1 pound elbow macaroni
1 tablespoon olive oil
1 pound sweet Italian sausage, casings removed
1 red bell pepper, seeded and chopped
1 onion, chopped
2 1/2 cups half-and-half
1/4 teaspoon cayenne pepper
Two 8-ounce packages cream cheese, at room temperature
One 8-ounce block sharp Cheddar, grated
1 cup grated Gruyere

Steps:

  • Preheat the oven to 425 degrees F.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook according to package directions for al dente. Reserve 1 3/4 cups of the pasta cooking water and then drain the pasta; set aside.
  • Heat the oil in a large Dutch oven or saucepot over medium-high heat. Add the sausage and cook until lightly browned, breaking up the meat into small pieces, about 5 minutes. Transfer the browned meat to a plate with a slotted spoon. Add the bell pepper, onion and a pinch of salt to the drippings in the pot and cook, stirring occasionally, until softened and lightly browned, 10 to 12 minutes; transfer to the plate with the sausage.
  • Carefully wipe out the pot, add the half-and-half and cayenne and bring to a simmer over medium heat. Simmer until reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Gradually whisk in the Cheddar and Gruyere, 1 handful at time, until all the cheese is melted and the sauce is smooth. Remove from the heat.
  • Add the cooked pasta and reserved pasta cooking water to the cheese sauce and stir to combine. Stir in the sausage and vegetables; adjust the seasoning with additional salt. Pour into a 9-by-13-inch baking dish and bake until bubbly and lightly browned, about 10 minutes.

Steps:

  • In 3-quart saucepan, heat broth to boiling over medium-high heat. Add pasta shells; heat to boiling. Boil 6 minutes; do not drain. Reduce heat. Stir in peas and sausage. Cover; simmer 3 to 5 minutes or until shells are tender. Remove from heat.
  • Add shredded cheese; toss gently until cheese is melted. Sprinkle with Parmesan cheese.

8 ounces macaroni (uncooked)
1 pound Italian sausage
1/2 cup onion (chopped)
1/4 cup bell pepper (green or red, chopped)
2 tablespoons all-purpose flour
1/2 teaspoon salt
1 1/2 cups milk
2 cups Cheddar cheese (shredded and divided)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 400 F.
  • Lightly grease a 1 1/2-quart casserole dish.
  • Cook the macaroni in boiling salted water following package directions; drain and set aside.
  • In a skillet, sauté the sausage, onion, and green bell pepper, stirring, until the sausage is no longer pink. Pour off excess fat.
  • Add the flour and salt to the sausage mixture, blending well. Gradually add milk. Continue to cook over low heat, stirring constantly, until the sauce has thickened. Stir in the cooked and drained macaroni and 1 cup of the shredded Cheddar cheese.
  • Transfer macaroni and sausage casserole mixture to the prepared casserole.
  • Sprinkle remaining cheese over sausage casserole and bake in the preheated oven for 25 to 30 minutes.

1 pound monterey jack cheese, shredded (4 cups)

Steps:

  • Preheat the oven to 350 degrees F. Butter a 2 1/2 -quart baking dish. Bring a large pot of salted water to a boil; add the pasta and cook until al dente, about 6 minutes. Drain and set aside.
  • Meanwhile, melt the butter in a large saucepan over medium-high heat. Add the onion and cook until soft, about 3 minutes. Add the sausage, mustard powder, cayenne and 1 teaspoon salt and cook, stirring, until the sausage is golden, about 3 minutes. SAUCE:
2/3 pound bulk Italian sausage
2 cans (8 ounces each) tomato sauce
1/2 cup tomato paste
1/4 cup water
2 teaspoons brown sugar

FILLING:
2/3 cup 4% cottage cheese
1-1/2 cups shredded part-skim mozzarella cheese, divided
1 large egg, lightly beaten
1 teaspoon minced fresh parsley
Grated Parmesan cheese, optional

Steps:

  • Cook pasta shells according to package directions. Meanwhile, in a large saucepan, cook sausage over medium heat until no longer pink; drain. Set half of the sausage aside for filling. , Add tomato sauce, tomato paste, water, brown sugar and Italian seasoning to remaining sausage. Bring to a boil. Reduce heat; simmer, uncovered, 15 minutes, stirring occasionally., Preheat oven to 350°. Drain pasta. In a large bowl, combine cottage cheese, 1 cup mozzarella, egg, parsley and reserved sausage. Stuff into shells. , Spread 1/2 cup meat sauce into an ungreased shallow 2-qt. baking dish. Arrange stuffed shells in dish; drizzle with remaining meat sauce. Sprinkle with remaining mozzarella and Parmesan if desired. , Bake, uncovered, 25-30 minutes or until bubbly.

I got this recipe out of the newspaper years ago. It's a favorite at our house. Folks always comment that they like how the sauce sort of bursts out of the shells when you're eating it. I've made this with both small and medium shells with equal success.

2 cups pasta shells
1/4 cup chopped onion
3 tablespoons butter
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon mustard powder
2 cups milk
1/4 cup ranch salad dressing
8 ounces shredded cheddar cheese, divided

Steps:

  • In a large pot of boiling water, cook the shells to desired doneness; drain, transfer to a large bowl and set aside.
  • In a medium-sized saucepan over medium heat, saute the onion in the butter for about 5 minutes, or until tender.
  • Stir in the flour, salt, pepper and mustard powder.
  • Gradually add the milk and cook, stirring occasionally, until thickened. Remove from heat.
  • Add the ranch dressing and 1 1/2 cups of the cheddar cheese; stir until the cheese melts.
  • Combine the cheese sauce with the cooked shells.
  • Place in a greased 1 1/2 quart casserole and top with the remaining 1/2 cup cheddar cheese.
