HOLIDAY MOCHA SPRITZ
When I began to use my spritz press, this mocha recipe was the first flavor combination I tried. It took a few attempts to get the hang of it, but now I'm playing with a new dough and disc every time I make them. I plan on making several batches throughout the year. -Shelly L. - Preheat oven to 375°. In a large bowl, beat butter and sugar until light and fluffy. Combine egg, instant coffee and vanilla; beat into creamed mixture. In another bowl, whisk flour, cocoa, espresso powder, baking powder, salt and nutmeg; add to creamed mixture alternately with orange juice, beating well after each addition., Using a cookie press fitted with a disk of your choice, press dough 1 in. apart onto ungreased baking sheets. If desired, sprinkle with colored sugar. Bake until set, 8-10 minutes (do not brown). Remove from pans to wire racks to cool.

3 powders form together to make a hot drink. Froufrou coffee taste, without Froufrou Coffeehouse price. You can use regular or decaf, add in whatever further powders you like for flavour.

- Empty the 8 oz instant coffee into a mixing bowl.
- Use the now-empty jar to measure out 2 jars of chocolate milk mix (16 oz).
- Use the jar to measure out 3 jars of powdered milk (24 oz).
- Mix thoroughly, and run through a blender or food processor, so that the powder is of a relatively similar consistency.
- Put mix into jars for gift-giving, or to pace out your own consumption.
- Use a quarter-cup of mix per 1 cup of hot water.
ORANGE-VANILLA LIQUEUR
Doesn't exactly taste like creamsicles, but similar--the vanilla does soften the bite of the orange somewhat in that direction. To drink in liqueur glasses or pour over ice cream, angelfood cake, etc. Makes a delightful gift. Be sure to use vanilla extract, not imitation vanilla flavoring; the same goes for the orange extract. Times listed do not include 2 weeks for the liqueur to sit and infuse.

- Pare the peel from each orange in a spiral, producing a 1-inch-wide strip; try to get mostly the orange zest and leave most of the white membrane on the fruit.
- Put the peels in a saucepan with the 1 cup water plus the corn syrups and sugar.
- Bring to a boil and let boil, stirring constantly, 8-10 minutes.
- Remove from the heat and add the extracts.
- Let cool to room temperature and add the vodka.
- Pour into a jar or bottle with a tight fitting lid and let stand at least 2 weeks.

A tried and true Mocha Valencia addict, I had to face the ugly reality of all those carbs. Paired with rumors of a Starbucks price hike, I'm finetuning this recipe ,so please pass on your tips. I use the Melitta 1:1 pod machine "Buzzworthy" 5 oz to make my coffee milder than a shot of espresso. I might try adding a 8 oz container of creamer to the mix next batch to make it creamier. Now if Starbucks would just sell the Valencia sprinkles!
