HASH BROWN BREAKFAST PIZZA

- For the crust: Preheat the oven to 425 degrees F. Line a baking sheet with parchment.
- In a bowl, mix together the hash browns, pepper jack, Cheddar, butter and eggs. Season with a good pinch of salt and pepper. Add the cayenne. Mix well.
- Spray the parchment with cooking spray and add the hash brown mix. Shape into a large rectangle. Bake until the edges are golden brown, about 25 minutes.
- For the toppings: Remove the hash brown crust from the oven. Top with the pepper jack, Cheddar, scallions and red and green bell peppers. Add the bacon, tearing it into pieces as you go. Return the pizza to the oven until the cheese is melted and the veggies are roasted, 12 to 14 minutes.
- Using a pizza cutter, cut the pizza into slices and serve with salsa, sour cream, cilantro and sliced scallions.
BREAKFAST PIZZA

- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Using a rolling pin, roll out the pizza dough to a thickness of about 1/4 inch. Transfer the pizza dough to the lined baking sheet and brush the dough with the melted butter. Sprinkle with 2 tablespoons Cinnamon-Sugar and bake until golden brown, about 10 to 15 minutes. Cool the pizza crust on a wire rack.
- Meanwhile, in a medium bowl, mix together the cheese, cream, lemon juice, and zest.
- Spread the cheese mixture over the cooled crust. Top with mixed berries and sprinkle with the remaining Cinnamon-Sugar. Slice like a pizza and serve.
- Cut the vanilla bean in half, lengthwise. Using the back of a knife, scrape along the inside of the vanilla bean to collect the seeds. Scrape vanilla bean seeds into a small bowl. Add sugar and cinnamon and stir to combine. Set aside in a small serving bowl.

- Press crescent roll dough into a lightly greased 15" round pizza pan, making sure to seal all edges. Mix cheese with mayonnaise; spread over dough. Sprinkle bacon over cheese mixture; top with remaining ingredients. Bake at 350 degrees for 30 minutes. Allow to cool slightly; slice into wedges. Serves 6 to 8.

This simple dish is both delicious and easy to make. You can also top this with your favorite homemade or store-bought salsa. I found this recipe in an AARP email. I haven't had a chance to try it yet, but it sounds delicious.

- In a medium nonstick frying pan, heat the olive oil.
- Add the onion and saute for 2 to 3 minutes.
- Add the red pepper and continue to cook for another 3 minutes or until the pepper begins to soften.
- Add eggs and gently scramble until just cooked.
- Season with salt and pepper and remove from heat.
- Preheat the broiler or toaster oven.
- Divide the egg mixture between the pita halves.
- Top each pita with half the cheese and half the pancetta or bacon.
- Toast in toaster oven or under a broiler until the cheese just begins to melt.
- Serve immediately.

I just love making my own pizza. I was using Boboli crust initially, but then I discovered Tiseo's frozen pizza dough, and found it to be superior, and less costly. I will sometimes use the Pillsbury pizza dough if the store doesn't have the Tiseo's, but for best results, I like to use Tiseo's. My son Marshall once called my...

- 1. Follow directions for thawing pizza dough. I usually do this overnight. I use a brand called Tiseo's. It's really good, if you can find it.
- 2. Brown Italian sausage until no longer pink. Placed on paper towel-lined plate
- 3. Take pizza dough out of fridge. Place on a floured board. Roll out to a 12" circle.
- 4. Spray pizza pan with cooking spray. Dust with cornmeal. Place dough on pizza pan.
- 5. Cover dough with 1/2 jar pizza sauce, then Italian sausage, then mozzarella. Top with pepperoni and mushrooms. If you'd like, add any other toppings you wish.
- 6. Bake at 450 for 15 minutes. Serves 4. (You can cut it into 8 slices. I figure 2 per person is a serving)

- Preheat the oven to 450°. Place the pizza crust on a rimmed baking sheet lined with parchment paper.
- In a medium skillet, cook the sausage links in the 1 teaspoon of olive oil over moderate heat until browned, about 10 minutes. Drain on a paper towel-lined plate. Using a sharp knife, slice the sausages into 1/2-inch rounds.
- Sprinkle the cheddar evenly over the pizza crust, leaving a 1/2-inch border. Top with the sausage slices, tomatoes and two thirds of the scallions. Bake for 8 minutes, until the cheese is beginning to melt.
- Transfer the pizza to a rack. Crack 1 egg into a small bowl, then carefully slide it onto the pizza. Repeat with the remaining 3 eggs. Season the pizza with salt and pepper and bake it for another 10 minutes or so, until the egg whites are set but the yolks are still runny.
