PEACH COBBLER
I found this peach cobbler recipe on the internet from the Salt Lick Restaurant in Austin, TX. Everyone loves this recipe so much I have to make a double batch! Feel free to cut back on the sugar. Everyone has and the peach cobbler still comes out perfect. :D Personally, I always use two bags of frozen peaches instead of canned.

Steps:
- Melt butter in a 9 x 13 inch pan.
- Mix together flour, sugar, baking powder & salt.
- Stir in milk & egg.
- Pour evenly over melted butter.
- Combine peaches, sugar & spices and spread over batter-DO NOT STIR!
- Bake 35-45 minutes at 350°F until batter comes to the top and is golden brown.
- Serve warm with ice cream.

This recipe is very old and was my grandmother's. This is a very delicious cobbler and can also be used with blueberries. Hope you enjoy this as our family has all these years.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 10x10-inch baking dish.
- Stir together peaches with cinnamon and 1 1/2 cups sugar. Set aside.
- In a medium bowl, cream together shortening and 1 cup sugar. Mix in flour, baking powder and salt alternately with milk. Pour into prepared pan. Top with peach mixture. Drop butter in boiling water and pour all over peaches.
- Bake in preheated oven 40 to 45 minutes, until golden brown.

- Preheat the oven to 350 degrees F (175 degrees C).
- Place the peaches into the bottom of a buttered 9 inch square baking dish. Cut each slice of bread into 4 strips, and place over the peaches. In a medium bowl, whisk together the sugar, flour, egg and margarine; pour over the bread.
- Bake for 35 to 45 minutes in the preheated oven, or until golden brown.

PEACH COBBLER
Everyone has a different idea about what a cobbler should be. Biscuit-topped? Double-crusted? Cakelike? We're not here to cast a vote, merely to present a simple Southern cake-style cobbler that makes the most of ripe summer peaches (or the frozen ones languishing in the back of your freezer). All you really need is a bowl, a saucepan, a baking pan and a spoon. When you transfer the batter to the pan, it will not completely cover the bottom, nor will it cover the top of the peaches, but cobble it together the best you can. As it bakes, the batter will rise up along the sides of the pan and through the peaches, developing a crisp exterior and tender interior.

- Heat oven to 350 degrees. Peel, pit and slice the peaches. Melt 4 tablespoons of butter in a medium saucepan. Add the sliced peaches and 1/2 cup sugar. Stir in 2 tablespoons of flour and simmer for 10 to 15 minutes, until soft and syrupy.
- Meanwhile, in a medium bowl, combine the remaining 1 cup sugar with the remaining 1 cup flour, baking powder and salt. Stir in the milk until combined.
- Add 8 tablespoons of butter to a 9-by-13-inch baking pan and place it in the oven. When the butter is melted, reserve 1/3 cup of the batter and set aside. Add the rest of the batter to the pan, using a spatula to spread it out as much as you can. It will not fully cover the bottom of the pan. That's O.K.
- Spoon the peach mixture evenly over the top of the batter. Using a clean spoon, dollop small bits of the reserved batter over the peaches, and spread around a bit with the back of the spoon. (It will not fully cover the peaches. Again, that's O.K.!)
- Bake for about 1 hour, or until the top is golden brown. Serve warm with vanilla ice cream, if desired.

- Drain 1 can of peaches; reserve the syrup from the other. Place the butter in a 9- by 12-inch ovenproof baking dish. Heat the butter on the stove or in the oven until it's melted. In a medium bowl, mix the flour and sugar. Stir in the milk and the reserved syrup. Pour the batter over the melted butter in the baking dish. Arrange the peaches over the batter. Bake for 1 hour. - Chill a large metal mixing bowl and the wire beater attachment in the freezer for about 20 minutes. Don't overbeat or you'll have sweetened butter!
MY GRANDMOTHER'S FRESH PEACH COBBLER
My grandmother used this recipe every summer when the peaches were ripe. She got the recipe from her church cookbook. You can use any almost any kind of fruit in the cobbler, it will still be good.

- Heat oven to 180C/160C fan/gas 4. Grease a baking dish with a little butter, then lay the drained peach slices in the base. Sprinkle with 2 tbsp of the sugar and the ground ginger and set aside.
- Tip the flour, remaining sugar, baking powder, cinnamon and a pinch of salt into a food processor. Whizz until combined, then add the cubes of butter, pulse until the mixture resembles breadcrumbs, then add the egg and continue to blitz until it comes together to make a thick dough.

SIGNATURE PEACH COBBLER
This recipe is, quite simply, the best peach cobbler I have ever eaten - period. It has ruined me for any others. I got it from Allrecipes, submitted by Amy Posey. I will forever be in her debt! I made it once for a neighbor who has a peach tree (in exchange for peaches!), and he said it was just like his Mom used to make. A classic. I guarantee you will not be disappointed. I suppose it could be made with frozen peaches, but for me, it's only worth making at the very peak of peach season. Enjoy!

- Preheat oven to 425. In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar and cinnamon, nutmeg, lemon juice and cornstarch. Toss to coat evenly and pour into a 2 quart baking dish. Bake for 10 minutes.
