This cake has a great homemade flavor and tender crumb. Be sure to pile on the buttery frosting, which adds a burst of vanilla. -Taste of Home Test Kitchen

2/3 cup butter, softened
1-3/4 cups sugar
1 tablespoon vanilla extract
2 large eggs, room temperature
2-1/2 cups all-purpose flour
2-1/2 teaspoons baking powder
1/2 teaspoon salt
1-1/4 cups 2% milk
FROSTING:
1 cup butter, softened
3 cups confectioners' sugar
4 teaspoons vanilla extract
3 to 4 tablespoons heavy whipping cream
Assorted fresh berries

Steps:

  • Preheat oven to 350°. Grease a 13x9-in. baking dish., Cream butter and sugar until light and fluffy, 5-7 minutes. Add vanilla and eggs, 1 at at time, beating well. In another bowl, whisk together flour, baking powder and salt; beat into creamed mixture alternately with milk. Transfer to prepared dish., Bake until a toothpick inserted in center comes out clean, 40-45 minutes. Place on a wire rack; cool completely., For frosting, beat butter until creamy; gradually beat in confectioners' sugar until smooth and light in color, about 3 minutes. Beat in vanilla and 3 tablespoons cream until light and fluffy, about 2 minutes; thin with additional cream if desired. Spread over cake. Before serving, top with berries in a patchwork quilt pattern.

1 lb ground beef
1 medium green pepper, chopped
1/2 cup chopped onion
4 cups cubed cooked potatoes
1 (8 ounce) can tomato sauce
1 (3 ounce) can tomato paste
1/2 cup water
1/2 teaspoon salt
1 dash pepper
1/4 teaspoon dry basil
2 cups thinly sliced cheddar cheese

Steps:

  • Preheat oven to 350 F.
  • Brown meat loosely in a frying pan.
  • Add green pepper and onion and cook until tender.
  • Stir in cooked potatoes, tomato sauce, tomato paste, water, salt, pepper and basil.
  • Spoon half of this mixture into a baking dish.
  • Cover with half the cheese slices.
  • Top with remaining potato mixture.
  • Cover dish and bake in preheated oven for 45 minutes.
  • Uncover.
  • Top with remaining cheese slices, cut in decorative shapes and arrange in a patchwork design.
  • Let stand 5 minutes or until cheese melts.
  • Serve hot.
  • Serves 6.

2 pounds ground beef
2 green bell peppers, chopped
1 large onion, chopped
2 pounds frozen hash brown potatoes
2 (8-ounce) cans tomato sauce
1 (6-ounce) can tomato paste
1 cup water
1 teaspoon salt
1/2 teaspoon basil
1/4 teaspoon pepper
1 pound thinly sliced American cheese, divided

Steps:

  • Brown meat; drain. Add green peppers and onion; cook until tender. Add remaining ingredients except cheese; mix well. Spoon half of meat and potato mixture into 9x13-inch baking dish (or two 1 1/2-quart casserole dishes). Cover with half of cheese. Top with remaining meat and potato mixture. Cover dish with aluminum foil. Bake at 350° for 45 minutes. Uncover. Cut remaining cheese into decorative shapes; arrange in patchwork design on casserole. Let stand 5 minutes or until cheese shapes have melted. Can be frozen. Fun Fact: Created around 1450 near the height of the Inca Empire, no one knows what the real purpose of Machu Picchu was.
