Steps:

  • Preheat oven to 350 degrees.
  • Mix dry ingredients.
  • Mix butter, bananas & eggs.
  • Mix dry ingredients into banana mix and stir in nuts.
  • Bake 40-45 minutes.

2¼ cups all-purpose flour, sifted
1 cup sugar
1 teaspoon baking soda
1 teaspoon salt
4 medium ripe bananas, mashed (about 1½ cups)
½ cup unsalted butter, melted and cooled
2 large eggs
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 325°. Spray a 9×5-inch loaf pan with baking spray with flour.
  • In a large bowl, whisk together flour, sugar, baking soda, and salt. In a medium bowl, whisk together banana, melted butter, eggs, and vanilla. Fold banana mixture into flour mixture until just combined. Spread batter into prepared pan.
  • Bake until a wooden pick inserted in center comes out clean, 50 to 60 minutes. Let cool in pan for 10 minutes. Remove from pan, and let cool completely on a wire rack. Store in an airtight container for up to 3 days.

3 cups all-purpose flour, plus more for pans
2 cups sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 eggs, beaten
3/4 cup vegetable oil
4 large ripe bananas, mashed
1 cup chopped pecans
1 1/2 teaspoons vanilla extract
1 (8 ounce) package cream cheese, at room temperature
1/2 cup butter, at room temperature (1 stick)
1 lb confectioners' sugar, sifted
1 teaspoon vanilla extract
1/2 cup chopped pecans

Steps:

  • Butter and flour 3 (9-inch) round cake pans; set aside. Preheat oven to 350°F.
  • For Cake: In a mixing bowl, stir together the flour, sugar, baking soda, cinnamon, and salt. Add the eggs and oil and stir just until the dry ingredients are moistened; do not beat. Stir in the banana, pecans, and vanilla.
  • Divide the batter among the prepared pans and bake for 23 to 28 minutes, or until a wooden pick inserted in the center comes out clean. Cool the cake layers in the pans for 10 minutes, and then turn them out onto a rack to cool completely.
  • While the cake cools, make the frosting: In a bowl, blend together the cream cheese and butter. Gradually add the confectioners' sugar and beat until light and fluffy. Beat in the vanilla. Stir in the pecans, or reserve them to sprinkle over the frosted cake.
  • Fill and frost the cake when it is completely cool.

2 teaspoons baking powder

2 eggs, room temperature
1/2 to 1 cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Grease the bottom and the sides of 2 loaf pans with oil or butter, or line with parchment paper.
  • In a medium bowl, combine the flour, sugar, and salt.
  • In a large bowl, beat the butter, bananas, and eggs just until combined.
  • Pour the dry ingredients into the banana mixture. Gently mix just until the batter is lump-free. Stir in the pecans.
  • Pour the batter into prepared pans. Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pans for 10 minutes, then transfer onto a wire rack to cool completely. Slice and enjoy!

  • Note: Paula's original recipe indicated that it made one loaf and cooked for 40-45 minutes. It WILL NOT fit in 1 loaf pan and it definitely takes more than her stated time to cook.
