RISOTTO WITH PEAS AND PANCETTA



Risotto With Peas and Pancetta image

Easy to make and all in one pan. My kind of recipe. I have not tried this yet, but as soon as I get the thick-cut bacon, I am going to try it. Can be a nice meal or a heavier side dish. This is a recipe from USAWeekend and is by Nigella Lawson.

2 tablespoons oil garlic-flavored olive oil
6 ounces cubed pancetta or 6 ounces diced thick-cut bacon
1 1/4 cups frozen baby peas
8 ounces orzo pasta
2 1/2 cups boiling water
salt
1 tablespoon soft butter
2 tablespoons grated parmesan cheese
pepper

Steps:

  • Warm the oil in a heavy pan that will take everything later; a Dutch oven or saucepan of 10 inches diameter should be plenty big enough.
  • Add the pancetta and cook, stirring until it becomes crisp and bronzed, then add the peas and stir for a minute or so until the frozen look leaves them. If using thick-cut bacon and there is too much oil in pan, i think i would pour off until 2 Tbsp left before adding the peas.
  • Add the pasta and turn it about in the pancetta and peas, then pour in the boiling water.
  • Add salt cautiously (the pancetta and bacon are salty as is the Parmesan later); then turn down heat and let simmer for 10 minutes uncovered, though check on it a couple of times and give a stir or two, to stop it from sticking and see if you need to add a little more water.
  • When it's ready, the risotto should be soft and starchy and the water absorbed.
  • Beat the butter and Parmesan cheese into the pan, check the seasoning, and serve warm.
  • Note: to make garlic flavored oil, add a peeled garlic clove to regular olive oil and cook until golder,discard garlic, use the oil.

1 1/4 liters chicken stock or 1 1/4 liters vegetable stock
100 g butter (pref unsalted)
2 medium onions, finely chopped
1 garlic clove, crushed (minced is fine)
225 g arborio rice
110 g frozen peas
50 g parmesan cheese, finely grated

Steps:

  • Bring stock to boil in a saucepan, keep on a low heat while you are making the risotto.
  • In saute pan, melt butter and add garlic and onions, allow to cook for 5 minutes.
  • Add rice and stir continuously over a low heat until the grains start to soften.
  • Over a medium heat begin to add the hot stock a ladle at a time, allow rice to absorb all stock before adding next ladle.
  • Continue to add the stock gradually , stirring all the time for about 15-20 minutes (mum prefers to cook her risotto for 40 minutes, but up to you).
  • Rice is ready when is soft, but still has chalky "bite" to it in the middle.
  • Tip frozen peas in (and gammon or other cooked meat if using) and stir in and heat through, about 3 minutes. by this time the peas should be defrosted and the risotto bubbling again.
  • Finally stir in parmesan and serve immediately with thinly sliced parmesan on top.
  • For vegetarian do not use the chicken stock.

1 medium onion, chopped
¼ teaspoon salt
1 (3 ounce) package ramen noodles, coarsely broken in package (flavor packet discarded)
1 (10 ounce) package frozen peas
3 cups low-sodium chicken broth
1 tablespoon butter
½ cup grated Parmesan cheese, plus additional for serving
¼ teaspoon freshly ground black pepper

Steps:

  • Cook pancetta or bacon in oil in a 12-inch nonstick skillet over medium heat, stirring occasionally, until just beginning to brown, about 5 minutes. Add onion and salt and cook, stirring, until onion is softened, about 4 minutes. Add noodles and cook, stirring, 1 minute. Add peas and broth to skillet and bring mixture to a boil. Cook, stirring, until noodles are just tender, about 3 minutes.
  • Remove skillet from heat and stir in butter, Parmesan, and pepper. (If mixture is a bit soupy, let it stand for 1 to 2 minutes to allow noodles to continue to absorb liquid.) Serve with additional Parmesan, if desired.
