tablespoons instant coffee
2 tablespoons hot water
cold water
2 cups sugar
1 cup butter, softened
1 teaspoon vanilla
3 eggs
2 ounces unsweetened baking chocolate
3 tablespoons butter
1 1/2 cups confectioners' sugar
3 -4 tablespoons water
1 teaspoon vanilla

Steps:

  • CAKE: Preheat oven to 325 degrees.
  • Grease and flour a bundt or tube pan.
  • In a small bowl, combine flour, soda and powder.
  • In a 2 cup measuring cup, dissolve coffee in hot water and add enough cold water to measure 1 1/2 cups.
  • In a large mixer bowl, beat granulated sugar, butter and vanilla until creamy.
  • Beat in eggs, one at a time.
  • Stir in melted chocolate.
  • Add flour mixture alternately with coffee mixture.
  • Pour into prepared pan.
  • Bake 1 hour or until center tests done.
  • Cool 30 minutes and remove from pan onto a wire rack.
  • Cool completely and transfer to serving dish.
  • Drizzle with glaze and sprinkle with confectioner's sugar, if desired.
  • GLAZE: Melt chocolate and butter, stirring until smooth.
  • Remove from heat and stir in confectioner's sugar, alternately with water, until desired consistency is reached.
  • Stir in vanilla extract.

1/2 cup cocoa
1/2 cup vegetable shortening

1 cup milk
2 teaspoons vanilla extract
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F. Grease a 10-inch tube pan with butter.
  • Sift the flour, baking powder, salt and cocoa together. Set aside.
  • With an electric mixer, cream the 1 cup butter, the shortening and the sugar until fluffy. Add the eggs one a time, beating well after each addition. With the motor running, add the flour mixture and the milk alternately, beginning and ending with the flour. Add the vanilla.
  • Pour the batter into the prepared pan and bake for 1 hour. Check for doneness by inserting a toothpick into the cake; it should come out clean. Cool the cake in the pan for 30 minutes before turning it out onto a wire rack to cool completely.
  • Slice the cake and serve topped with a scoop of vanilla ice cream.

2 1/2 cups all-purpose flour
3/4 cup Dutch-processed cocoa powder
1/2 teaspoon salt
8 large eggs, at room temperature
2 egg large yolks, at room temperature
1 tablespoon pure vanilla extract
2 teaspoons instant espresso powder
12 ounces unsalted butter (3 sticks), room temperature
2 1/2 cups sugar
6 ounces bittersweet chocolate, roughly chopped
6 ounces bittersweet or semisweet chocolate, finely chopped
8 tablespoons unsalted butter (1 stick)
1 tablespoon honey

Steps:

  • Place a rack in the middle of the oven and preheat to 350 degrees F. Butter and flour the bundt pan.
  • Sift the flour, cocoa, and salt into a medium bowl. Whisk the eggs, yolks, vanilla, and espresso powder together in a bowl and set aside.
  • In a heavy-duty mixer, beat the butter with the paddle attachment, on medium speed for 1 minute, or until smooth. Gradually pour in the sugar, 1/4 cup at a time, until the butter begins to lighten, about 3 minutes. Scrape down the sides of the bowl with a rubber spatula and beat, on medium-high, until light and fluffy, about 4 minutes more.
  • Adjust the mixer's speed to its lowest setting. Add 1/2 of the flour mixture and mix until completely absorbed before adding the rest. Scrape down the sides of the mixer then beat on medium-high for 30 seconds more.
  • Adjust again to low speed and add half the egg mixture, mix until blended and smooth. Add the remaining egg mixture and beat until almost blended. Remove the bowl from the mixer, and fold in the chocolate by hand. Take care not to over mix the batter.
  • Spoon the batter into the prepared pan and smooth the top with a spatula. Bake until a toothpick inserted into the center comes out clean, about 1 hour and 10 minutes.
  • Cool the cake in the pan, on a rack for 10 minutes. Turn the cake out of the pan, and cool right side up on a rack. If not serving the same day, wrap in plastic wrap and store at room temperature. Glaze just before serving. Cake can be frozen for 1 month.
  • For the glaze: Put all the ingredients in a microwave-safe bowl or glass measuring cup. Melt at 50 percent power in the microwave until soft, about 1 minute. Stir, and continue heat until completely melted, about 1 minute more. Remove from the microwave and whisk until fully combined, smooth and glossy. While warm, pour glaze over cooled cake and do not spread. Serve as desired.

4 large eggs, separated
2/3 cup sugar
3 1/2 tablespoons all purpose flour
Powdered sugar

Steps:

  • Preheat oven to 325°F. Line bottom of 9-inch-diameter cake pan with 2-inch-high sides with waxed paper. Butter sides of pan and paper. Dust pan with flour. Melt chocolate and butter in top of double boiler over simmering water, stirring until smooth. Cool slightly.
  • Whisk yolks and sugar in large bowl until pale yellow. Mix in flour, then chocolate mixture. Using electric mixer, beat whites in another bowl until stiff but not dry. Fold into chocolate mixture. Pour batter into prepared pan. Bake until toothpick inserted into center comes out with only a few moist crumbs attached, about 25 minutes. Cool completely in pan on rack. Run small sharp knife around sides of pan to loosen cake. Turn cake out onto platter and cool. (Can be prepared 8 hours ahead. Cover with cake dome and let stand at room temperature.) Sift powered sugar over cake and serve.

A variation of the classic cream cheese pound cake with mocha flavoring and chips of dark chocolate floating throughout the cake. Serves a crowd and always well received! Keep in an airtight cake safe -- it tastes best if made at least 24 hours prior to serving, and can actually be made 2 to 3 days in advance!

½ teaspoon baking soda
1 ½ cups butter, softened
1 (8 ounce) package cream cheese, softened
1 ⅓ cups white sugar
1 ⅓ cups brown sugar
6 eggs

2 ½ tablespoons instant espresso powder
1 ½ cups chopped dark chocolate
1 teaspoon confectioners' sugar, or as needed

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Grease and flour a 10-inch tube pan. Whisk the flour and baking soda together until blended.
  • In a large bowl, mash the butter, cream cheese, white sugar and brown sugar with a spoon until the mixture is creamy and thoroughly combined. Beat in 1 egg at a time, mixing it in completely before adding the next one. Stir the vanilla extract with the instant espresso powder in a small bowl, and add it to the butter mixture. Stir in until well combined.
  • Stir the flour mixture into the butter mixture in 1/2-cup quantities until the flour has been thoroughly incorporated. Stir in the chopped dark chocolate. Spoon the batter into the prepared cake pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 1 1/2 hours. Start checking for doneness after about 1 hour and 15 minutes. Cool the cake in the pan for about 10 minutes, then turn out onto a cake dish and allow to finish cooling. Dust with confectioners' sugar.

Served with fresh raspberries and whipped cream topping, how could anyone complain? Diana's Desserts is where I found this yummy-looking & sounding dessert. This is also great for Passover. Didn't allow for cooling time.

3 tablespoons cake flour
1 tablespoon Dutch-processed cocoa powder
2 teaspoons instant espresso powder
5 ounces bittersweet chocolate, chopped into chunks
6 tablespoons unsalted butter or 6 tablespoons unsaled margarine, cut into small cubes, at room temperature
4 eggs, separated
1/2 cup superfine sugar
1 teaspoon rum flavoring or 1 teaspoon rum
1 cup heavy cream
2 tablespoons sour cream
2 tablespoons confectioners' sugar
1 tablespoon finely grated orange zest
1 teaspoon rum flavoring or 1 teaspoon rum
confectioners' sugar, for dusting
fresh raspberry (optional)

Steps:

  • Position a rack in the center of an oven and preheat to 350°F
  • Butter and flour an 8-inch springform pan with 2-inch sides.
  • TO MAKE CAKE:
  • In a bowl, sift together the flour, cocoa and espresso powder.
  • Set aside.
  • Place the chocolate in a heatproof bowl and set over but not touching barely simmering water in a saucepan.
  • Melt the chocolate, stirring occasionally.
  • Remove the bowl from the heat and stir in the butter, a little at a time, until blended.
  • Let cool slightly.
  • In a large bowl, combine the egg yolks and superfine sugar.
  • Using an electric mixer set on medium speed, beat until creamy, 3 to 4 minutes.
  • Beat in the chocolate mixture until blended.
  • Fold in the flour mixture and then the vanilla or Amaretto or rum flavoring or rum.
  • In another large bowl, beat the egg whites until soft peaks form.
  • Stir one-fourth of the whites into the batter, then fold in the remaining whites just until incorporated.
  • Pour the batter into the prepared pan and level the top.
  • Bake until the top is risen and crusty and a toothpick inserted into the center comes out almost clean, 30 to 35 minutes.
  • The center should be soft and moist.
  • Transfer the pan to a wire rack and cool for 10 to 15 minutes.
  • The top will fall a bit.
  • Remove the pan sides, loosen the cake's edges with a knife, and slide the warm cake onto a serving plate.
  • WHIPPED CREAM TOPPING:.
  • In a bowl, whisk together the cream and sour cream until slightly thickened.
  • Whisk in the confectioners' sugar, orange zest and vanilla or Amaretto or rum flavoring or rum, until soft peaks form.
  • Dust the warm cake with confectioners' sugar.
  • Cut into slices and top with whipped cream topping and serve with fresh raspberries (raspberries are optional).
  • ENJOY!

Steps:

  • Preheat oven to 325 degrees.
  • Grease and flour a 12-cup tube pan; set aside.
  • In large bowl, beat butter, shortening, and sugar at medium speed with an electric mixer until very creamy.
  • Add eggs, one at a time, beating well after each addition.
  • In another bowl, sift together flour, cocoa, baking powder, and salt.
  • Add flour mixture to butter mixture, alternately with milk, beginning and ending with flour mixture.
  • Pour batter into prepared pan.
  • Bake for 1 hour 10 minutes, or until a wooden pick inserted in the center of cake comes out clean.
  • Note: You may have to bake your cake longer than the stated time, depending on your oven.
  • Let cool in pan for 15 minutes.
  • Invert onto a cooling rack and let cool completely.
  • Place cake on a cake plate, ready to frost, before making fudge icing.
  • Frost with fudge icing as soon as it reaches the proper spreading consistency.
  • For the icing, in saucepan, combine sugar, milk, butter, cocoa and salt.
  • Bring to a boil over medium heat.
  • Let boil for 2 minutes.
  • Remove from heat and add vanilla.
  • Beat at high speed with an electric mixer for 6-8 minutes, or until frosting becomes creamy and reaches a spreadable consistency.
  • If making icing on a rainy day, it may take longer to reach a spreadable consistency.
  • If you overbeat icing, or it begins to harden, add a little hot water, 1 teaspoon at a time, until icing is spreadable again.
