We love cauliflower, eat it raw as a snack, roast or steam it, mash it for a potato replacement, add it to a salad, but enjoying it as a creamy casserole with layers of interesting flavor is a great way to brighten up the dinner table.

1 serving olive oil cooking spray
1 link sweet apple chicken sausage (such as Trader Joes®), cut into 1/4-inch slices
1 large head cauliflower, cut into florets
½ (8 ounce) package cream cheese, cubed
3 tablespoons unsalted butter
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon freshly ground black pepper, or to taste
¼ teaspoon red pepper flakes, or to taste
6 ounces shredded pepper Jack cheese
4 slices bacon

Steps:

  • Spray the inside of a 4- to 6-quart slow cooker with cooking spray.
  • Spray a small skillet with cooking spray and add sausage. Cook over medium heat until sausage are browned, 2 to 3 minutes. Transfer to the prepared slow cooker. Add cauliflower, cream cheese, butter, garlic powder, salt, pepper, and red pepper flakes; stir to combine.
  • Cover slow cooker and cook on Low until cauliflower is fork tender, about 2 hours. Stir in pepper Jack cheese and cook for 30 minutes longer.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, about 10 minutes. Drain bacon slices on paper towels and crumble once cool enough to handle. Sprinkle crumbled bacon over finished casserole.

3 slices bacon
nonstick cooking spray
1 medium head cauliflower, cut into florets
¼ cup chicken broth
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon ground turmeric
1 (10.75 ounce) can cream of chicken soup (such as Campbell's®)
½ cup shredded mozzarella cheese
½ cup shredded Cheddar cheese
1 scallion, green part only, thinly sliced

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Once cool enough to touch, crumble and divide into thirds.
  • Spray the inside of a slow cooker with cooking spray.
  • Place cauliflower into the slow cooker and pour chicken broth on top. Season with salt, pepper, and turmeric.
  • Combine cream of chicken soup, mozzarella cheese, and Cheddar cheese in a bowl. Pour over cauliflower mixture.
  • Cook on High until cauliflower is cooked to your liking, about 2 hours. Stir in 2/3 of the crumbled bacon just before serving.
  • Transfer to serving platter and top with green onion and remaining bacon.

Garlic Beef Stew
1.5 - 2 lbs of grass fed stew meat
1 yellow onion diced
4-6 carrots diced
4-6 stalks of celery diced
6-12 mashed cloves of garlic (I used the jarred crushed garlic from TJ's)
palm full of ground marjoram
sea salt and black pepper to taste
1 small can tomato paste
splash of chicken broth
Savory Cauliflower Mash
1 giant head of organic cauliflower steamed until soft
big hunk of Kerrygold Irish butter
palm full of turmeric powder
sea salt and white pepper to taste
Blend all ingredients in a food processor. I like to leave mine a little lumpy for texture.

Steps:

  • Throw it all in your crock pot, mix well, cook all day on low. It's a lot of garlic but it mellows from the long cooking time and your house will smell amazing!

  • Cover with beef consommé, beef broth, Worcestershire sauce, onion, garlic, thyme, bay leaves, and salt and pepper if necessary. Cover with lid and cook 4-6 hours on high. If your roast is on the smaller side, it will take less time for it to cook. If your roast is on the larger side, it will take more time for it to cook. Roast is done when it is very tender.
  • Using a slotted spoon, remove the meat to a shallow bowl and set aside. Remove carrots and onions and place into a serving dish. Set aside. Pour cooking liquid through a fat separator. Discard fat and measure out 2 cups of hot cooking liquid.
  • In a large bowl, stir butter and flour together until a smooth paste forms. Pour the hot cooking liquid into the butter-flour mixture and stir to thicken. The heat from the liquid should thicken it pretty quickly. Pour this mixture into the slow cooker and stir to create a gravy. Cover and cook another 20 minutes or so.
