PEACH FRITTERS
We had a case of lovely O'Henry peaches and a fryer with leftover oil. Put two and two together and created this warm variation on various fruit fritter recipes. Kids loved 'em!

Steps:
- Toss peaches, granulated sugar, and 2 Tbsp. flour in a large bowl to combine. Let sit, tossing occasionally, 30 minutes.
- Place a rack in center of oven; preheat to 350°F.
- Meanwhile, whisk oats, brown sugar, cinnamon, salt, and remaining 1 cup flour in a large bowl to combine. Using an electric mixer on low speed, gradually add butter. Once it has all been added, increase speed to medium-high and beat until dry ingredients are incorporated (there should be no dry bits left in the bowl), about 3 minutes.
- Scrape peaches and any juices into a 13x9" baking dish. Evenly scatter oat topping over peaches and bake crisp until peaches are soft, fruit juices are bubbling, and topping is a deep golden brown, 60-70 minutes. Transfer baking dish to a wire rack and let crisp cool 1 hour.
- Divide among bowls and top with large scoops of ice cream.
PEACH FRITTER
This came up on one of those feeds from facebook and I made a few changes from other recipes I like and they turned out so good, light and fresh and enjoyed by all that tried them. Hope you like them too. I made these with fresh peaches but thinking frozen ones, thawed and drained would work good too

CINNAMON FRITTERS
From a Swedish cookbook left to me by my dear Swedish neighbor. These are awesome, I never thought to just make fritters with nothing but cinnamon! I have yet to make them but when Millie made them I was always sure to get some.

- In a small bowl, combine all the dry ingredients first; flour, sugar, salt, baking powder, cinnamon and nutmeg. Give it a little whisk. Add peaches, milk, vanilla, and the egg to dry mixture. Then stir well until combined.
- Heat oil to 350 degrees F. Working in batches, gently drop a large spoonful (about half a ladle) into the sizzling oil. (I did 3 at a time to make sure they weren't crowded in a deep skillet). Frying until they’re golden brown on both sides, 2-3 minutes per side.
- While those are cooling a couple minutes, in a small bowl, whisk the powdered sugar, honey, cinnamon, and milk or cream to combine. Add more milk or cream as needed to make the glaze "drizzly". Drizzle each fritter with the glaze, and serve immediately.
