I adore frozen peach bellini's and this recipe is very close to my favorite restaurant's drink. Another cooking website is where I found and adapted this recipe from.

Ingredients

6 ounces spumanti, Astt, to taste
1 ounce peach schnapps, to taste
frozen peaches, sliced
ice

Steps:

Add a few frozen peach slices and liquor to blender and puree. The mixture should be taking on a slushy type texture.
Taste and add more liquor or peaches as needed. Add ice and continue to blend until a nice frozen texture is acquired. Pour into glasses and garnish with peaches.

Created in Venice, Italy, then promoted in restaurants such as the Olive Garden, this drink is now widely popular in the US, particularly in the New York area. This is a non alcoholic version of the classic bellini.

Ingredients

1 cup peach, peeled, chopped (frozen or fresh)
1 (750 ml) bottle sparkling apple cider, chilled (3 cups)

Steps:

Allow chopped peaches to defrost if using frozen. If using fresh peaches, put puree in freezer to chill about 1/2-1 hour before proceeding(or put peaches in freezer till they are really cold, about 1/2-3/4 hour.
Place in blender with 1/2 cup sparkling cider. Blend until peaches are pureed.
Divide puree evenly between 4 champagne glasses. Fill glasses with remaining sparkling cider. Serve and enjoy!

2 ripe peaches, seeded and diced
1 tablespoon freshly squeezed lemon juice
1 teaspoon sugar
1 bottle chilled prosecco sparkling wine

Steps:

Place the peaches, lemon juice, and sugar in the bowl of a food processor fitted with a steel blade and process until smooth. Press the mixture through a sieve and discard the peach solids in the sieve. Place 2 tablespoons of the peach puree into each Champagne glass and fill with cold prosecco. Serve immediately.

3 medium peaches, halved
1 tablespoon honey
1 can (11.3 ounces) peach nectar, chilled
2 bottles (750 ml each) champagne or sparkling grape juice, chilled

Steps:

Line a baking sheet with a large piece of heavy-duty foil (about 18x12 in.). Place peach halves, cut sides up, on foil; drizzle with honey. Fold foil over peaches and seal. , Bake at 375° for 25-30 minutes or until tender. Cool completely; remove and discard peels. In a food processor, process peaches until smooth., Transfer peach puree to a pitcher. Add the nectar and 1 bottle of champagne; stir until combined. Pour into 12 champagne flutes or wine glasses; top with remaining champagne. Serve immediately.
