Steps:
- Preheat the oven to 375 degrees F with a rack in the center of the oven and a second rack underneath; place a baking sheet on the second rack (to catch drips).
- For the filling: In a large bowl, toss the peaches and blackberries with the granulated sugar, cornstarch and lemon juice. Transfer to a 3-quart baking dish.
- For the topping: Whisk together the all-purpose flour, almond flour, baking powder, baking soda and salt in a large bowl. Using your fingers or two knives, cut in the butter and lard until a coarse meal forms. Create a well in the center and pour in the buttermilk. Mix until just combined. The dough will seem quite wet, but that's what you want for the topping.
- Drop spoonfuls of biscuit dough onto the filling, brush lightly with milk and sprinkle with the raw sugar.
- Bake until the fruit is bubbling and tender, and the biscuits are deep golden-brown and cooked through, 50 to 60 minutes. Cool for at least 15 minutes before serving.
- Meanwhile, make the whipped cream: Whip the cream and granulated sugar until soft peaks form. Fold in the almonds.
- Serve the cobbler warm or room temperature in bowls; top with dollops of whipped cream.
BLUEBERRY PEACH COBBLER

- Preheat oven to 400 degrees F.
- Roll pastry to fit a 2-quart oval baking dish. In a large bowl, combine peaches and blueberries. Mix in flour, sugar, nutmeg, vanilla and butter cubes. Pour into the baking dish and cover with pastry. Using a fork, cut off excess dough and create a decorative edge by pressing tines along edge of pan and pushing down. With a paring knife, cut 3 slices on top of the pastry to vent. Brush on egg wash and dust with sugar. Bake until golden brown on top and edges are bubbling, about 45 to 50 minutes.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, stir together flour, 1/2 cup white sugar, and baking powder. Mix in milk and 1/4 cup butter until smooth.
- In a medium saucepan, stir together the brown sugar, cornstarch, and water. Mix in the peaches and blueberries. Cook and stir over medium heat until thick and bubbly. Mix in 1 tablespoon butter and lemon juice. Continue cooking until the butter melts. Pour into a 1 1/2 quart ungreased baking dish. Evenly spoon batter in mounds over the hot fruit. In a small bowl, mix the coarse sugar and nutmeg, and sprinkle over the batter.

- Heat the oven to 425 degrees. Prepare the filling: In a large bowl, combine the peaches, blackberries, granulated sugar and starch. Squeeze the juice of 1/2 lemon on top and toss to combine. Scrape the mixture into a 10-inch cast-iron skillet.
- Make the topping: In a small bowl, combine milk, egg and juice from the remaining 1/2 lemon; whisk to combine.
- In a large bowl, combine cornmeal, flour, granulated sugar, baking powder, salt and reserved lemon zest; stir to combine. Add the cold butter. Using your fingertips, smear and rub the pieces into the cornmeal mixture until it looks like wet sand.
- Make a well in the center of it and add the milk mixture. Using a spatula, stir until thoroughly combined, then spoon it over the top of your fruit. Level the topping to cover more of the fruit. Sprinkle the surface of the topping with the raw sugar.

MOMMA DAISY'S PEACH AND BLACKBERRY COBBLER
Steps:
- To make the biscuit topping, in a large bowl, whisk together the flour, cornmeal, 1/4 cup sugar, baking powder, and salt. Cut in the butter and shortening until the mixture resembles coarse crumbs. Using a fork, stir in the milk and egg just to combine (do not over mix). Set aside while preparing the filling.
- To make the peach filling, preheat the oven to 350°F. Generously butter a 7 × 11-inch baking dish.
- Heat the peaches, brown sugar, lemon juice, cornstarch, cinnamon, and pinch of salt in a medium saucepan over medium-high heat. Bring the peaches to a boil, stirring frequently. Reduce the heat to medium-low and simmer, stirring, until the sauce thickens and the peaches have softened, about 5 minutes. Remove from the heat, and stir in the vanilla and blackberries. Transfer the filling to the prepared baking dish.
- Use a spoon to scoop approximately 2 tablespoons of batter and use another spoon to place the batter on top of the fruit mixture. Continue with the remaining batter, covering the fruit evenly. Sprinkle the tops of the biscuits with the remaining 2 tablespoons granulated sugar, and bake for 25 to 30 minutes, or until the biscuits are golden brown and the filling is bubbly and thick around the edges.
- Cool for 10 minutes, then serve warm with ice cream.

- In a food processor, pulse the flour with the salt. Add the vegetable shortening and pulse until the mixture resembles coarse meal. Add the ice water to the mixture all at once and pulse just until the pastry comes together. Scrape the pastry out onto a lightly floured work surface and pat the pastry into an 8-inch square. Wrap the pastry square in plastic and refrigerate until it is firm, at least 30 minutes or overnight.
- In a small bowl, mix the 1 cup of sugar with the cornstarch. In a large bowl, gently toss the peaches with the blackberries. Add the sugar-and-cornstarch mixture and lemon juice to the mixed fruit and gently toss the fruit again. Spoon the fruit into a 3-quart shallow glass or ceramic baking dish and scatter the pieces of unsalted butter over the top of the fruit filling.
- Position racks in the middle and lower third of the oven and preheat the oven to 425°. Line a large rimmed baking sheet with aluminum foil. On a lightly floured work surface, roll out the cobbler pastry until it is 2 inches larger than the baking dish on all sides and about 1/8 inch thick.
- Drape the cobbler pastry over the baking dish and trim the overhang to 1 inch. Fold the overhang under itself and press it lightly onto the rim of the baking dish; crimp the pastry edge decoratively. Brush the pastry with the half-and-half and sprinkle it with 1 tablespoon of sugar. Using a paring knife, make 6 small slits in the pastry crust to allow steam to escape.
