GARLIC THYME PORK CHOPS

1/4 cup Kosher salt (I use Morton's)
1/4 cup sugar
8 garlic cloves (lightly crushed)
8 black peppercorns
3 fresh thyme sprigs
1 bay leaf
2 cups ice cubes
2 bone-in center-cut pork chops (each about 1 inch (2.5 cm) thick)
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
2 tablespoons unsalted butter
1 garlic clove (lightly crushed)
1 fresh thyme sprig

Steps:

  • To make the brine, in a saucepan over medium heat, combine 3 cups water, the salt, sugar, garlic, peppercorns, thyme and bay leaf and stir until the salt and sugar are dissolved. Pour the brine into a large bowl and add the ice cubes. Let the brine cool to room temperature.
  • Add the pork chops to the brine. Cover and refrigerate for at least 2 hours and up to overnight.
  • Preheat an oven to 400°F (200°C).
  • Remove the pork chops from the brine and discard the brine. Pat the pork chops dry with paper towels and let sit at room temperature for 20 minutes. Season the pork chops heavily with salt and pepper.
  • In a large fry pan over medium-high heat, warm the olive oil. Add the pork chops and sear, turning once, until golden brown on both sides, about 3 minutes per side. Add the butter, garlic and thyme to the pan and heat until the butter is melted. Carefully tilt the pan so the butter pools at the edge of the pan and use a spoon to baste the chops. Transfer the pork chops to the oven and continue cooking until an instant-read thermometer inserted into the center of the chops registers 145°F (63°C), about 5 minutes more. Transfer the pork chops to a platter and let rest for 5 minutes before serving.

Grilled Pork Chops with Roasted Garlic Gremolata image

1/4 cup packed brown sugar
1/4 cup kosher salt
2 tablespoons smoked paprika
1 tablespoon pink peppercorns
4 fresh sage leaves
2 sprigs fresh thyme
1 sprig fresh rosemary
2 14-ounce bone-in center-cut pork chops (about 1 1/4 inches thick)
Freshly ground pepper
1 cup extra-virgin olive oil
1 head garlic, broken into individual cloves, peeled
1/2 cup finely chopped fresh parsley
Grated zest of 3 lemons
Kosher salt and freshly ground pepper

Steps:

  • Brine the pork: In a large bowl, whisk 1 quart warm water, the brown sugar, salt and paprika until the sugar and salt dissolve. Add the peppercorns, sage, thyme and rosemary and let cool to room temperature. Add the pork chops to the brine. Cover and refrigerate 24 hours.
  • Meanwhile, make the gremolata: Preheat the oven to 275 degrees F. Combine the olive oil and garlic in a small baking dish. Cover with foil and bake until the garlic is completely tender, about 1 hour. Remove from the oven and let the garlic cool in the oil. Strain, reserving the roasted garlic and oil separately. Chop enough roasted garlic to measure 1 tablespoon. Reserve the remaining roasted garlic for another use.
  • Mix the parsley, lemon zest, chopped roasted garlic and 1/2 cup of the garlic oil in a small bowl; season with salt and pepper. Reserve the remaining garlic oil to coat the pork.
  • Grill the pork: Preheat a grill to medium high. Remove the pork from the brine and pat dry. Lightly brush the pork with some of the garlic oil and sprinkle with pepper. Grill, turning as needed to prevent flare-ups, until a nicely charred crust forms and an instant-read thermometer inserted into the center registers 135 degrees F for medium doneness, 8 to 10 minutes per side. Transfer to a cutting board and let rest 8 minutes.
  • Carve the meat from the bones and slice against the grain. Serve with the gremolata.

This recipe is my twist on a fancy restaurant meal we got on Valentine's Day. The recipe has half the amount of garlic than was originally used. Hope everyone else enjoys it just as much as we do. Garnish with fresh parsley, chives, or thyme leaves.

2 pounds boneless pork chops
½ teaspoon paprika
1 pinch kosher salt and ground black pepper to taste
¼ cup butter, divided
1 (8 ounce) package sliced fresh mushrooms
4 cloves garlic, minced
1 teaspoon Dijon mustard
2 tablespoons all-purpose flour
2 cups beef broth

Steps:

  • Season both sides of pork chops with paprika, salt, and pepper.
  • Heat a large skillet over medium-high heat; add 2 tablespoons butter. Sear pork chops until golden brown and no longer pink in the center, 2 to 4 minutes per side. Remove pork chops from the skillet and set aside.
  • Melt remaining butter in the same skillet over medium-high heat. Add mushrooms and cook until golden and excess moisture evaporates, about 5 minutes. Add garlic and mustard; cook until garlic is fragrant, about 1 minute.
  • Add flour to the skillet, stirring to remove any lumps. Slowly add beef broth, whisking until incorporated. Season with salt and pepper. Reduce heat to medium and simmer, stirring often, until sauce thickens, about 5 minutes. Check for seasoning again.
  • Return pork chops to the skillet and cook until heated through, about 1 minute. Serve hot.

1/2 cup white wine or chicken broth
2 tablespoons fresh thyme leaves, divided
2 garlic cloves, minced
2 bone-in pork loin chops (7 ounces each)
1/2 cup soft bread crumbs
1/8 teaspoon salt
1/8 teaspoon pepper
2 teaspoons olive oil

Steps:

  • In a resealable plastic bag, combine the wine or broth, 1 tablespoon thyme and garlic; add pork. Seal bag and shake to coat; refrigerate for 30 minutes. Turn and refrigerate 30 minutes longer., Drain and discard marinade. In a shallow bowl, combine the bread crumbs, salt, pepper and remaining thyme. Coat pork chops on both sides with crumb mixture. In a nonstick skillet over medium heat, cook pork in oil for 8 minutes on each side or until golden brown and a thermometer reads 160°.

½ teaspoon Italian seasoning

¼ teaspoon garlic powder, divided

⅛ teaspoon onion powder
1 ½ pounds pork chops
2 tablespoons butter
1 tablespoon olive oil
3 tablespoons lime juice
2 teaspoons garlic powder

Steps:

  • Mix salt, Italian seasoning, black pepper, chili powder, 1/4 teaspoon garlic powder, paprika, and onion powder together in a bowl. Sprinkle spice mixture generously on both sides of pork chops.
  • Heat butter and olive oil in a large, heavy skillet over medium heat. Cook pork until no longer pink in the center and golden brown on both sides, about 5 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Transfer pork chops to a serving plate, reserving juices in the skillet.
  • Add lime juice and garlic powder to the same skillet and mix into leftover juices. Stir to combine and pour over the pork chops.

4 pork chops, 1/2 inch thick
2 tablespoons butter
1 onion, thinly sliced
1/2 teaspoon garlic powder
1/4 teaspoon pepper
2 tablespoons flour
1 teaspoon dried sage
1 teaspoon dried thyme
3/4 cup white wine
1 teaspoon salt

Steps:

  • Saute onion in butter.
  • Remove onions and keep warm.
  • Combine garlic, pepper, flour, sage and thyme and press onto both sides of meat.
  • Brown pork chops in pan with remaining butter, remove the chops.
  • Add 1/2 cup wine to pan and bring to a boil.
  • Return pork chops to pan and cover, reduce heat to a simmer for 30 minutes.
  • Remove pork chops and add remaining 1/4 cup wine to pan.
  • Broil over high heat until reduced to a syrupy glaze.
  • Pour sauce over chops and top with onions.

  • To cure the pork chops: mix together the sugar & salt. Rub mixture all over pork chops and place into zip lock baggie. Refrigerate for at least one hour (or as long as 4 hours).
  • Marinade: Melt 4 TBSP butter in small saucepan. Add the garlic and cook until fragrant, but not brown. Add vinegar, thyme, and pepper. Remove from heat.
  • In an oven proof skillet (I used cast iron), heat the canola oil over high heat. Place pork chops into hot pan and sear until golden brown (approx. 3 minutes per side). Remove pan from heat.
  • Generously baste the chops with the butter/garlic/thyme mixture and place into preheated 375* oven. Cook for 6-10 minutes or until internal temp reaches 140-145* (in thickest part of chop). Do not overcook.
