COLD RICE SALAD



Cold Rice Salad image

1 1/2 cups long-grain white rice, rinsed
Salt
1 cup peas, blanched
1/2 red bell pepper, chopped
1/4 red onion, thinly sliced and soaked in ice water for 10 minutes
2 tablespoons rice wine vinegar
Salt and freshly ground black pepper
6 tablespoons vegetable oil
1 teaspoon toasted sesame oil

Steps:

  • For the rice: Place the rice, 3 cups water, and a pinch of salt in a pot, cover and bring to a boil. Reduce the heat and cook on low until tender, about 20 minutes. Turn the rice out onto a sheet tray and let it cool completely. Next, combine the rice, peas, red bell pepper and red onion. Toss gently.
  • For the dressing: In a small bowl, add the rice wine vinegar, a small pinch salt and a few turns of freshly ground pepper. Mix together and slowly drizzle in the vegetable oil and then the sesame oil.
  • Pour the dressing over the rice and mix until the rice is thinly coated. Taste, and re-season if necessary.

  • In a large bowl, combine the first 6 ingredients. In a small bowl, combine mayonnaise, relish and seasonings. Stir into pea mixture. Cover and refrigerate until serving.

Louisville Rice Salad image

A delicious cold rice salad recipe given to me by my sister who lived in Louisville, Kentucky for many years. It's one of my favorite side dishes in the spring and summer. This is a very flexible recipe. You can substitute any fresh herbs you have on hand for the chives and tarragon, vary the nuts used, use golden raisins or dark. We've made this recipe many different ways and I've yet to discover a variation we didn't like!

1 cup uncooked white rice
2 cups water
½ cup vegetable oil
¼ cup lemon juice
¼ cup wine vinegar
1 teaspoon white sugar
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh tarragon
½ teaspoon salt
½ cup toasted slivered almonds
½ cup raisins
½ cup mandarin orange segments, drained and coarsely chopped
½ cup finely chopped onion
½ cup finely chopped celery
½ cup finely chopped green bell pepper
½ cup green peas

Steps:

  • Bring rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
  • Let rice cool for at least 30 minutes, stirring several times as it cools. Transfer to a large salad bowl.
  • Mix vegetable oil, lemon juice, wine vinegar, sugar, chives, tarragon, and salt together in a bowl until the sugar and salt have dissolved.
  • Pour dressing over the cooled rice and stir to combine.
  • Mix your choice of slivered almonds, raisins, mandarin orange segments, onion, celery, bell pepper, and peas into the rice mixture and lightly toss to combine.
  • Cover salad and refrigerate until chilled, at least 1 hour.

1 cup green peas, fresh or frozen (thawed*)
1/4 cup scallion, white and green parts, diced
1/2 cup celery, diced (peeled**)
2 cups white rice, steamed (can use brown rice)
1/2 cup low-fat mayonnaise
1/4 cup monterey jack cheese (or other yellow sharp)
1/4 cup mozzarella cheese
lettuce (your choice of type)

Steps:

  • Keep rice at room temperature while cooling. Do not refrigerate or it will clump together.
  • Cut Jack cheese into short strips.
  • Grate Mozzarella cheese.
  • When rice is completely cooled, mix all the ingredients together.
  • Use the lettuce to line the serving plate.
  • Pile salad in mound.
  • Serve at room temperature.
  • If the weather is warm, add mayo no more then 1/2 hour ahead of serving.
  • * If using frozen peas, make sure to drain the water before adding to salad.
  • ** Peel the celery just like a carrot. It removes the stringy part.

2 tablespoons canola oil
1 medium yellow onion, halved and thinly sliced
1 clove garlic, finely chopped
1 tablespoon finely grated fresh ginger
6 cardamom pods
1 cinnamon stick
2 cloves
3 1/2 cups water or vegetable stock
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Pinch saffron
2 cups basmati rice, rinsed and drained well
3/4 cup frozen peas
1/2 bunch cilantro, leaves coarsely chopped
4 scallions, coarsely chopped

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the onions and cook until they are lightly golden brown, stirring occasionally. Add the garlic and ginger and cook for 1 minute. Increase the heat to high, add the cardamom pods, cinnamon stick, cloves, water, salt, black pepper and saffron and bring to a boil. Stir in the rice, cover, reduce the heat and simmer until the rice is tender. Stir in the peas, cover, and let the pan sit off the heat for 5 minutes. Fluff with a fork and stir in the cilantro and scallions. Discard the cardamom pods, cinnamon stick and the cloves. Transfer the rice to a serving bowl and serve.

1/2 cup dried black-eyed peas, rinsed
Kosher salt
1/2 cup basmati rice
1 teaspoon minced garlic
1/4 cup thinly sliced red onion
1/2 cup finely chopped red bell pepper
1/3 cup Spanish olives, halved
2 tablespoons coarse-grain dijon mustard
4 tablespoons apple cider vinegar
3 tablespoons extra-virgin olive oil
1 tablespoon honey
1 tablespoon chopped fresh cilantro
Kosher salt and freshly ground pepper

Steps:

  • Prepare the salad: Put the peas in a saucepan with 3 cups water and 1/2 teaspoon salt. Bring to a boil and cook 4 minutes. Remove from the heat, cover and let sit 1 hour. Drain, then return to the saucepan with 1 cup fresh water. Bring to a simmer and cook, partially covered, until just al dente, about 10 minutes. Let cool in the liquid.
  • Meanwhile, put the rice in another saucepan with 1 1/2 cups water and the garlic. Bring to a simmer, cover and cook 16 minutes. Remove from the heat and let cool, then fluff with a fork.
  • Make the dressing: Whisk the mustard, vinegar, olive oil, honey, cilantro, 1/2 teaspoon salt and 1 teaspoon pepper in a nonreactive bowl. Adjust the seasoning if necessary.
  • Assemble the salad: Drain the peas and toss with the rice in a large bowl. Add the onion, bell pepper and olives, then add the dressing and toss. Refrigerate until ready to serve.

75ml olive oil
200g frozen pea
410g can lentil , rinsed and drained
410g chickpea , rinsed and drained
juice 2 lemon
2 bunches spring onions , finely sliced
large bunch coriander , chopped

Steps:

  • Cook the rice in a large pan of boiling water for about 15 mins, drain and drizzle with a little of the olive oil, then leave to cool.
  • Boil a kettle and pour the water over the peas in a small bowl. Leave them to defrost, then drain. In a large bowl, mix the rice with the peas, lentils, chickpeas, remaining olive oil, lemon juice and the spring onions. Season to taste. The rice salad can now be kept in the fridge for up to 2 days. Remove from the fridge about 30 mins before serving, then stir through the coriander.

I have put it together for our New Years Day Buffet, I doubled the recipe and used a half of red, yellow and orange bell peppers. I also tossed in approx 1/2 cup of chopped cilantro. 1 cup chickpeas, cooked
1 cup corn, cooked
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
3 yellow onions
1 garlic clove
1 cup vegetable stock
1 tablespoon olive oil
salt
pepper
paprika (to taste)

Steps:

  • Slice onions and fry in the olive oil until browned. Remove from pan.
  • Chop red, green, yellow bell pepper and garlic and mix with cooked rice, chickpeas and corn.
  • Pour in the vegetable stock, mix well and season with salt, pepper and paprica to taste.
  • Mix in the browned onions (they should still be warm when mixed in!).
  • Can be made ahead, but should be taken out of the fridge about one hour before serving for the flavors to develop.
