Here's a great scalloped potato recipe that's so easy and absolutely delicious. The leftovers are just as good, maybe even better, the next day. This is one of my favorite and most prepared recipes, from my 1971 Florence Junior Welfare League cookbook.

4 cups thinly sliced potatoes
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 teaspoon salt
1 dash cayenne pepper
1 cup grated sharp cheddar cheese
1/2 cup grated cheese, to sprinkle on top
paprika

Steps:

  • In a small sauce pan, melt butter and blend in flour.
  • Let sit for a minute.
  • Add all of cold milk, stirring with a whisk.
  • Season with salt and cayenne.
  • Cook sauce on low until smooth and boiling, stirring occasionally with a whisk.
  • Reduce heat and stir in cheese.
  • Place a half of the sliced potatoes in a lightly greased one quart casserole dish.
  • Pour half of cheese sauce over potatoes.
  • Repeat with second layer of potatoes and cheese sauce.
  • Sprinkle the remaining cheese on top.
  • Top with some paprika for color.
  • Bake uncovered for about 1 hour at 350°F.

A new spin on the old classic scalloped potatoes. I use this dish as a side dish with burgers. Try it with bread crumbs on top, too. It's really good.

8 potatoes, sliced
1 teaspoon salt-free seasoning blend (such as Club House No Salt Added Vegetable Seasoning®), or to taste
3 cups shredded mozzarella cheese
3 cups beef gravy

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 16x16-inch baking dish.
  • Spread 1/3 of sliced potatoes in the prepared baking dish. Sprinkle potatoes with 1/3 of seasoning mix; top with 1/3 the mozzarella cheese. Continue layering with remaining potatoes, seasoning, and cheese.
  • Pour gravy evenly over potato mixture to cover.
  • Bake in the preheated oven until casserole is bubbly and potatoes are tender, about 45 minutes.

3 cups shredded mozzarella cheese
3 cups beef gravy

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 16x16-inch baking dish.
  • Spread 1/3 of sliced potatoes in the prepared baking dish. Sprinkle potatoes with 1/3 of seasoning mix; top with 1/3 the mozzarella cheese. Continue layering with remaining potatoes, seasoning, and cheese.

This is a recipe in my Fannie Farmer cookbook that I just recently found and tried. I didn't know that scalloped potatoes was such a simple dish to make.

4 medium potatoes, peeled and sliced 1/4 inch thick
1 medium onion, sliced
salt
fresh ground pepper
3 tablespoons flour
4 tablespoons butter
1 1/2 cups milk

Steps:

  • Preheat oven to 350 degrees F (180 C).
  • Butter a 1 1/2 quart casserole.
  • Cover the bottom of the casserole with a single layer of potatoes& onion.
  • Sprinkle generously with salt, pepper, flour and a few dots of butter.
  • Repeat until all of the potato slices & onion are used.
  • Pour milk over the potato slices until the top is almost covered.
  • Dot with the remaining butter.
  • Bake for 1 hour or until the potatoes are soft.

4 -5 medium idaho potatoes, sliced about 1/8 to 1/4 inch thick
1 medium onion, diced
1/2 cup butter
3 tablespoons flour
salt
pepper
1 can condensed cream of mushroom soup

Steps:

  • Place one layer of sliced potatoes on bottom of 9 x 13 inch casserole dish.
  • Cut butter into pieces and dot potatoes with 1/3 of butter.
  • Top with 1/3 diced onion evenly distributed.
  • Sprinkle with 1 tablespoon of flour, salt and pepper.
  • Repeat two more times for a total of 3 layers.
  • Top with can of condensed (undiluted) cream of mushroom soup, spread evenly.
  • Cover and cook at 350º for 45 minutes to 1 hour.

OLD-FASHIONED SCALLOPED POTATOES

This recipe makes a small quantity but still has old-fashioned goodness. These tender potatoes taste great with any main dish, but I especially like them with meat loaf.-Dawn Fagerstrom, Warren, Minnesota

3-1/2 teaspoons butter, divided
1 tablespoon all-purpose flour
1/4 teaspoon salt
Dash pepper
3/4 cup milk
1 cup sliced peeled potatoes
1 tablespoon finely chopped onion

Steps:

  • In a saucepan over medium heat, melt 3 teaspoons of butter. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Place half of the potatoes in a greased 2-cup baking dish; top with the onion and half of the sauce. Layer with remaining potatoes and sauce. Dot with remaining butter. Cover and bake at 350° for 30 minutes. Uncover; bake 30-40 minutes longer or until potatoes are tender.
