Steps:

  • Muddle the blackberries with 1 of the lime wedges in a cocktail shaker. Add the vodka and some ice and shake well. Strain into a copper mug filled with ice. Top off with ginger beer and garnish with the remaining lime wedge.

Steps:

  • In a double old-fashioned glass, combine 2 peach slices, 3 blackberries, mint, honey, and lemon juice. Mash gently with the back of a spoon until fruit releases juices. Add bourbon, remaining peach slices, and remaining blackberries. Fill glass with ice and top with seltzer.

1 cup fresh blackberries
¼ cup white sugar
1 teaspoon ground cinnamon
1 tablespoon lemon juice
½ cup butter, melted
1 ¼ cups all-purpose flour
1 cup white sugar
2 teaspoons baking powder
½ teaspoon salt
1 cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix peaches, blackberries, 1/4 cup sugar, cinnamon, and lemon juice in a bowl.
  • Pour butter into a 9x13-inch glass baking dish and evenly coat the bottom and sides. Whisk flour, 1 cup sugar, baking powder, and salt in a bowl; mix in milk, stirring just to moisten dry ingredients. Pour batter into prepared baking dish and distribute fruit mixture evenly over the batter.
  • Bake in the preheated oven until cobbler is golden brown, about 45 minutes.

2 peaches, halved and pitted
1 pint fresh blackberries
1 cup nonfat Greek yogurt
1/2 cup peach nectar
Touch vanilla extract

Steps:

  • Preheat oven to 375 degrees F. Put the peaches and blackberries on a baking sheet and roast, turning once, until very soft and caramelized, about 30 minutes. Remove to a plate and let cool. The fruit can be roasted a day ahead of time and stored in a container with a tight-fitting lid for up to 1 day.
  • Combine the fruit, yogurt, peach nectar, vanilla and 1 cup ice cubes in a blender and blend until smooth. Divide among 2 large glasses.

Add cubed chilled butter; pulse until mixture resembles small peas, about 12 times. Add 1/4 cup ice water; pulse until mixture is evenly moistened, about 8 times. Mixture should hold together when pinched. If it doesn’t, add remaining 1 tablespoon ice water, 1 teaspoon at a time, pulsing 3 times after each addition. Turn mixture out onto a clean work surface. Shape into a ball, and flatten into a disk. Wrap tightly in plastic wrap. Chill at least 2 hours or up to 3 days.
  • Unwrap dough, and place on a lightly floured surface. Roll out into a 14-inch circle (about 1/8 inch thick). Trim into a 12-inch circle; discard scraps. Place dough circle on a parchment paper–lined rimmed baking sheet, and chill, uncovered, until firm, about 30 minutes.
  • Meanwhile, preheat oven to 425°F. Whisk together cornstarch, 1/3 cup sugar, and remaining 1/4 teaspoon salt in a large bowl. Add peaches, blackberries, melted butter, lemon zest and juice, and thyme sprigs; toss to combine.
  • Arrange fruit mixture in center of chilled dough circle, leaving a 1 1/2-inch border. Fold dough edges up and over filling (dough will only partially cover filling), pleating every 3 inches. Lightly brush folded dough edges with beaten egg. Sprinkle dough edges and filling with remaining 1 tablespoon sugar.
